In the Philippines, we beat the summer heat by eating foods that refresh our bodies. Often, these are

swee t treats that a re loaded w ith icelots of it, whether shaved, cubed, or shaped into a tube. These

are s ome of my favorites.

    Halo-halo

Eaten as a dessert to end a meal or as a cool afternoon snack, halo-halo is a mix of preserved fruits

like bananas, jackfruit, nata de coco, macapuno, kaong. It also has sweetened red beans and colored

jelly. Thes e a re usually place d on a tall glas s cont aine r and b uried w ith sha ved ice. The s we et

concoction is usua lly toppe d with leche flan, ube and pinipig. Sometimes, even a scoop o f ice cream is

placed on top . It is made creamier with evapo rated milk, which is generous ly poured after allingredients are set in place.

A special spoon with a long handle is usually used eat halo-halo. Usually, all the ingredients are

patiently mixed toge ther, starting from the side s until the who le thing becomes a mish-mash o f

swee tened s tuff. For me, this is best e aten on a hot s ummer afternoon as a snack.

    Mais con yelo

This is a s we et sha ved ice treat like halo-halo, minus the multitude o f ingredients . Its kept s imple yetswee t and refreshing by sweet corn kernels topped with shaved eyes a nd finished off with

    evapora ted milk.

    Saba con yelo

This is another variation of s haved ice plus prese rved fruit and milk. This time, a b anana variety called

saba is used. It is sw eetened by boiling water w ith sugar into a syrupy treat. Sometimes, sweetened

tapioca pearls are also added to add another dimension to this dessert/snack. Like mais con yelo, this

    is simple yet delicious.

    Ice candy

This is basically any sweet liquid that is transferred into thin transparent plastic tubes and then frozen.

It can be o range juice, mango juice, chocolate d rink, milk, or wha tever you like. It is e aten b y tearing

off one end of the tube with your teeth, and then sucking on the ice. Its sweet, cool and refreshing.

Its very easy to make, so its quite popular in the Philippines during summer break.

    Ice cream

Filipinos have made ice cream (or sorbetes ) their own by creating flavors inspired by Filipino tastes .

Theres avocado, ube , buko and othe r fruity and de licious flavors. You can buy this at the s upermarket

or from street carts. Either wa y, youre in for a cold an d delicious treat!
