OUR HOME – The Adelaide Hills

Mount Lofty – the highest point in the Adelaide Hills – was named by Matthew Flinders when he circumnavigated the coastline of Australia in 1802. Settlers to the area soon followed from England,

Scotland, Wales, Ireland and Germany and many established villages such as Stirling, Crafers and Bridgewater. The cool, green park-like environment of the hills reminded them of home.

Arthur Hardy later planted the first vineyards in the Adelaide Hills right here at Mount Lofty House with Red Madeira. From there the Adelaide Hills Wine Region was born.

Jump forward to the 1970s and 1980s and enter a new group of pioneers including Brian Croser (Petaluma), Stephen George (Ashton Hills), Michael Hill Smith and Martin Shaw (Shaw & Smith) and Geoff Weaver. Over the next 30 years the region became known for its premium, cool-climate wines.

More recently it has become a mecca for small artisan winemakers keen to produce elegant, long lasting European style wines and push the boundaries to new heights. The Basket Ranges kinfolk

certainly smash those boundaries with a range of styles emerging from their corner of The Hills, such as minimal-intervention, natural and orange wines.

Head south to Gumeracha, Ashton and in to Piccadilly Valley and you’ll meet chardonnay fanatics and pinot-philes alike. Nebbiolo from Gumeracha is not to be dismissed either, but leap to the opposite end at Macclesfield and you’ll not only discover this grape in abundance surrounded by brilliant shiraz. We also mustn’t forget that Méthode Traditionelle Sparkling is truly alive and well throughout these hills.

Quite simply, our wine-folk are a passionate breed that hone their skills to achieve the very best that the Adelaide Hills has to offer!

Dine with us for a long story degustation and we will take you on a journey through the Adelaide Hills. From the exciting place that is The Basket Ranges, through emerging varieties that respect our rich

European heritage (hallo Grüner Veltliner!). We will honour a rich history of cool-climate Chardonnay and Pinot Noir right on our door step, Nebbiolo’s from north (Gumeracha) and south (Macclesfield),

that’s not to forget championing Syrah and Cabernets that are elegant and oh so tasty.

In South Australia, we are a parochial lot and can’t help being a little biased about what we do. As a result, we have carefully selected our list to provide a comparative of what we do here with the best of

our national and international wine regions. We’ll let you be the judge…

Painter, Frida Kahlo, was a Mexican self-portrait artist who was married to Diego Rivera and is still admired as a feminist icon. Two paintings emerged in 1939 'The Suicide of Dorothy Hale' and 'The Two Fridas'. This cocktail is believed to represent “unloved” and “loved” versions of Kahlo. Pisco, fresh lime, pomegranate syrup, and orange bitters.

In recent years Sake, Japan’s most singular contribution to the world of fine beverages, has assumed a permanent place in Western dining culture. Simultaneously, Japanese ingredients and cooking techniques have infiltrated Western kitchens. As

they have here, at Hardy’s Verandah Restaurant.

We would like to thank Matt Young of Black Market Sake for his sourcing of these unique, expressive and delicious Sake and offer this small artisanal selection for your delectation. We are also proud to present these Sake in bespoke serving ware

designed and made for us by Nick Mount, a local glass artist of world renown.

A Primer on Japanese Sake Brewing Terms

Shuzo Sake Brewery

Junmai 100% pure rice sake made without any additives such as ethyl alcohol, sugar or starches. It is Sake made from rice, water, yeast and koji-kin only.

Koji-kin A starch-breaking mould with the Latin name ‘Aspergillus Oryzae’ that coats the rice with a white, very fragrant outer layer that produces enzymes to convert the rice starch to sugar.

Melbourne based founders Yuta and Shar Kobayashi, Tōji Sake is the embodiment and love of all things Japanese. Born in Japan, Yuta fondly recalls time with his Ojiichan (grandfather) in Ibaraki. GROWERS

The House was founded in Avize by Arthur Agrapart at the end of 19th Century who was succeeded by his grandson in the late 1950’s. A small producer on 12 hectares, Agrapart grows mainly Chardonnay grapes on the chalky soils of the Côte des Blancs.

Andre Clouet Champagne is a small grower with 20 acres on prime sites in Bouzy and Ambonnay, which until recently was relatively unknown. The family has owned these vineyards since 1751, and they are now in the very able hands of Pierre and Francoise Santz-Clouet, and their winemaking son Jean-Francois.

Founded in 1930, this domain is considered the grandfather of the grower. The estate covers an area of 12ha, between 8ha in Grand Cru Ambonnay, 2ha in Premier Cru Vrigny on the Petite Montagne (all Pinot Meunier), 1ha in Verzenay (grand cru) and 1ha in Bouzy (grand cru), next door to Ambonnay. It is all grand cru except for the Vrigny fruit. The grape proportions are some 70% Pinot Noir and 30% Chardonnay, as well as the Pinot Meunier from Vrigny. It is run by Francis Egly who practices biodynamic and organic principals in his vineyards.

House of J. Lassalle was founded in 1942 in Chigny Les Roses, in the heart of the Montagne de Reims. In 1982 Jules died and his wife Olga and his daughter Chantal took over the reins of the house, his granddaughter Angeline joined them in 2006. The vineyards of J.Lassalle spread over 45 parcels of vines located in the villages of Chigny Les Roses, Ludes, Montbré, Puisieulx, Rilly La Montagne, Sermiers and Villers Allerand.

Champagne Larmandier-Bernier is one of the true stars of the Côte des Blancs. Both the Larmandier and Bernier families have had a long history in the Champagne region, dating back to the French revolution, but it was not until the marriage of Philippe Larmandier and Elisabeth Bernier in 1971 that Champagne Larmandier-Bernier was established. The small house today is directed by Pierre and Sophie Larmandier, who own just under fifteen hectares in some of the finest villages on the Côte des Blancs: Cramant, Chouilly, Oger and Avize (all Grand Crus), as well as in the fine premier cru village of Vertus.

Champagne Pierre Gimonnet & Fils was established in 1935, has holdings in both Premier and Grand Cru villages, and is located in the Premier Cru village of Cuis. Vouette et Sorbée only started releasing Champagnes about 10 years ago. Bertrand Gautherot used to sell grapes to other Champagne producers, but after some convincing by his friend Anselme Selosse, he started producing Champagne under his own name in 2001, with his first wine released in 2004.

One of the original grand marques, Ayala was founded in 1860 by Spanish aristocrat Edmond d’Ayala. Ayala is often described as ‘feminine’ in style. This is due to a higher percentage of Chardonnay in the blends; the purity that low dosage brings and fermentation in stainless steel tanks to retain freshness and pristine characters. Ayala has an enviable supply of Grand and Premier Cru fruit with an extremely high rating on the echelle de crus. Interestingly, Ayala’s haute couture dry blends are crafted by one of the few female cellar masters in Champagne, Caroline Latrive.

Located in sight just below our perch here on Mount Lofty, in the postcard perfect Piccadilly Valley is the Tiers Chardonnay Vineyard. A living South Australian viticulture icon and treasure.

First planted by Brian Croser in 1979 with further plantings in 1981 it remains one of the oldest and most favorably sited vineyards in the Adelaide Hills, consistently producing superb renditions of this, the premier white variety for the Hills, Chardonnay.

Applejack Vineyard is located in the Upper Yarra Valley, to the south-east of the traditional valley floor. The vineyard is located on a dramatic, north-east facing slope with closely planted vines. The wine is acid-driven, light and fragrant in style and has a sense of sleekness from fine pinot tannins.

Primavera Vineyard produces a pinot from the MV6 clone in the Upper Yarra Valley. This is the juicier of the Upper Valley pair and is enticingly fragrant, delivering a palate of satin smooth red fruits and spices.

Wombat Creek Vineyard is the highest altitude vineyard in the Yarra Valley. The underlying ferrous based volcanic soil and rock produce a distinctively soft yet long and firm palate. Loaded with sweet red berry fruits, spiked with green herbs and a touch of truffle/mushroom.

Mount Mary was one of the first vineyards planted in the resurgence of the Yarra Valley as a premium wine producing region. In the 1960’s John and Marli Middleton, driven by a passion for fine table wine, made many visits to Bordeaux and Burgundy and soon became hooked on premium French wines. As such, these pinots are driven to replicate those Burgundies that they fell in love with.

Chateauneuf du Pape, the region of France upon which Nine Popes is based, when translated to English means “Castle of the new Pope”, as it was the home to the alternate papacy in the 13th Century. But in many of the old languages the word “neuf” can mean both “nine” and “new”. Problem was, Charles’ French skills were a tad light on (non-existent!!) when taking inspiration for the name of this wine and he thought Chateauneuf du Pape meant home of the “Nine” Popes…

In 1964 the Barry’s purchased 70 acres of prime river flats from Duncan McRae Wood in the Armagh area of Clare. This property would go on to be the foundation of their red wine production. Jim Barry planted the 3,3 hectare Armagh Vineyard in 1968 with Shiraz grapes. It has since gone on to achieve extraordinary success and is regarded as one of Australia’s highest quality wines. The McRae Wood shiraz is a nod to Duncan McRae Wood and is considered The Armagh’s baby brother.

THE EMPEROR

Emperor Napoleon III requested a classification system for France's best Bordeaux wines in 1855 to be on display for visitors from around the world. The result was the Bordeaux Wine Official Classification of 1855 when Brokers from the wine industry

ranked the wines according to a château's reputation and trading price, which at that time was directly related to quality. Today producers are still ranked in importance from first to fifth growths (crus).
