I love to eat pasta at any time of year. It’s socomforting and delicious that it’s a perfect foodto enjoy when you want to have a relaxing, pleas-urable meal, whether you’re dining with friendsor even eating it on your own.That’s one of the big reasons why I decided tocall the first restaurant of my very own Spago,which literally means string in Italian, but is alsoslang for spaghetti. It captures the sense of goodfood and fun I love to offer my guests year round.Autumn, though, always strikes me as an espe-cially good time to cook and eat pasta. Peoplewant something warm and satisfying in theirstomachs when the weather is colder and thenights are darker. This is a season for more robustpastas, especially fresh varieties of doughwrapped around savory fillings - like ravioli andtheir many cousins.That’s why I’m delighted to share with you arecipe for one of my favorite fall pastas: Tortelliniwith Ricotta, Sage, and Brown Butter. The wordtortellini in Italian literally means “little cakes,” anice description for these plump rounds of dough.The pasta is fairly easy to make, fill and shape,though the job is better left for a weekend ratherthan a busy work night. In my recipe, you’ll findcomplete instructions for mixing and rolling outyour own fresh pasta dough; but you may alsofind sheets of fresh rolled-out dough in some Ital-ian delis and well-stocked markets. Then, youmix up a simple filling based on ricotta cheese;line up mounds of filling along a sheet of dough;fold the dough over lengthwise to seal in the fill-ing; cut out each individual piece around its fillingin a half-moon shape, using half the circumfer-ence of a round cookie cutter; and, finally, gentlyseal together the two corners of each half-moonto give the tortellini their distinctive shapes.Yes, that’s a bit of work. But I think you’ll findit simple and surprisingly enjoyable.The sauce that goes with the pasta is a cinch tomake. All you do is melt butter with salt, pepperand a sage leaf, just until the point that the butterturns golden brown; then, keep it warm. Once thetortellini are cooked, drained and plated, yousprinkle them with black pepper and freshlygrated Parmesan, spoon the butter over them, andgarnish with more sage.

I’m sure you’ll agree with me that a plateful ofthis pasta looks, smells and tastes like autumn it-self. From its deep, earthy and golden colors tothe nutty flavor of the butter to the heady fra-grance of sage, this is a dish that will make youthink of more holiday celebrations soon to come.

TORTELLINI WITH RICOTTA, SAGEAND BROWN BUTTER Serves 4

TORTELLINI:Pasta Dough (recipe follows)1/2 cup (125 ml) ricotta 1/2 cup (125 ml) goat cheese1/4 cup (60 ml) grated Parmesan1/4 cup (60 ml) mascarpone1 cage-free egg yolk1/2 teaspoon sugar1/2 teaspoon ground nutmeg1/4 teaspoon kosher saltPinch freshly ground black pepper1 teaspoon chopped fresh sage1 teaspoon chopped fresh thyme1 cage-free egg, beaten1 tablespoon waterSemolina flour, for dusting

SAUCE:6 tablespoons unsalted butterPinch kosher saltFreshly ground black pepper1 fresh sage leaf, plus extra for garnishFirst, make the dough.For the filling, pulse the ricotta, goat cheese,Parmesan, mascarpone, yolk, sugar, nutmeg, salt,and pepper in a food processor until combined.Transfer to a bowl. Stir in the sage and thyme.In a bowl, combine the beaten egg and waterfor an egg wash. Brush a dough strip with somewash. For each tortellini, place 1-teaspoonmounds of filling on the dough in a single row,spacing them 2 inches (5 cm) apart and 1 inch (2.5cm) from a long edge. Fold the uncovered halfover the filling. Press down around each mound

to seal it in close to the fold, pressing out any airpockets. With a 2-inch (5-cm) round cookie cut-ter, cut out half-moon shapes by cutting the curvethrough the sealed pasta, leaving the filling nestledalong the straight fold. Then, gently curve eachhalf-moon, pinching its corners together. Arrangeon a parchment-lined, semolina-dusted bakingsheet, then dust with more semolina. Repeat withremaining pasta and filling.Bring a large pot of salted water to a boil.For the sauce, melt the butter in a small sautepan over medium heat. Add salt, pepper, and thesage leaf. Cook the butter until golden brown. Re-move from the heat and keep warm.Add the tortellini to the boiling water. Boil gen-tly for 5 minutes. Drain well and transfer towarmed serving plates. Grate fresh Parmesan ontop and sprinkle generously with black pepper.Spoon the sauce over the tortellini. Garnish withsage and serve.

PASTA DOUGHMakes about 3/4 pound (375 g)

1-1/2 cups (375 ml) all-purpose flour, plus morefor dusting4 large cage-free egg yolks1/2 teaspoon kosher salt1/2 teaspoon extra-virgin olive oil1 to 1-1/2 tablespoons water, plus more asneededIn a food processor, combine the flour, yolks,salt, oil and 1 tablespoon water. Process until adough forms. Pinch the dough: If it feels too dry,pulse in up to 1/2 tablespoon more water until amoist dough forms. Turn out onto a lightly flouredwork surface and knead by hand into a smoothball. Wrap in plastic wrap and rest at room tem-perature for 1 hour.Secure a pasta roller. Cut the dough in half andcover 1 piece with plastic. Set the rollers to thelargest opening. Flatten the uncovered dough intoa thick strip the width of the rollers. Dust lightlywith flour. Run the piece through the rollers. Foldit in thirds and run it through again. Repeat 2 or 3more times until smooth and elastic.Set the rollers to the next smaller opening; runthe strip through. Continue, using a smaller open-ing each time and dusting lightly with flour asnecessary, until you reach the next-to-smallest orsmallest opening. (As the strip gets longer, youmay need to cut it in half for easier handling,keeping unused dough covered.) Repeat with theremaining dough. Cover until ready to use.
