Gluten Free Low Carb SIBO Friendly Low Fodmap

Ingredients • 3 eggs, separated • 3 tablespoons of coconut cream • 1/4 teaspoon cream of tartar • 1/8 teaspoon sodium bicarbonate (Alternately you can replace the cream of tartar and sodium bicarbonate with 1/2 teaspoon of Baking Powder) Method

1. Preheat the oven to 160C (fan forced) 2. Put the egg yolks and coconut cream in a small mixer bowl. Put the

egg whites, cream of tartar and sodium bicarbonate into another medium or large mixer bowl.

3. Beat the egg whites until stiff peaks are formed. 4. Beat together the egg yolks and coconut cream until smooth. 5. Pour the egg yolk mixture into the egg white mixture and gently

combine by hand. 6. Drop spoonfuls of the mixture onto a lined baking tray. 7. Bake for 15 – 20 minutes until lightly browned and firm on the bottom. 8. Cool on the tray. 9. Store in the fridge for a week.

Suitable to freeze.
