Echigo Beer was the first microbrewery in Japan to form once the Japanese government had reduced
the production capacity & licensing laws in 1993. Echigo beer started a brewpub in 1995 & began selling
their first beer, Ocean Beer, in October of the same year. Since then, Echigo has grown in size and is
now considered one of the largest in Japan & have won numerous beer awards around the world.

MINOH BEER (Osaka) 箕面ビール(大阪府)Formerly known as AJI Minoh Inc., Minoh Beer opened in 1997. It started out when the late Oshita-san
bought a brewery for two of daughters, Kaori and Mayuko, and later their younger sister joined in. Minoh Beer
first made news when the W-IPA was advertised in a Japanese newspaper; however, Minoh Beer was known
among Japanese craft beer fans before then. Minoh Beer is also a multiple award-winning brewery with
some of the wins coming in best IPA and best stout.

TAMAMURA HONTEN (Nagano) 玉村本店(長野県)Tamamura Honten started brewing Shiga Kogen Beer, like several other breweries such as Kiuchi Brewery,
as an offshoot from a sake brewery. In 2004, Tamamura Honten applied for a license and started brewing in
September of the same year. Unlike other breweries however, Shiga Kogen Beer receives 20% of its hops
from the local area, produced by Tamamura Honten.

Founded: 1688. Katsuyama was established to brew the upscale sake enjoyed exclusively by the feudal lords of
the Sendai domain, which was founded by Japan's Most famous samurai & military commander Date Masamune.
It is important to note that the Date family still exists and the present 34th generation continues to be supplied
by the Isawa family! Katsuyama brews nihonshu that lets you experience clean, clear umami (savory taste).

HAKURAKUSEI (Miyagi) 伯楽星(宮城県)Founded: 1873. Hakurakusei has the undeniable reputation of being the best sake to pair with fine foods.
Its extremely delicate texture and aroma compliment exquisite dishes instead of overpowering them. This sake
is brewed for stimulating your appetite and being easy to drink even during the latter stages of a meal.
It is dry, very balanced with mild texture and clean acidity. The aftertaste is also very refreshing.

KOKURYU (Fukui) 黒龍(福井県)Founded: 1804. Kokuryu-shuzo is known as one of the first brands to commercialize Daiginjo (highest quality
sake) in Japan. What makes this brand different is the integration of the maturation process of French wine.
Kokuryu developed an innovative method of storing sake under 0°C (32°F) for years, while other sakes in the
market have much shorter maturation process. The resulting sake has a gentle, mild aroma and a delicate taste.

KUHEIJI (Aichi) 九平次(愛知県)Founded: 1647. The brewery, Manjo-shuzo, sees opportunity in breaking the status quo of sake.
They grow their own rice to deepen their understanding of this drink. They also own a French winery which
allows them to incorporate a different craft into sake making. Its taste is characterized by a fruity aroma and
fresh savoriness. A three-star restaurant in Paris offers this brand.

Founded: 1832. Nihonshu from this part of Japan tends to be big & full with flavor. Kyushu is well known for their
production of shochu (the climate in this region of Japan favors high speed fermentation, which is good for shochu).
The flavor profile for Japanese sake tends to mirror the profile of the regional shochu. We can certainly find in
the aftertaste the distinct flavor of shochu lingering on the back of the palate, a signature of the region (embrace it!).

MATSU NO TSUKASA (Shiga) 松の司(滋賀県)Founded: 1860. Brewmaster Keizou Ishida believes in making sake with a purity of flavor that is as natural as the
air and the water of Shiga. His aim is to make sake that conveys feelings of calmness, and mirrors the tranquil
natural landscape around the brewery. Kimoto sake is a traditional, hard-working prosess brewing method in
which the yeast starter is made in a special way that allows more funky yeast and bacteria to be pesent, often
lending the sake a gamier, wilder flavor that can be fascinating.

TOYO BIJIN (Yamaguchi) 東洋美人(山口県)Founded: 1921. Like many brewer-owners of his generation Sumikawa-san was inspired by the example of
Akitsuna Takagi who created the era defining Juyondai sake brand. Unlike most brewers however,
Sumikawa-san was mentored by Takagi-san and has been referred to as his honorary “younger brother.”
“Aiyama” also called rice diamond, is polished to 40% and fermented at low temperature for a long term.
Transparent, smooth feeling like velvet flows from the moment of swallowing to the after note.
Toyobijin, Junmai Daiginjo “Tokugin Aiyama” $ 160
KITA NO NISHIKI (Hokkaido) 北の錦(北海道)Founded: 1878. The founder, Kobayashi Yonesaburo, had a dream of decorating Hokkaido with brocade, so he
created the brand “Kita no Nishiki” meaning “northern brocade” . In 2004 and 2005, Kobayashi Shuzo was
awarded gold in the National Sake Competition with a sake produced using Hokkaido cultivated sake brewing
rice. In 2006, the brewery was designated as a national cultural heritage site. Currently, the brewery only
utilizes Hokkaido-cultivated sake brewing rice in its production.
