Welcome to the April issue of Wine Advisor. Fine wines and big names. Iconic producers crafting wines that add value to people’s lives. Wines that demand thought and patience. That’s what this issue is all about.

The Wine Society’s Directors’ and Premium Selections are unique in their own right. Take the Chardonnay wines, for instance.
In the Directors’ Selection, the highest quality fruit is taken and transformed in a way that exudes wines of complexity, combining characters of struck match, lees-derived texture and balanced acidity.
The Premium Selection, on the other hand, focuses on wines of fruit purity, lightness of touch and vibrant acidity. They offer a sherbet-like texture with a wide breadth of citrus fruits.
I recently retasted each Chardonnay from both selections to compare and contrast the differences. Whatever your preference, there’s a Chardonnay for everyone.

Tomato and eggplant tartServes: 2 as a main or 4 as an entréePreparation time: 10 minutes Cooking time: 25 minutes
Ingredients:• 2 tablespoons olive oil• 1 small eggplant, sliced• 2 puff pastry sheets (160g per sheet)• 400g medley tomatoes, sliced• 80g smoked cheddar, crumbled• 80g feta, crumbled• 1 egg white.
Method:1. Preheat the oven to 180°C. Line a
baking tray with baking paper.2. Place a frypan on low heat, add
the olive oil and eggplant, and cook gently until the eggplant has wilted.
3. If you are using frozen puff pastry, let it defrost for 5 minutes. Place the pastry gently on the baking tray and pierce with a fork.
4. Evenly spread the sliced eggplant and tomatoes over the pastry. Leave a border of about 1½cm to allow the pastry to rise at the edges, creating a lovely puffy crust.
5. Evenly spread the crumbled feta and cheddar on top of the tomatoes and eggplant.
6. Brush the bare border of the pastry with the egg white.
7. Place in the oven and cook for 20 minutes or until the pastry on the borders has risen and is golden brown.
8. Once cooked, allow the tart to cool for 3 minutes.
9. Cut into slices. Serve.
