training course. These Champions

PhysiFun Training

Healthy WoW! Recipe of the Month
VEGETABLE SPAGHETTI
INGREDIENTS
500g spaghetti (or replace with rice or couscous)
2 tbs olive oil (or adjusted measure of alternative oil)
4 cloves of garlic, minced
12 baby marrows (or replace with green beans or spinach) sliced
2 fresh mealies (cut the kernels off the mealie) or 1 tin corn
3 carrots, chopped
2 onions, thinly sliced
2 tbsp tomato paste
2 cans diced (cut into small cubes) tomato
2 tsp Italian herbs
2 tsp paprika (smoked adds additional flavour)
1 tsp sugar
salt and black pepper to taste
METHOD
Cook spaghetti according to packing directions. Keep 1 cup of pasta water
after cooking and drain rest of pasta.
In a large pan, heat oil over medium heat, add garlic and cook until fragrant -
about 1 minute.
Add baby marrows, carrots and red onions and cook until soft - about 7
minutes.
Stir in tomato paste, add diced tomato and season with dried herbs and salt
and pepper. Simmer for 10 minutes.
Add spaghetti to vegetables and add ½ the cup of pasta water.
Dish onto plates or in a large bowl and serve.
