Chocolate Chip Cookie Dough Truffles
1 (8 ounce) package cream cheese, softened 1 cup brown sugar 2 teaspoons vanilla extract 2 1/4 cups all-purpose flour 1/4 teaspoon salt 10 ounces semisweet chocolate chips 1 pound confectioners’ chocolate
Mix cream cheese, brown sugar, and vanilla extract together in a bowl until smooth; add flour and mix until incorpo-rated. sprinkle salt over dough and fold in chocolate chips. Form dough into 1- to 2-inch balls and arrange on a baking sheet. Freeze until set, about 30 minutes. Melt confectioners’ chocolate in the top of a double boiler over simmering water, stirring frequently and scraping down the sides with a rubber spatula to avoid scorch-ing. Dip cookie balls into chocolate and place on a sheet of aluminum foil or waxed paper until hardened, at least 20 minutes.

Canadian Maple leaF Flag raised
For nearly a century canada had no distinctive national flag. Each time canadians suggested a new symbol to replace the canadian Red Ensign, mod-elled after a British naval flag, there was controversy. Maple leaves, beavers, crosses, crowns — proposi-tions that went nowhere. In 1964 Prime Minister Lester B. Pearson said he’d introduce a new national flag. But opposition leader John Diefenbaker and the Royal canadian Legion wanted to stick with the Red Ensign. Everyone had an opinion before canada finally chose the red and white flag with the maple leaf. on Feb. 15, 1965, for the first time in the coun-try’s 98-year history, canadians raise an official national flag. At noon on Parliament Hill, RcMP constable Joseph secours, 26, lowers the Red Ensign and hoists the new Maple Leaf atop the Peace Tower in ottawa. canadians across the country and abroad do the same. In many of the official ceremonies, members of the canadian Army and Royal canadi-an navy have the honour of raising the new flag.
