Monday – Wednesday 11AM - 9PM www.FigMtnBrew.com/SantaMaria @FigMtnBrewSM @FigMtnBrew EXPLORE THE BREWERY EXPLORE THE BREWERY FIGMTNBREW SM BREWERY FAQ Thursday – Sunday 11AM – 11PM 560 E Betteravia Rd Santa Maria CA 93454 (805) 694-8525 1 | MILLING We mill to crack the grain in half so that water can penetrate the endosperm. 6 | COOLING The settled wort is then cooled to fermentation temperature. 7 | FERMENTATION Yeast is added to the fermenter where it converts the malt sugars into alcohol and carbon dioxide. 8 | CONDITIONING The beer is aged or conditioned for a long period of time to smooth out the edges and develop its complexity. 9 | FILTRATION Some of our brews are coarsely filtered to remove yeast from solution and produce a bright, brilliantly clear beer. 10 | CARBONATION Carbon dioxide is gently bubbled through the bright beer and absorbed into solution, slowly carbonating the beer. 2 | MASHING Milled grain is mixed with hot water at a specific temperature to form the “mash”and activates the malt’s natural enzymes that break starches down into smaller, digestible sugars. 3 | RECIRCULATION After mashing, the “wort” is run out of the bottom of the mash through a screen and collected in an intermediate vessel called a “grant” and recirculated until it runs clear and glassy. 5 | BOILING & WHIRLPOOLING The wort is brought to a boil and hops are added at varying times for bittering, flavor and aroma. The wort is pumped into a circle for clarity. 4 | LAUTERING & SPARGING The wort is strained out of the mash (”lautered”) into the kettle. A hot water spray (”sparge”) on the grain rinses out a maximum amount of extract. MEET OUR BREWER MEET OUR BREWER Is all of the beer served here made in Buellton? We produce both year-round and specialty beers here and occasionally have specialty beers on tap from one of our other breweries. How many barrels can the Buellton brewery produce per day? We are in the process of transitioning from producing 60 barrels to 300 barrels a day. Where does all of Fig’s packaged beer come from? All of our bottled and canned beers are produced in our Buellton brewery and packaged by our cellar team. They also package our kegged beer for taprooms and retailers. Any time you buy beer from a retailer it comes directly from our main production brewery in Buellton. T H E B R E W I N G P R O C E S S A N D M O R E ! Mike Hastings fell in love with craft beer when he started home brewing in his small laundry room while attending Humboldt State. Realizing his call, he returned to school attending the American Brewers Guild and worked for Humboldt Brewing Co. post-college. Later Mike ventured to Snowshoe Brewing Co., a small brewpub in the Sierra Nevada where he built the Sonora brewery from the ground up. Soon Mike was Head Brewer of Snowshoe with two brewpub locations providing quality beers to the High Country for almost ten years. When the opportunity to purchase Snowshoe’s Sonora location arose, Mike founded The Lumber Yard Brewing Co. A couple years later, Mike and his wife Mindy moved to Harrisburg, PA to join the team at Appalachian Brewing Company where Mike was the Head Brewer and Quality Assurance Manager. While in Pennsylvania, Mike learned the East Coast-style of brewing, adding to his exhaustive brewing repertoire. Being a California boy at heart, Mike was thrilled to be able to move back to his home-state when he started working for Figueroa Mountain Brewing Company in December of 2012. Mike has been maintaining quality and consistency while taking Figueroa into the next realm of quality craft brews.
