    Christmas at Glenroe FarmHo! Ho! Ho! Good news from the North Pole - The elves are all busy transforming the farm into a magical Christmas wonderland. Santa and Mrs Claus will be greeting all the good children in their homely thatched cottage and each child will get a special present from Santa. Next door is the amazing traditional Nativity stable with real farm animals. Santas reindeer are grazing away in the paddock getting ready to take Santa on his long journey on Christmas eve. Every Saturday and Sunday the Kids Party Club will enter-tain the children with a fabulous puppet show and disco.     The Christmas countdown has began and in our home I am certainly reminded everyday of how many sleeps are left!

    The nights are getting cooler and dark-ness is here much earlier but I love the clear crispness of the evening air and especially the Christmas twinkle lights as we walk up to the cookery school for an evening class.

    When I receive my first Christmas card in the door (I have a friend who lives abroad and she posts hers early!) I know that this is time to get moving and orga-nized have your recipes ready to hand in a folder. Write out the shopping list well in advance and even shop on line it is much easier and stress free! Create a kitchen work list for Christmas day. There are recipes that will freeze well allowing you to enjoy family time during the festive days.

    SmokED SAlmoN, WINTER SAlAD AND CREAm CHEESE BRUSCHETTASERVES 6This recipe is so easy of assembly on Christmas Day. Instead of smoked salmon I sometimes prefer the delicate flavour of Irish smoked trout.

    6 large slices smoked salmon1 large lemon4 tsp honeyPinch salt, or to tastePinch black pepper, or to taste150ml olive oil

    12 (2cm thick) slices of ciabatta, sliced diagonally1 large garlic clove, halved crosswise

    150g winter salad (your favourite salad leaves)

    100g cream cheese

    Additional olive oil

    Remove zest from lemons in large strips with vegetable peeler and cut any white pith from strips with a sharp knife. Cut the zest into very thin strips (julienne) and blanch in boiling water for 2 minutes. Drain and pat dry.To make the dressing, squeeze enough juice from lemons to measure 6 table-spoons. Whisk together lemon juice, honey, salt and pepper, then add 150ml olive oil in a slow stream, whisking until emulsified.To toast the ciabatta, prepare the grill. Brush both sides of bread slices with remaining olive oil. When the grill is hot, toast bread on lightly oiled grill rack, turn-ing once, until golden, about 3 minutes total. Immediately rub 1 side of each slice with garlic.When ready to serve, toss the salad with half of the lemon zest and enough dressing to coat. Put one toast on each salad plate and spoon some of the remaining dressing over each. Spread some of the cream cheese on top and a twist of smoked salmon, fol-lowed by salad. Repeat with a second toast, some salad and a twist of smoked salmon. Garnish with the remaining lemon zest.

    Tip: Add slices of mango and pome-granate seeds for the top.

    GlAzED CIDER TURkEy WITH APPlE, SAUSAGE AND FRESH THymE STUFFING SERVES 6-8A Guideline for roasting: The oven temperature should be around 190oC / Gas 5. Allow 20 minutes per every 500g and an extra 20 minutes at the end. If the turkey is stuffed, weigh it after stuffing to calculate the cooking time.

    I find that my meat thermometer is one of the most useful gadgets. Insert the meat thermometer in the thickest part of the meat, taking care not to touch a bone (as bone con-ducts heat and will register a higher reading). When the thermometer reads in excess of 74 C, then the meat is ready.

    To keep the turkey moist: baste with pan juices over every 30 minutes of cooking

    Christmas in the Country time. If the breast is browning too much, place streaky bacon slices on the top or use parchment paper, brush this with butter so it does not stick to the turkey. I usually turn the turkey breast side down for the last hour of cooking. This can be a bit tricky because everything is so hot, but the results are worth it. The breast of the turkey will lie in its own cooking juices and will therefore be lovely and moist.

    1 x 6kg turkey (neck and gizzard reserved) For the glaze: 600ml cider; 125g butter

    Gravy: 6 tbsp flour; 2 tbsp fresh thyme, chopped; 60ml brandy; 60ml double cream

    Preheat the oven to 180C / Gas 4. Dry the neck cavity of the turkey and stuff gently with the stuffing. Place the turkey in roasting dish, tucking the wings under and loosely tying the legs together.Melt the butter and cider in a saucepan and add to the roasting pan with the turkey.Weigh the turkey with the stuffing inside (if possible otherwise, take a good guess at the weight of the stuffing and add to the weight of the turkey to reach the total weight of the turkey)When roasting the turkey, allow 20 min-utes per 500g and an additional 20 min-utes. Roast the turkey, basting regularly. If the turkey is browning strongly on top, cover with foil. The turkey is cooked when a meat thermometer inserted into thickest part of thigh registers 74C. Add water to the roasting dish from time to time, if it ap-pears that the base is burning. When ready, transfer the turkey to a serving plate and cover with foil. Let it stand for 30 minutes. For the gravy: Pour the juices from the roasting dish into large measuring cup (or mais grais). Spoon off the fat, reserving 6 tablespoons of fat and degreased juices. Pour 2 cups of water onto the roasting tray and bring to the boil, scraping up the brown bits. Combine the flour, thyme and reserved 3 tablespoons of fat in a saucepan. Stir over a medium heat for 1 minute.

    Whisk in all the juices Add the brandy and cream and boil until the gravy thickens slightly, whisking constantly. Season with salt and pepper. Strain into a sauceboat. Serve.

    APPlE, SAUSAGE AND FRESH THymE STUFFINGSERVES 6-8Make sure you prepare sufficient stuffing as no matter in what form or shape it comes all families just love it.

    175g sliced bread with crust, made into breadcrumbs

    250g medium spicy sausage meat (cas-ing removed)

    2 red onions, chopped2 celery stalks, finely chopped

    2tbsp butter

    250g red apples, unpeeled, cored, cubed

    4 tbsp dried cranberriesA generous handful of fresh thyme100ml chicken stockChop the thyme. Saut the sausage meat in a large frying pan over a medium-high heat until cooked through, breaking into pieces with spoon. Allow around 15 min-utes. Using a slotted spoon, transfer to the bowl and add the breadcrumbs.Add the chopped onions and celery to the frying pan and saut until golden brown. Then transfer to the bowl. Melt the butter in frying pan over medium heat. Add the apples and saut until tender. This will take around 5 minutes. Mix the apples and cranberries into the stuffing. Add the thyme and season with salt and pepper. Butter a lasagne baking dish. Stuff the neck end of the turkey. Put the remaining stuffing into the baking dish and drizzle with the chicken stock. Cover with foil.Preheat the oven to 180C / Gas 4. Cover the stuffing. Bake for 30 minutes. Then remove the foil and bake until the stuffing is beginning to brown.

    Tip: Add sage instead of the thyme and thin slices of chorizo.

    CHRISTmAS ICE CREAm TER-RINE WITH CRANBERRy AND CoINTREAU SAUCESERVES 6 - 8 What makes this recipe so versatile it can be tailored made to suit you and your families taste. Blueberries or cherries can replace the cranberries and white chocolate chips work very well. For a great flavour, pour hot, melted dark chocolate from the terrine.

    1500ml vanilla ice cream, softened

    100g chocolate drops

    75g dried cranberries

    2 tbsp orange juice

    2 tbsp cointreau

    2 tbsp candied pineapple, finely diced

    1 tbsp orange zest

    For the Cranberry Syrup 75g brown sugar

    2 tbsp Cointreau

    100g frozen cranberries

    60ml waterOil a 2lb loaf tin and line with plastic wrap.Place the cranberries in a saucepan with the orange juice and simmer for 5 minutes. Allow to cool. Beat the ice cream lightly and stir in the chocolate drops, orange zest, cointreau, cranberries and candied pineapple. Spoon the mixture into the loaf tin and freeze overnight. Allow 20 minutes for the ice cream to soften before serving. To make the sauce, heat the sugar and water in a heavy saucepan until the sugar has dissolved and simmer for 7 8 minutes, to form a syrup. Add the cointreau and cranberries and boil until the cranberries pop but still hold their shape. Sieve the sauce if you dont like the seeds and add a few more whole cranber-ries for decorating on top.To serve, unmould the ice cream onto a rectangle serving plate and remove the plastic wrap.Gently pour over the sauce, leaving a few cranberries for the top. Serve immediately

    Dont forget, once you have made your food list made (and a timing plan laid out) pin it to the fridge where it will act as a reminder for you until everything is ready to be served. It can be hard to remember what time the carrots went on when youve had a glass of wine or two, so stick the list somewhere youll see it throughout the day.

    Keep a pen nearby and cross everything off as it gets organised. And dont forget to enjoy yourself, Christmas is for grown-ups too...

  • The iconic Roundwood Inn is situat-ed right in the heart of Roundwood, one of the highest villages in Ire-land. The unique building construct-ed in 1622 was originally a coach inn and today has both spacious bar and restaurant areas. Jrgen and Aine Schwalm have owned and run the inn since 1966 and pride themselves on their good value home-produced dishes.

    There is a strong emphasis on sea-sonal food on the la carte restau-rant menu and, depending on the season, any of the following might

    be available to experience: veni-son, pheasant, Hungarian goulash, lobster or oysters. All produce is sourced in Ireland with the lamb and beef being bought locally in Gerry Kavanagh Butchers in Round-wood village.

    In addition to the restaurant there is also a full award-winning bar menu available to enjoy in the atmospheric seventeenth century surroundings that include a traditional log fire that is constantly on the go. The

    Roundwood Inn is open seven days a week from 12pm for lunch and the restaurant menu is available from 7:30pm-9pm. The restaurant is also open for Sunday lunch with tra-ditional roast lamb and pork dishes on the menu. All dishes are extreme-ly popular with visitors but there is also a strong local trade and there has been for over forty years that Jrgen and Aine are particularly proud of.

    DARTS2012 WoRlD DARTS CHAmPIoNSHIPThe 2012 World Darts Championship will be played at Alexandra Palace from December 15th -January 2nd, as players from around the world compete for a 1 million prize fund in darts biggest event.

    The West Hall will welcome tens of thousands of fans over the course of 15 days and 20 sessions to the tournament, which spans the Christmas and New Year period.

    See the likes of reigning World Champion Adrian Lewis, world number one Phil The Power Taylor, Hollands Raymond van Barneveld, Australias Si-mon Whitlock and stars including Gary Anderson and James Wade in action during the Ladbrokes.com World Darts Championship.

    Play is held from December 15-23 before the Christmas break, and returns from December 27-30 as the field of players plays down to the last four who return for the semi-finals on New Years Day and the final on Monday January 2.

    2011 saw a new world champion as Adrian Lewis claimed his first ever world crown at Alexandra Palace. The often controversial figure beat Gary An-derson in the final and became the first player to throw a nine-darter in a world

    final in the process.At present there is a list of four or

    five players who will consider them-selves darts favourites for this title. They all stand a very good chance and will be targeting the Alexandra Palace event for an emphatic win. Taylor, Van Barneveld, Gary Anderson, Adrian Lewis and James Wade will all fancy their chances.

    mANNy PACQUIAo V FloyD mAyWEATHER JRWBO welterweight champion Manny Pacquiao has recently reported that his much-awaited showdown with WBC Champion Floyd Mayweather Jr is 80 to 90 percent sure to take place on May 5 next year and only a few more details are being ironed out before contracts are finalized.

    Neither the venue nor the purses was disclosed by Pac-quiao who said it was a blessing in disguise that his recent win over Juan Manuel Marquez was close because May-weather probably wouldnt have agreed to face him if the fight was one-sided in his favor.

    Pacquiao said a sharing of the fight revenues was under discussion but implied a 50-50 split. Mayweather was the worlds No. 1 pound-for-pound fighter until he quit the ring and was succeeded by Pacquiao. Mayweather has since returned to action and is trying to reclaim the prestigious honor. Both are welterweight champions with Pacquiao recognized by the WBO and Mayweather by the WBC, making their duel a historical unification match.

    Theres more than a quarter of the season gone, and the English Premier League table is quickly taking shape.

    Can anybody stop Roberto Man-cinis men from bringing the league title back to the blue half of Manchester for the first time since 1968?

    On the evidence so far, probably not. With at least two top-class inter-nationals competing for every position, City have the squad and the momen-tum to end United and Chelseas six-year domination of the Barclays Premier League silverware. Who says money cant buy success?

    Most fans will be hoping that Fergu-son looks into bringing in some more experience during the January transfer window, but he appears set on giv-ing youth its chance. The problems in defence and central midfield mean that although they will come close, Wayne Rooney and Co. may be forced to play second fiddle this time around.

    The King Kenny revolution has got most Liverpool fans dreaming of a return to the glory days, but they remain a work in progress. Luis Suarezs presence should mean they have a real chance of sneaking into the top four, especially if he can start to click with Andy Carroll.

    The star tema of the month is undoubtedly Tottenham Hotspur having 9 wins of their last 10 games and now sitting comfortabily in the 3rd spot of the Premier League.

    Parker and Adebayor have played only in the 7 Premier League games since their signings were finalised in the last week of August, and they have yet to taste defeat in Spurs colours. Long may that situation continue too. Ledley King has also not tasted Premier League defeat in a game he has started since August last year. (Wigan at home)

    Tottenahams win agains Liverpool gave Harry Redknapp his 200th Premier League point for Spurs, and at an average of 1.74 points per game, he is doing better than at any time in his managerial career in the Premier League.

    Rafa van der Vaart now has the best strike rate of any Spurs player in the Premier League era, with 19 goals in 36 matches at a rate of 1.89 matches per goal, ahead of Jurgen Klinsmann (29 in 56 matches) and Em-manuel Adebayor.

    Referee Howard Webb achieved his best score since Spurs Odyssey has been registering referees scores, and it is his best mark in 5 matches in charge of a Spurs game since March 2010. Tottenhams Liverpool game was only the fourth so far in this years Premier League where no player was booked.
