Focus on the lsquoStarsrsquo Cooking Healthy for the Holidays ldquoHealthyrdquo and ldquoholidayrdquo donrsquot usually find themselves in the same sentence espe-cially when it comes to food But that doesnrsquot have to be the case Holiday celebra-tions and traditions are an important part of life to be enjoyed You can learn to re-duce the large amounts of fats and sugar usually found in holiday recipes and focus more on the ldquostarrdquo ingredients mdash fruits and vegetables With a little planning and a few simple changes it is possible to enjoy great tasting holiday foods while still maintaining a healthy lifestyle and avoiding the weight gain often associated with the holiday season Focusing on Star Ingredients Many favorite holiday dishes mdash such as candied sweet potatoes green bean cas-serole and pumpkin pie mdash begin with a healthy main ingredient Foods such as apples sweet potatoes and green beans have great flavors of their own and are members of the healthful fruit and vegetable food groups The large amounts of fats and sugars added to those fruits and vegetables cause the dishes to become less healthful Each gram of added sugar adds 4 calories to a recipe and each addition-al gram of fat brings with it another 9 calories The dietary guidelines at ChooseMyPlategov encourage consumers to cut back on foods high in solid fats added sugars and salt Thatrsquos because research shows these lifestyle changes can help you avoid weight gain and chronic diseases By focusing on fruits and vegetables and making some simple changes to added in-gredients mdash such as reducing fats and added sugars mdash it is possible to create more healthful dishes while still maintaining the flavor you expect As a simple example consider apples Apples are sweet and tasty with a variety of flavors depending on the type of apple If you make apples into applesauce with no added ingredients a cup of applesauce contains approximately 100 calories How-ever when you compare packaged applesauce at a grocery store you find that most varieties have added sugar which increases the calorie content to around 180 calories per cup
Almost everyone loves the sweet taste of sweetened applesauce But is it really necessary to add 80 addi-tional calories to create more sweetness in a food that already offers a sweet taste A 160-pound person would need to walk about a mile to work off the additional 80 calories added to the cup of applesauce (httpwalkingaboutcomlibrarycaluccalc1htm) Many Americans have learned to accept extremely sweet tastes as normal and necessary However with a little effort and time your taste buds can learn to enjoy less sweetness thus saving calories per serving and pounds of unhealthy body weight The concept is the same for added fats as it is for sugars Your taste buds can learn to enjoy lower fat and fat-free foods as well and your body will reap the healthful benefits To create a healthier dish try concentrating on the ldquostarrdquo ingredient It is possible to enhance the flavors with herbs and spices or smaller amounts of added fats and sugars to make tasty yet much healthier recipes

Hello fce Friends
Congratulations on a great 100th birthday
party It was an outstanding celebration of your

birthday cakes Not many birthday parties have
multiple birthday cakes My hat is off to all of you
I believe the reason for the long history and
success of this organization regardless of name

WORDS FROM BERNIE KANE FCE President Elect 2014-2015 The fce Bazaar was much larger than it has been as it filled both buildings It was a superb effort by those who worked it and I would like to call special attention to the efforts of Michelle Cham-bers What a fine job she did setting it up and following through Certainly not taking anything away from everyone else who worked very hard to get this underway but Michelle did an outstand-ing job over a long period of time Hats off to an effort of which we can all be proud
Also those of you who missed the luncheon missed a very enjoyable afternoon and fine meal FCE is such a great organization and we are capable of accomplishing so much in our communities We need to take advantage of all the talent that we have in our clubs
We will be starting a new year soon and I will be trying to follow the really great efforts of Wanda Briddelle It would certainly be helpful to get some suggestions from all of our members on what you would be interested in doing during the next couple of years I plan to visit all of our clubs through the year to meet everyone and get a better understanding of what direction our efforts would best serve So everyone put on your thinking caps and lets see what we can do to make 2014 amp 2015 years we can really enjoy and be proud of our accomplishments

NATIONAL FCE WEEK
ldquoIt is not what you gather but what you scatter that tells
what kind of life you have livedrdquo
Well were you there The FALL LUNCHEON ldquo100 YEARS of fce in Wilson
Countyrdquo
It was a very fine way to be celebrating 100 years of anything much less an organization that is based on helping and serving people in our communities by participating in classes and passing on those small ideas etc for a better life and living The skit was wonderful going through those 100 years of fce from ldquoHow to Can Tomatoesrdquo to the use of cell
phones How many of you would again like to have a class on how to can tomatoes
We have often heard folks say ldquoWhy can it not be like we use to do itrdquo Well the best answer I can come
up with (being a fairly new member myself) is times have changed therefore things change How many of
you 40 years ago would have asked for a class on how to use a cell phone
Back to the subject at hand the Birthday Party was a very good presentation of what was and what is now
Had several past FCS agents Mrs Jean Tyree and Ms Connie Hamilton State Senator Mae Beavers
County Mayor Randall Hutto City Mayor Phillip Craighead and State Representative Mark Pody was repre-
sented by his daughter just to name a few Many great antidotes (there should have been a book written)
Wilson County fce received several proclamations for service to this community and Wilson County from
Governor Haslam State Representatives Pody and Lynn and State Senator Beavers
Delicious Birthday cakes at each table were made by Ms Felicia McPeak and a good lunch was served by
Houstonrsquos Meat amp Produce of Mt Juliet Door prizes were given and a lot of fun was had by all
ldquoKudos Very good job Wilson County fce Board membersrdquo Thanks for bringing it home If we want a bet-
ter place to live and grow we have to serve participate and be a part of the teaching and planning and the
best way to teach is by example

And the other event you needed to see and
be a part of WILSON COUNTY fce BAZAAR
was a fun place to be on Saturday November 2
whether you were there to shop or sell or in most
cases both
The items displayed were beautiful and in general
were fairly priced We have never had such a big
bazaar with so much stuff before
Fce Clubs and individual vendors were all there
Lots of things that would make great Christmas pre-
sents and a lot that would have looked good on your
wall table or tree
Breakfast and lunch was prepared by Genna Kilga
and served by the Boy Scouts several vendors
had baked goods (in one case still warm right out of
the oven) and it was great to see many friends and
neighbors
If you participated or if you missed it remember next
year the date is NOVEMBER 1 2014 or the first
Saturday in November and come see the folks you
havenrsquot seen in a long time chit-chat with new folks
and say ldquohellordquo It is a lot of fun
If you have any ideas for making it a better bazaar
please notify us or me and we will see what we can
do

We have often heard folks say ldquoWhy can it not be like we use to do itrdquo Well the best answer I can come
up with (being a fairly new member myself) is times have changed therefore things change How many of
you 40 years ago would have asked for a class on how to use a cell phone

the oven) and it was great to see many friends and
neighbors

Hello fce Friends
Congratulations on a great 100th birthday
party It was an outstanding celebration of your
history from tomato canning clubs and making mat-
tresses to microwaves the ldquoworld wide webrdquo and
cell phones I enjoyed the play hearing from Mrs
Tyree and Ms Hamilton and of course the great
birthday cakes Not many birthday parties have
multiple birthday cakes My hat is off to all of you
I believe the reason for the long history and
success of this organization regardless of name
Home Demonstration Clubs Extension Homemak-
ers or Family and Community Education Clubs is
due to the organization remaining true to its mis-
sion statement of ldquosharing experiencesrdquo which
strengthen the home and community Education
community service and building lifetime friend-
ships while having fun and fellowship has long
been a recipe for success and sustainability I am
certain there will be another celebration in another
100 years

Bernie

Your Editor
If you have any ideas for making it a better bazaar
please notify us or me and we will see what we can
do

If you have any ideas for making it a better bazaar
please notify us or me and we will see what we can
do
