Recipe of the Month is Grilled Filet Mignon with Gorgonzola Cream Sauce by Renee V. Bruch, Graphic Designer of the Wine of the Month publication.
From the most prestigious and picturesque part of the Languedoc region in France, Corbieres is known for growing outstanding Syrah, Grenache, and Mourvedre.
On Line Review“Corbieres is the largest AOC within the Languedoc-Roussillon region. It has very different terroir throughout that includes hillside vineyards and flatlands with heights from sea level to 1600 feet, and the soil itself also changes considerably throughout the region. It is dark purple in color and brings aromas of blackberry and raspberry fruit with some very subtle barnyard. On the palate you get blackberry and sour cherry fruit with some very mild tannins. The acidity is nice and there is a little bit of minerality on the finish. Overall you get decent fruit with just a little bit of tannins and acidity to balance things out.”
Make way for an incredible value, the spry ‘09 Four Vines Zinfandel sings on the palate with a rush of bold, berry flavors; long and satisfying in the finish.
Wine maker notesSo it’s probably the worst kept secret in all of winemaking, but Old Vine Zinfandel is an unbeaten
combination of flavor and valuable. And if big words like “unbeatable” aren’t convincing enough consider this: OVC – our multi-appellation blend – pulls fruit from every one of the top five Zinfandel
appellations in California. By themselves, they’re news worthy. Together, well, we’re gonna stick with the tried and true: unbeatable.
On the nose the wine has layers of berry fruit and anise aromas with hints of spice. On the palate, blackberry and spicy plum fruit with a rich mouth feel. Big and opulent on the mid palate with plenty of
structure, trailing to a velvety toasted oak finish.

Malbec Merlot is a medium-bodied red, approachable, fruit-driven, with a lot of bang for the buck.
Tasting NotesOcaso Malbec/Merlot...soft and flavorful with expressive notes of espresso, nutmeg, charred toast
and black/blue fruit. Versatile and friendly making it work with gorgonzola topped filet mignon as well as BBQ chicken and angel hair pasta mixed with fresh steamed veggies.
On Line ReviewAs Kathy Brindle, Gary’s Wine Associate, discovered one night when she took a bottle home, it’s all about versatility. “What really impressed me about the Ocaso Malbec was how food-friendly it
was,” Kathy says. “It stood up to a gorgonzola-topped grilled filet mignon, but it didn’t overpower a side dish of angel hair pasta and summer veggies. And I could imagine how the ripe blackberry fruit
flavors and long smooth finish would also make it a great match for BBQ chicken.”
$20 Red WineSupple and spicy with oodles and oodles of juice, this perfect specimen of a Hautes-Côtes makes us wonder what other secrets are hidden in the hills above the Côte de Beaune. A blend of two separate plots (one with very old vines), the wine captures the essence and soul of Burgundian Pinot Noir in both its aromas and flavor. Violets and baking spices and a hint of forest floor on the nose; the mouth is awash with red cherries and blackberries.
Tasting NotesWonderful rich dark fruit. Powerful with smooth tannins and a decent finish. Excellent for this level and price (12 euros). Looks to be a domaine worth checking out.

Recipes From the ValleyGrilled Filet Mignon with Gorgonzola
Cream Sauce Recipe from this publications Graphic Designer Renee Bruch
• 4 cups heavy cream• 3 ounces crumbled Gorgonzola cheese• 3 tablespoons grated Parmesan cheese
• 3/4 teaspoon salt• 3/4 teaspoon ground black pepper
• 1/8 teaspoon ground nutmeg• 4 (8 ounce) fillets beef tenderloin
Recipe• Pour heavy cream into a saucepan and bring to a boil over medium heat.
Reduce heat and simmer until the cream has reduced by half, stirring occasionally, about an hour. Remove from heat and whisk in the Gorgonzola cheese and Parmesan cheese, salt, pepper, and nutmeg, until the cheese
has melted.
• Season the beef tenderloin with lemon pepper, garlic powder, onion powder, salt, and pepper. Set aside. Place the bacon in a large, deep skillet, and cook over medium-high heat, stirring occasionally, until evenly browned, about 10
minutes. Drain the bacon on a paper towel-lined plate.
• Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
• Cook the steaks until they start to firm, and are reddish-pink and juicy in the center, 3 to 5 minutes per side. An instant-read thermometer inserted into the center should read 130 degrees F (54 degrees C). Remove the steaks from the grill and tent with foil
to rest for 5 to 10 minutes. Serve each steak with the Gorgonzola sauce and top with crumbled bacon and
chopped green onion.
• 1 pinch lemon pepper• 1 pinch garlic powder• 1 pinch onion powder
• Salt and ground black pepper to taste• 12 slices thick sliced bacon, chopped
• 4 green onions, chopped
