The origin of the purity law is
deeply rooted in German history.
It is regarded as the oldest
valid food law in the world.
In 1516, the Bavarian Duke
Wilhelm IV pronounced the
purity law for German beer
before the country estates'
council in Ingolstadt and thus
set a quality standard which is
still in force today.
Its main content is that beer is
brewed exclusively from malted
barley or wheat, hops, and water,
and contains no other ingredients
(such as sugar, rice, or corn),
additives, or preservatives.
Presently, brewing efficiently
also means treating natural
resources like energy, water,
and air with respect and
consideration.

The Brewing Process

as clarifying and dewatering are
key processes in breweries.

Different tasks require specificsolutions
In breweries, disc stack
centrifuges separate trub from
wort, clarify green beer, adjust
the number of yeast cells in
wheat beer, facilitate filtration
by separating yeast cells, and
clean CIP bases.
FLOTTWEG DISC STACK
CENTRIFUGES are especially
developed for breweries. They
comply with a high hygienic
standard and are completely
CIP capable.
Very soft products such as fine
trub or yeast cells require gentle
treatment and high centrifugal
force for optimal separation.

separated trub or the yeast
from the bowl at full speed,
thus performing an accurate

Decanters in breweries sepa-
rate the wort in the whirlpool
from the trub. In contrast to disc
stack centrifuges, decanters are
solid-orientated centrifuges.
Therefore, they are able to
treat suspensions with a high
solids content and they con-
centrate the separated solids
for high cake dryness.
Recovering the trub minimizes
the organic load in the waste
water and increases the effi-
ciency of the brewhouse.

Saving the very last drop
The FLOTTWEG SEDICANTER®
is a high-performance horizon-
tal centrifuge which offers all
the advantages of a traditional
decanter and those of a disc
stack centrifuge. There is no
other centrifuge offering such a
combination of high centrifugal
force, continuous operation, and
closed design in order to avoid
oxygen pick-up. The results are
a dry cake and a high quality
beer. Due to these characteris-
tics, the FLOTTWEG SEDICAN-
TER® is the economic solution
for beer recovery from yeast
surplus.

• High separation efficiency
The rotor of the FLOTTWEG
SEDICANTER® generates
a centrifugal force of up to
6000 x g. The recovered beer
is almost yeast free.
• Perfect beer quality
In order to avoid oxygen
pickup, the housing of the
FLOTTWEG SEDICANTER® is
closed and the rotor is blanket-
ed using carbon dioxide. Add-
itionally, the recovered beer is
discharged through an adjust-
able impeller under pressure.
• Optimal yield
The combination of special
design features and high
centrifugal force provides
high beer yields. The typical
cake dryness ranges from
24 to 28 %.

Due to increasing energy prices
and decreasing sales revenues
of spent grains, a special process
to use spent grains has been de-
veloped. The spent grains are
dewatered mechanically using a
FLOTTWEG BELT PRESS, and
then incinerated utilizing biomass
combustion. One metric ton of
wet spent grains can produce
approximately one 1000 kWh of
thermal energy. Depending on
the combustion technology,
70 – 75 % of this energy can be
used. The FLOTTWEG BELT
PRESS has been especially ad-
apted to the specific require-
ments of spent grains. Due to
its high efficiency, the belt press
separates up to 520 kg of water
from 1 ton of wet spent grains.
Therefore the efficiency of the
whole process increases con-
siderably. The more water that

• Optimal clarification
The FLOTTWEG DECANTERS
and SEDICANTERS® devel-
oped especially for brewery
processes are equipped with
an adjustable impeller. The
clarified beer is discharged
under pressure. The liquid
level in the machine can be
adjusted by the impeller
during operation. Thus, fine
regulation of the clarified beer
and/or dehumidification of
the separated trub are possi-
ble during operation. The
results are an optimal clarifi-
cation and high cake dryness.
• Optimal cake dryness
During wort recovery and
waste water treatment, the
solid phase of a decanter
must always be as dry as
possible – even under vary-
ing feed conditions. The
FLOTTWEG SIMP-DRIVE®
system automatically con-
trols the scroll differential
speed according to the scroll
torque. The FLOTTWEG
SIMP-DRIVE® consists of a
multi-stage planetary gear,
driven by a second motor,
to regulate the differential
speed.
