    Edward Sellers loves wine, in spite of his

    moniker. Yes, thats his real name, no its not a

    marketing ploy. He and his wife Dani

    purchased their Westside property off

    Highway 46 West in 2004 with plans to builda winery with a bed and breakfast to follow a

    few years down the road. For several years

    they had their tasting room in downtown

    Paso Robles, but that was a temporary plan.

    We opened our new winery and tasting room

    September 10th and are really excited about

    being out in the vineyard, Dani says. The

    bed & breakfast is scheduled for construction

    in the third phase of our building plans which

    will be several years off. But for now the

    wines of Edward Sellers are achieving newheights.

    Distinctive and beautiful are just two

    fitting adjectives for the small lot wines in the

    winerys portfolio. Popular and praiseworthy

    are two more. In fact, the winery was listed in

    the March 2009 issue of Wine Spectator as

    one of the top 10 Emerging California Rhone

    Producers, and the wines have also received

    the attention of leading wine critics, including

    Robert Parker Jr., who recently praised four of

    Edward Sellers wines. We have worked really

    hard to find the best growers and the best

    fruit, Dani says. We do minimal work to the

    fruit during the winemaking process in order

    to showcase its true essence. We have a

    refined style and are happy that we have a

    following that appreciates the same style thatwe do, Dani notes.

    The physical symbol of the Sellers passion

    is the intricately designed 32-point compass

    rose (a symbol usually found on old world

    maps) which adorns every bottle of Edward

    Sellers wines. The compass was chosen

    because Ed, who is a passionate entrepreneur,

    sailor and pilot, set a new course, so to speak,

    for himself and his wife when they started

    their 30-acre vineyard. I never drank wine

    until I went to college and started working innice restaurants. It was fascinating to me how

    one varietal could taste so completely

    different from producer to producer, Ed says.

    And now hes smitten with the potential of

    Paso Robles. As Rhne varietal enthusiasts,

    the couple was particularly inspired when

    they learned that the growing conditions of

    the area closely resemble those of south-

    eastern France. They purchased their land in

    the Templeton Gap corridor on purpose

    because it provides rocky soils and a micro

    mate that is cooled off by breezes funne

    down from the Santa Lucia Mountains

    the nearby Pacific Ocean. The days at

    vineyard are clear and sunny, with sum

    temperatures into the high 90s to low 10

    But by late afternoon those temperatures d

    by as much as 40 degrees, creating w

    diurnal swings which is crucial to achieve

    intense flavors and acids in their Sy

    Grenache, Mourvdre, Roussanne, Marsa

    and Grenache Blanc grapes. Though the fo

    will always be on Rhne wines, Ed confe

    obscure Rhne varieties. They still prod

    their blends including Cognito, a blend

    Mourvdre, Syrah, Zinfandel and Grenach

    Niner Wine Estates Hello HarvestHarvest is always a special time of year at the winery. Its the time

    when the hard work and dedication of the crews out in the vineyard

    come to fruition. Its the point in the winemaking process when the

    winemakers literally take the fruits of the growers labor and use their

    talents, skills and creativity to turn grapes into wine.

    Deciding when to pick is the most important decision I make,

    says Amanda Cramer, Winemaker for Niner Wine Estates. We work

    hard in the vineyard all year long, doing everything we can to get

    uniform ripening within each block and to ensure that sugar develop-

    ment doesnt get way ahead of flavor development. Amanda walks the

    blocks daily as harvest approaches, tasting berries, looking for ripe

    (but not over-ripe) flavors, and

    mature seed and skin tannins.

    Carina Cellars motto has always been to

    go beyond expectations. When the company

    began in 2001, owner David Hardee and

    winemaker Joey Tensley had a vision for

    producing truly great Rhne-style wines that

    exhibit the unique characteristics of the

    terroir as well as the grape itself. Even the

    name Carina embodies that same desire to

    be set apart. The winery takes its name from

    the constellation Argo Navis which is sepa-rated into three star clusters: Vela (The Sails),

    Puppis (The Stern) and Carina (The Keel).

    Named for the epic ship Argo and its crew of

    fifty, the constellation was placed among the

    stars by the Greek goddess Athena upon

    completion of the epic quest for the Golden

    Fleece. The crew better known as the

    Argonauts, included Jason, Hercules,

    Orpheus, Castor and Pollux triumphed

    through perils unseen in our modern world

    The uber-chic wine tasting event, CRAVE A Paso Robles Wine

    Experience is taking place Friday, October 22, from 7:30 to 10 p.m. at

    the Veterans Hall in San Luis Obispo. CRAVE geared toward the next

    generation of wine enthusiasts upholds a relaxed, laid-back atmos-

    phere, with a revamped layout, creating more room for wine enthusi-

    asts to taste. The most exciting development is the introduction of new

    wine bars focused on the consumers CRAVING; industry trends.

    Our CRAVE audience, also known as the millennial, has proven

    exceptionally wine savvy and has shown an interest in trends

    surrounding the industry, said Stacie Jacob, executive director of the

    Paso Robles Wine Country Alliance. This year the educational

    component has been taken a step further; in addition to offering tradi-

    tional varietal bars such as Rhne Whites, Ross, Rhne Reds andUnique Paso Blends, CRAVE wine bars have been further specified

    including No Oak Distinct Whites, Estate/Vineyard Designate Zinfan-

    dels, Sustainable Distinct Reds and Cabernet Sauvignons under $20.

    In addition to these wine bar novelties, event producers have refor-

    matted the event space allowing more freedom for wine enthusiasts to

    taste, stroll and enjoy. The Veterans Hall exterior and foyer will be

    utilized and a cooling system will be implemented keeping CRAVE

    goers fresh to taste from more than 40 wineries within eight wine bars.

    The evening is complemented by food pairings from the finest restau-

    rants and caterers in San Luis Obispo County. New in 2010, CRAVE

    entertainment showcases live music from TROPO. This San Luis

    Obispo band specializes in down-tempo and electronic ambient rock,a popular musical genre featured at many night clubs.

    Thanks to The Grapeline Wine Country Shuttle, various safe rides

    will be offered free of charge. A safe ride from Downtown Paso Robles,

    to and from the Veterans Hall in SLO will be available. In addition,

    three drop-off spots will be offered throughout the evening, including

    to the Cal Poly Student Union, Laguna Shopping Center and Down-

    town SLO. Responsible tasting is also an important element of CRAVE.

    I recently opened a bottle of red wine, vintage 1985. It poured out

    of the bottle with the color of an old brown-brick building, and myimmediate comment was Perfect! You cant always judge a wine by

    its color, but often a visual inspection provides clues to its age and

    sometimes quality.

    Young red wines show a deep purple more than red. After aging a

    few years, the color becomes more ruby-like. With an age of 10 to 20

    years, or more, the color is lighter and takes on a tinge of brown at

    least around its edge, if not throughout.

    As red wines turn a little lighter with age, white wines take the

    opposite path. Young white wines start very pale, maybe even with a

    greenish hue. As the wine matures, the color of straw yellow is normal.

    As white wines age to near 10 years and older, the color deepens to an

    attractive golden yellow.Exceptions apply to sweet white wines like Sauternes, which are

    almost never pale and will become deep amber-yellow with age, and

    also with light red wines like Beaujolais, which rarely become deep in

    color, at any age.

    Wines made from different grape varietals posses different shades.

    For example, Sauvignon Blanc, Pinot Grigio and Riesling are paler

    than Chardonnay, which tends to be more

    yellow-gold. For reds, Pinot Noir,Sangiovese and Beaujolais are more translucent than Cabernet, Me

    or Syrah.

    Judging a wines clarity involves holding the glass up against a w

    background. A white wine should be clear and bright while a red w

    will be densely pigmented with color, depending on the grape var

    It may even have a little sediment, depending on its age, and stil

    pleasing and safe to drink.

    The key is to look out for cloudiness in the wine. A bottle of v

    old red wine, say, more than 20 years old, may become a little clou

    when moved because the sediment is agitated. This is normal.

    1985 bottle was decanted to separate the wine from its sediment.

    But a permanent, dull, cloudiness in wine is a bad sign. Fortunathe quality of wine these days is so good that this is highly unlikel

    The tasting room at Sculpterra Winery

    is not just about wine. Yes, you will find

    Cabernet Sauvignon, Merlot, Zinfandel

    and big red blends, but there is also a dedi-

    cation to artists and their art from the localcommunity. We continue to add to our

    local artist theme and currently showcase

    two jewelry makers, a ceramicist, and local

    olive oil, says tasting room manager Kyle

    Coots. But the big draw, literally, are the

    massive sculptures which dot the property.

    The huge sculptures include a 10 ton

    puma and an eight ton mammoth,

    designed by local artist John Jagger. Its

    not a gimmick, its a combination of really

    outrageous original art and high end big

    red wines, say winemaker Paul Frankel

    and theres no place like this in all the Central Coast. The tasting room

    also boasts lots of original art by their resident iron worker and

    master blacksmith Robert Bentley. Another addition to their winery

    line up which many people do not know is that at Sculpterra there

    are pistachios on the tasting bar to sample and packages for sale

    which come from the estate. Dr. Frankel planted them back in 1980

    and today there are 30 acres on the property, Kyle says.

    The fall is always an exciting time at any winery as harvest begins

    For the some time now, winemakers

    Clay Brock and Chrissy Whitmann have

    been at work at Wild Horse Winery

    combining their diverse experience,

    talents and flair for experimentation to

    continue a nearly three-decade tradition of

    excellence in Templeton. Accompanying

    the winerys famous Pinot Noirs, are their

    Chardonnays, Merlots and Cabernet

    Sauvignons.

    Wild Horse Winery thrives on variety.

    Historically, they have utilized a cross-section of 30 grape vari-

    eties and 40 Central Coast vineyards across 16 appellations,

    enabling a well-stocked affair of both new and seasoned vintages.

    With so many to choose from and a slew in the library, onewonders if a Wild Horse E-ticket would be the ideal way to

    sample all of them. To keep things practical, the tasting room

    divvies up its portfolio into four main categories: Wild Horse

    Wines, Cheval Sauvage (a reserve wine), Unbridled Wines and

    Winery Exclusives.

    There are four core wines distributed nationally. This includes a

    Pinot Noir, Cabernet Sauvignon, Merlot and Chardonnay. In

    limited distribution is the Viognier. In even smaller distribution is

    Unbridled Chardonnay (Bien Nacido Vineyard) and Unbridled

    Pinot Noir (Santa Barbara County) affectionately named Cheval

    Sauvage (Wild Horse), is a smooth op

    ator with a fragrant, woodsy aroma. In

    Just after summer vacation and before the hectic holiday

    season, some places in California still have reason to celebrate a

    stretching into November, the roughly three-month-long harvest
