1. Cook chorizo on preheated barbecue hot plate or in a
large non-stick frying pan over medium heat for about
2-3 minutes, turning until golden and slightly crisp.
Remove and drain on absorbent paper.
2. Add Latina® tortellini to large saucepan of boiling water.
Return to the boil and cook, stirring occasionally, for
5 minutes or until al dente. Drain and cool slightly.
3. Combine chorizo, tortellini, chickpeas, spinach, onion,
coriander and pesto. Toss gently to combine and serve.

passionfruitTo buy Look for passionfruit that feel slightly heavy for their size. Their skin
should feel relatively thick, and be slightly wrinkled. There are two main
varieties available — Panama or Hawaiian (pictured) and Black.
Best in The sweet, syrupy flavour of passionfruit make them perfect for
dessert toppings, such as on pavlova and custard slice.
Storage You can store passionfruit at room temperature for up to one week,
or store in the fridge for up to two weeks.
To prepare Use a sharp knife to cut passionfruit in half, then either
enjoy straight from the skin or scoop out the pulp for use in cooking.

Passionfruit slicePrep 5 min | Cook 30 min | Makes 16
6 passionfruits, halved
2 sheets frozen butter puff pastry
1 cup custard powder
½ cup caster sugar
5 cups milk
100g butter, melted
2 egg yolks
¾ cup passionfruit pulp
1 cup icing sugar, sifted
1 Preheat oven to 220°C. Line 2 baking trays
and a 22cm square tin with baking paper.
Using a spoon, scoop pulp from passionfruit into
a jug and reserve. You will need ¾ cup of pulp.
2 Lay a sheet of pastry onto each tray and
prick all over using a fork. Bake for 15
minutes until golden and, while still hot, flatten
using a clean tea towel.
3 Meanwhile, combine custard powder and
sugar in a medium saucepan. Stir in enough
of the milk until a smooth paste forms, then
gradually whisk in remaining milk. Whisk over
medium heat until custard thickens. Remove
from heat. Add half of the butter, egg yolks and
½ cup of the passionfruit pulp.
4 Place 1 square of pastry into the tin.
Pour over custard and smooth top. Place
remaining pastry square onto custard and press
down gently. Refrigerate until set.
5 Place icing sugar into a small bowl. Add
remaining butter and passionfruit pulp and
stir until smooth. Remove slice from tin and
spread over icing. Cut into squares to serve.
NUTRITIONAL VALUE
Per serve: 4.5g protein, 14g fat (9g saturated fat),
39g carbohydrate, 2g dietary fibre, 1245 kJ
(295 Cals).

Butterflied lamb withsalsa verdePrep 5 min + marinating overnight |
Cook 25 min | Serves 6
1 butterflied lamb leg
½ cup balsamic vinegar
2 tbs olive oil
2 sprigs rosemary
1 cup fresh sourdough breadcrumbs
¼ cup milk
1 cup continental parsley leaves
juice of 1 lemon
3 tsp capers, rinsed
1 tsp sea salt
100ml olive oil
1Remove lamb from packaging and place
into a shallow ceramic dish. Pour over
balsamic and oil and season with salt, freshly
ground black pepper and rosemary. Refrigerate
overnight if possible or for at least 2 hours.
Bring to room temperature before cooking.
2Meanwhile, soak bread in milk for
5 minutes then process in a food processor
with parsley, lemon juice, capers and salt until
finely chopped. With motor running, gradually
add oil and process until thick and smooth.
Season with freshly ground black pepper.
3Preheat a barbecue over medium-high
heat. Cook lamb for 10 minutes, turn and
cook second side for 8 minutes or until done
to your liking. Transfer to a plate, cover loosely
with foil and rest for 10 minutes before slicing.
4Slice lamb and arrange on a platter. Pour
any juices over and serve with salsa verde.

Cheese souffléPrep 15 min | Cook 15 min | Makes 4
10g soft butter
1 cup packaged breadcrumbs
30g butter, extra
¼ cup plain flour
1¼ cups reduced-fat milk
1½ cups coarsely grated tasty cheese
2 tsp Dijon mustard
4 eggs, at room temperature, separated
1Preheat oven to 200°C. Place oven tray into
oven to preheat. Grease 4 x 1½ cup ramekins
with butter. Add breadcrumbs and turn so that
base and sides are coated. Shake out excess.
2Melt extra butter in a saucepan over medium
heat until foaming. Add flour and stir for
2 minutes. Remove from heat and add half the
milk. Whisk until smooth. Gradually whisk in
remaining milk. Return to heat and stir until
mixture boils and thickens. Remove from heat.
Add cheese and mustard and stir until smooth.
3Separate eggs, placing whites into a bowl
and yolks to the cheese mixture. Stir well to
combine. Season with salt and pepper. Use an
electric mixer, beat whites until soft peaks form.
4Add ¼ of the egg whites to the cheese
mixture and, using a metal spoon, fold
through until just combined. Add remaining egg
whites and gently fold in.
5Divide mixture between ramekins and smooth
tops. Run your thumb around the inside rims.
Place ramekins onto heated oven tray and bake
for 15 minutes or until golden. Serve immediately.

Storage Store mushrooms in a paper bag in
your fridge. Storing them in plastic bags will
cause them to sweat and deteriorate quickly.

600g chicken thigh fillets, cut into 2cm pieces
2 garlic cloves, crushed
2 tsp dried oregano leaves
1 tbs olive oil
3 chorizo sausages, sliced 1cm thick
200g small mushrooms, halved
lemon wedges, to serve
1Combine chicken, garlic, oregano and oil
in a bowl. Cover and marinate in the fridge
for 30 minutes. Thread chicken, chorizo and
mushrooms onto skewers.
2Heat a chargrill pan or barbecue on high.
Cook skewers, turning occasionally for about
8 minutes or until chicken is cooked through.
Remove from heat and serve with
lemon wedges.

Serves 4
1 kg green prawns, peeled and deveined,
tails intact
2 tbs soy sauce
1 tbs shaoxing wine
3 tsp cornflour
2 tbs vegetable oil
5cm piece ginger, peeled and shredded
2 garlic cloves, chopped
100g sugar snap peas, trimmed
4 green shallots, cut into 4cm lengths
2 tbs honey
steamed jasmine rice, to serve
1 tsp toasted sesame seeds
1 Combine prawns, soy sauce, shaoxing wine
and cornflour. Marinate for 30 minutes.
2 Heat a wok over high heat and when
hot add half of the oil and swirl to
coat. Cook prawns in batches; removing
them as soon as they change colour and
then set aside.
3 Heat the remaining oil and stir-fry the
ginger and garlic until fragrant. Add the
sugar snap peas and shallots and cook for
2 minutes until they turn bright green. Return
prawns to the wok with any marinade and
honey and toss over heat for 1 minute or until
hot. Serve immediately with steamed jasmine
rice and sprinkled with sesame seeds.

4 cups Woolworths Select Liquid
Chicken Stock
1 cup polenta
25g butter
¾ cup finely grated parmesan
¼ cup continental parsley leaves,
roughly chopped

4 roma tomatoes, halved lengthways
1Bring chicken stock to the boil in a large
deep saucepan. Add polenta in a slow
steady steam, stirring constantly. Reduce heat
to low and continue to stir for approximately
10-15 minutes or until bright yellow and grains
are soft. Add butter, parmesan and parsley.
Stir until combined. Cover to keep warm.
2Meanwhile, heat a barbecue grill plate
on medium heat. Cook sausages for
8 minutes, turning occasionally, until browned
on all sides and cooked through. Season
tomatoes with salt and pepper. Add to
hotplate, cut side down. Cook for 1 minute.
Turn and cook for a further minute or until
cooked through. Spoon polenta onto serving
plates and top with sausages and tomatoes.

¼ cup Home Brand Salt Reduced
Soy Sauce
2 tbs kecap manis
1 tbs malt vinegar
1 tsp sesame oil
4 small whole snappers (available in
selected Woolworths supermarkets)
5 green shallots, trimmed, thinly sliced
diagonally
6cm piece ginger, peeled, finely shredded
2 tsp peanut oil
2 bunches asparagus, trimmed
fried shallots, to serve
1Combine soy sauce, kecap manis, vinegar
and sesame oil in a jug. Season with salt
and white pepper. Set aside. Preheat barbecue
hotplate over medium heat.
2With a sharp knife, make four diagonal
slashes into each side of the fish. Put half
of the shallots and ginger into the cavity. Brush
fish with oil and place onto barbecue. Cook for
3 minutes on each side or until fish is cooked
through. Cook asparagus on the barbecue
or in a pan of boiling water until just tender.
Transfer to a large serving platter.
3Top with remaining shallot and ginger.
Pour over dressing, sprinkle with fried
shallots and serve.

Parsley Leaves, finely chopped
½ cup extra virgin olive oil
finely grated rind of 1 lemon
600g pumpkin, deseeded, peeled,
cut into 1cm thick slices
olive oil cooking spray
1 medium eggplant, cut into thin
round slices
2 red capsicum, deseeded, quartered
3 small zucchini, trimmed, thinly sliced
lengthways
olive oil cooking spray
200g feta, crumbled
1Preheat a barbecue grill on medium
heat. Combine parsley, oil, lemon rind,
salt and pepper in a jug.
2Spray pumpkin slices (away from
barbecue) and cook for 2 minutes
on each side or until charred and tender.
Transfer to a large plate. Cover to
keep warm. Spray, cook and cover
remaining vegetables until tender.
3Layer vegetables onto plates, adding
feta and drizzling with parsley oil.

650g rump steak
2 tsp vegetable oil
3 Lebanese cucumbers
250g punnet cherry tomatoes, halved
1 small red onion, thinly sliced
1 cup coriander leaves
½ cup mint leaves
⅓ cup sweet chilli sauce
1 large lime, juiced
1 tbs fish sauce
1Heat a barbecue grill on high. Brush
steaks with oil and season with salt and
pepper. Cook for 2-3 minutes on each side
for medium-rare or until cooked to your
liking. Cooking time may vary depending
on the thickness of steaks. Transfer to
a plate and stand for 10 minutes. Thinly
slice diagonally.
2Cut cucumber in half lengthways
and remove seeds using a teaspoon.
Thinly slice each half diagonally and place
into a large bowl. Add tomatoes, onion,
coriander, mint and steak. Toss ingredients
until well combined.
3Combine chilli sauce, lime juice and fish
sauce in a jug. Add to salad and toss
until well combined.

2 large limes, juiced (you will need
⅓ cup juice)
2 tbs olive oil
1 garlic clove, crushed
600g chicken thigh fillets, trimmed
2 mangoes, cheeks removed
80g baby rocket leaves
1 large avocado, halved, stone and skin
removed, diced
125g pkt whole macadamia nuts
1Combine lime juice, olive oil and garlic
in a jug and season with sea salt flakes
and white pepper. Lay chicken thigh fillets
in a shallow ceramic dish. Pour 80ml of
the marinade over the chicken and reserve
remainder (2 tbs) for dressing. Cover chicken
and refrigerate for 15 minutes.
2Heat a barbecue grill plate on medium

film, but there’s a South
Australian giant glasshouse
just full of them.
D’VineRipe chose Two Wells, a town
40 kilometres north of Adelaide, as the site
for its tomato growing operations because
of its perfect climatic conditions. Today,
its state-of-the-art glasshouse covers
8.2 hectares and is filled with up to
350,000 plants that are carefully tended
to provide the best possible tomatoes for
Perfection Fresh.
And what exactly is the perfect truss
tomato? “It needs to be evenly sized
and coloured, firm to touch and a rich,
red colour — orange is just not good
enough!” says Leon Maree, d’VineRipe’s
general manager.
“It’s a very versatile tomato — good for
sandwiches and salads but also great for
cooking. Personally, I just like them raw
with olive oil.”
The truss tomato plants are put into the
glasshouse as six-week-old seedlings
and can start bearing fruit two months
later. Each plant can be productive
for 12 months and produce up to 40
kilograms of fruit. They grow strung up on
nylon strings attached to the roof of the
glasshouse and the tomatoes are allowed
to ripen on the vine to ensure they have
a delicious sweet taste. Water, food and

tomatoes possible. “you can take nothing
for granted,” explains Leon.

tomatoes. They should feel relatively
heavy for their size, and be free
of any black or soft patches.
Their skin should look smooth,
with no wrinkles.
To prepare If using tomatoes in cooking,
you may like to peel them first so that
you don’t get stringy bits of skin in the
resulting sauce or soup. To do this, cut
a small cross in the base of each tomato
then stand in boiling water for 1 minute.
Remove to a bowl of cold water then
quickly peel away the skin.
Best in Truss tomatoes are very versatile
and are great in salads, tossed through
cooked pasta with some fresh basil and
bocconcini or baked with fish.

STRANGER DANGER• Be sure to talk to your child about safety issues.
• Teach your children about consequences. If we threaten punishment and then
neglect to follow through, what we say becomes meaningless.
• While you won’t want to scare them, they should be aware of the importance of
staying within designated areas in the school grounds at all times and of not talking
to strangers.
• Teach your kids a “safety password” that anyone other than you who picks them up
from school must say before your child leaves with them. If they say the word, your
child knows it’s OK to go, if they don’t, they’ll know you haven’t sent them.
• Organise pick-up points in advance to avoid any after-school confusion.
Terror, excitement, foreboding, sadness and
exhilaration. All these emotions will inevitably
come to the fore on your child’s first day of
school… and that’s just how you’ll be feeling!
Just imagine all the thoughts that are
racing through your child’s mind! But seriously,

SUN SAFETY• There is no way you will be able to
keep a child out of the sun completely
during the hottest hours of the day,
so the next best thing is to take
preventative action. Apply a good-
quality sunscreen such as Woolworths

can re-apply themselves at school for
times when you know they’ll be outside,
such as sports or excursion days.
• Talk to teachers and find out if there
is a “no hat, no play” policy at your

without their hat, they are less likely to
forget to take it. Hats are notorious for
going wandering, so be sure they are
clearly labelled on the inside with your
child’s name and class.
• Remind your child of the importance
of drinking plenty of water before, during
and after playing outdoors on hot days.
HYGIENEWash hands This is the single most
effective way to avoid spreading germs
that cause illness and infection. Hands
should be washed before eating and after
using the toilet – always.
Toilet manners Be sure your child knows
the drill. Only one person in a toilet cubicle
at a time, check you are properly dressed
before leaving the toilet, flush toilets after
use and, again, wash hands.
No sharing food Schools have policies
on this. Kids should be told not to ask for,
or accept, food from others.
Tidy hair It’s more than just about
appearances. Clean, tidy, well-kept hair
is also a health and hygiene issue. If hair
is long, tie it back or use a headband to
keep it off the face and out of the eyes.

GEARING UPA child who is well equipped for school is ready for learning and embracing new experiences. For the best possible start, children need the right
gear. That does not mean it has to be the most expensive or fashionable, but it should be practical and durable to meet the needs of an energetic
year ahead. It’s easy to let appearances rule decisions here, but remember, your child will have to lug it around, so choose one which is a sensible
size and is easy to carry. Backpack-style bags and lunch bags mean weight is evenly distributed for better posture. Also, never write your child’s

BULLIESMost schools take a zero-tolerance approach to bullying,
so if your child is a victim, you should inform the school
immediately.
While bullying is almost inevitable to some degree, it is
never acceptable and parents should never take a “toughen
up” approach to complaints.
Bullying takes many forms and goes beyond physical
violence – name calling, making people feel left out and
spreading rumours are all considered bullying, too.
Encourage your child to speak up, whether they are a
victim themselves, or know someone who is.
CATCHING PUBLICTRANSPORTAs children get the hang of their
new school experience, they
may be ready to start catching
public transport.
Even if they are travelling with
older siblings or friends, they will
still need to understand there is
a certain level of responsibility
involved with catching the bus
or train to school.
Fares, tickets or passes must
be kept in a safe place and they
will have to learn the routine
and transport timetable.
Etiquette is another important
point to teach your child – school
children should give up their seat
for a full-fare-paying adult.
Ease your child into their
routine (and give yourself some
much-needed peace of mind!)
by accompanying them on their
first few journeys while they get
used to it.

apples, skewers, an adult to help cut the
fruit, chopping board and knife, the juice
of 1 orange to stop the apples from turning
a brown colour.
HOW: Cut apples into quarters and
remove core. Cut each quarter into
about 3 pieces. Pour over orange juice.
Slide alternate pieces – 1 red, then
1 green piece – of apple onto skewers.

Crumble a 6 pack of Woolworths
Chocolate Lamingtons into a bowl. Add
100g slivered almonds, toasted, and
100g red glacé cherries, chopped. Stir
in ⅓ cup sweetened condensed milk
and 1 tbs rum (optional) until combined.
Line a baking tray with baking paper.
Place ½ cup cocoa onto a plate. Roll 2
teaspoonsfuls of mixture into a ball. Toss
in cocoa to coat. Transfer to tray. Repeat
with remaining mixture and cocoa. Chill in
the fridge for 10 minutes until firm.
