Prime BBQ Cie. is a new hot spot in NDG, an upand coming
neighbourhood in Montreal. They opened this November and
already took their rightful place on Montreal’s restaurant scene.
The secret of heavenly tasting dishes and ravishing customer
reviews is top quality fresh ingredients from local suppliers.
Everything in the original “Prime” recipes is coming from local
farms and all the ingredients, from special sauces to pickles, are
homemade.
Billy, the owner of the place, is not a newbie in the restaurant
business. When he was 14 years old, he got a job as a busboy and
that's when he became passionate about the restaurant industry.
Since then, he successfully managed a few popular spots in
Montreal and then opened his own. With 31 years of experience,
Billy creates a charming family atmosphere for his patrons that
makes them want to come back again and again. Many of us here
at Pivotal Payments took our friends and families to Prime BBQ for
dinner and those “to die for” beef short ribs!
We sat down with Billy and asked him to tell us how he does it.
Q: Where did you get your idea to open a smokehouse?
A: The answer is simple. It's demand. There is only a handful of
truly great smokehouses in Montreal and the supply for
Southernstyle BBQ doesn’t meet the demand.
Q: Why NDG? Does this area have a significant meaning?
A: I’ve been working in this area for a few years. It’s an upand
coming neighbourhood with many bar and restaurant options. What
I found was lacking there is a place for everyone, a versatile place
where you could bring your family, business partners, friends, kids,
everyone!
Q: What are your 3 top tips on running a successful
restaurant?
A: Impeccable customer service, top quality ingredients and
consistency in those two. With these 3 elements in the mix you
have a very good chance to succeed.
Q: Where do you get your ingredients?
A: We are very proud of our partners. We get all our ingredients
from the local suppliers. For example our fruits, vegetables and
wild boar come from Ferme de PointeFortune. Our famous
smoker was built by our friends from CRB Concepts.
Q: What is your favorite item on the menu?
A: Everything! Well, if I have to pick I’d say I have two favourites –
our brisket and braised beef short ribs.
Q: To what do you attribute your success?
A: I think success has to do with passion. There is no way to
succeed in this type of business if you’re not passionate about it.
Restaurant will consume your life entirely and you should be ok
with it. It’s not just a business or just a job you go to every day. It’s
everything, it’s your life. Another success attribute is being
customer centered. Customer satisfaction is the main goal. Listen
to your customers and improve every single day. My goal is to
make my patrons happy and when they are happy I know I
succeeded.
