Dear Shop Owners,

As we begin our third year at Moda University, we would like to welcome our new members and say thank you to our returning shops. We appreciate your input and support. New for the 2007-08 year is our Piece and Plenty Mystery Quilt Series. We asked each of the Moda designers to submit a basket block to be included in this mystery quilt. This series replaces the postcard blocks and bonus pat-terns from previous years. Piece and Plenty, as the tag line states, provides "What every quilter loves…fabric, food and friendship"! This year long program will feature a Moda designer each month. It is fun to guess which block belong to which designer. We will provide you, the shop, with kit packaging (15 pre-printed envelopes), a "Shop Helper" sheet, master copies of the cutting directions, the pattern and a recipe for each month. Constantly changing inventory gives a shop a fresh new face each time a customer visits. It is also a perfect opportunity to move some of your less loved fabrics. Directions for cutting and piecing the filler blocks for the Piece and Plenty Mystery Quilt will be included in each month's "master packet". This quilt is truly a mystery, as the final directions will not be available until the third semester. The basket block of the month and the filler blocks will not always appear in the same section of the quilt, so color selections will move all across the final quilt. The Irene Eggiman bars are a family favorite of ours. Irene Eggiman was a neighbor of ours. She always brought these bars to 4-H potluck functions and everyone loved them. Then as the each of the neighbor kids grew up and got married she would bake a pan of those bars in a new pan and give the bars, the pan and the recipe as a shower gift.

Salmon Cakes

2 eggs, slightly beaten1½ to 2 pounds salmon½ cup sliced green onions2 T. mayonnaise2 tsp. sweet chili sauce2 large potatoes¼ cup bread crumbs½ tsp. onion powder½ tsp salt and pepper2 tsp. lemon juice1½ tsp. dijon mustard1 ear of corn

Peel potatoes, cut into large pieces and microwave or steam until slightly soft. Flake potatoes apart with a fork, set aside. Clean corn and place in a hot, preheated frying pan (no oil). Cook on high, turning till kernels look roasted. Remove from heat and cut kernels from cob. Rinse salmon, place on a baking sheet and bake at 350 degrees for about 15 to 18 minutes. Remove from baking sheet and flake cooked salmon into bite size chunks.

Mix eggs, mayonnaise, sweet chili sauce, lemon juice and mustard together. Add onion powder, salt, pepper and bread crumbs, stirring thoroughly. Add salmon, green onions, potatoes and corn, tossing only enough to coat and mix final ingredients. Shape into 4" wide patties about 1" thick. (You can freeze patties at this point, then when you are ready to serve, thaw patties in re-frigerator for 2 to 4 hours and continue with recipe.) Dip patties into Japanese Panko Bread Crumbs (or any other bread crumbs you choose) to coat. Preheat frying pan with 2 to 3 T. olive oil. Place patties into hot oil and brown on each side (about 4 to 5 minutes each side). Serve with a salad.
