Tampa Palms Golf& Country Club raises over $9,000 with their 5th Annual ClubCorp Charity Classic Golf Tournament & Swim-A-Thon. Over 95 Golfers and 30 swimmers signed up for this year’s events and helped raise funds for the Muscular Dystrophy Association, the ClubCorp Employee Care Foundation and the Rotary Club.

to Table Bringing local produce

back to the menu

It could be said that the now-dominant trend of serving cuisine based on locally-produced ingredients is the oldest dining practice in existence. After all, since ancient times, communal tables were adorned with produce culled from the farms, gardens, dairies, forests and streams of the immediate surroundings, as well as the various wines, beers, breads and cheeses laboriously hand-crafted by local talent. In the 20th century, export and import practices changed everything, and not for the better.

Now, restaurants across the U.S. are focusing on bringing local produce back to their tables. This produce is sourced from local farms, farmers markets, CSAs (community supported agriculture), and from local family-owned grocery stores. The accompanying trend – the use of organic products – means that chefs can personally inspect the sources of their ingredients and ensure that no pesticides, antibiotics or growth hormones are used. Local farmers can, in turn, be confident that their more expensive production techniques will pay off. Hence, farmers are incentivized to use various techniques such as homestead-style sustainable growing, free-range and grass-fed animals, air-cooled poultry facilities, heirloom seeds and, in general, any techniques that exhibit respect for the land, animals and workers.

The contemporary farm-to-table, or “locavore” movement first gained traction in Berkley, California, in 1971 with Alice Waters’ legendary Chez Panisse. This gourmet chef celebrated the immediacy and excitement of vegetables just out of the garden by utilizing a network of local suppliers for the exceptional cuisine. The result is a restaurant that changes menus daily based on what is most ripe and delicious off the farm and out of the sea. Waters’ suppliers are also early examples of sustainable and organic producers and have inspired farmers and chefs over the country to follow suit.

Thirty years later, Dan Barber opened Blue Hill in Greenwich Village, New York, a much lauded restaurant designed to showcase local food and wine from producers who respect artisanal techniques. A few years later, he took the locavore concept even further by opening Stone Barns Center for Food and Agriculture – a working four-season farm and educational center an hour’s drive from the city. Sourcing also from surrounding fields and pastures, as well as local farms, Blue Hill restaurant at Stone Barns highlights the bounty of the Hudson Valley. Guests are presented with a list of over a hundred ingredients, updated daily, which consist of the best local offerings.

Excellent new restaurants have begun to proliferate nationwide that follow in Waters’ and Barber’s footsteps. Chef Ryan Hardy of Montagna at the Little Nell, Aspen was thrilled to discover the abundance of outstanding raw ingredients in the Rockies, and determined that this would be the theme of his food. A master cheese

club Newsmaker as well as chef, Hardy works with local purveyors for specific needs, such as goat milk for his hand-made cheese. He took things a step further by purchasing a family farm from which came the restaurant’s port, lamb, chicken and eggs.

At North Pond Restaurant in Chicago, Chef Bruce Sherman is determined that his cuisine creates partnerships with the local community. He believes that people are much more interested in understanding where their food comes from, including lobster, eggs, and grass-fed beef. Sherman’s belief is reflected in the growth of gardening clubs throughout the country. Like the First Lady’s White House vegetable garden which provides exceptional produce for the Presidential table, locavore enthusiasts are forming fruitful partnerships by growing fruit, vegetables, flowers and herbs in communal land. Harvest becomes a shared celebration and prelude to a wonderful meal using the carefully grown ingredients – an echo of times past, and one hopes, a herald of the future of food.

Aquatics 2011 Charity Classic Swim A Thon We had 30 swimmers from Tampa Palms and Arbor Green TBAY swim teams participate this year, swim-ming for a total of over 50 miles and raising just over $2900! Thank you to all of the swimmers, parents, and supporters of these hard working kids as they swam their hearts out for a great cause! We had several swim-mers earning between $100-$200, and Grace Langton, our Tampa Palms swimmer and Club Member brought in a total of $1204 all on her own!

This has become a great tradition for our swimmers who work hard train-ing and competing all summer long. We look forward to your continued support of their extraordinary efforts in years to come.

High School Swimming & Peak Performance

By the time this column goes to print and makes it in to the hands of the Tampa Palms reader, the 2011 high school swim season will be approximately six weeks underway. For most teams with an established group of year round swimmers the “load” phase of aerobic/aerobic threshold training should be near-ing a transition point where event specialization and anaerobic/lactate training begin to surface. These young student athletes are no doubt feeling the effects of training on their bodies with their tired sore muscles reminding them daily, “I am alive!” This is just the start boys and girls. Most of you year round swimmers have aspirations to swim in college, an entirely different beast.

The two seasons high school and college simply do not compare. The standard high school season is approximately four months long (for the top competitors) whereas the college season is twice that, at a minimum. With the two seasons be-ing so different in length the anxious High School Junior or Senior, being driven by pressure (Coaches, parents, teachers, peers, college coaches) may feel overwhelmed at being able to keep the pace, to succeed, to be a lane leader, or a team captain. It is at this point that some may look for a little help.

There are performance enhancing products that are available in this day and age that may tempt our swimmers looking to maximize their performance. These products are available to everyone and have no age restrictions attached to purchase. They are pumped full of stimulants that for the high school swimmer can be very detrimental to their overall growth and development. Perhaps the worst ingredient is Geranamine (1,3-Dimethylamylamine), that has properties similar to amphetamines. “This psychoactive drug is not FDA approved due to lack of research. It

Please do not be fooled, these stimu-lant supplements are a form of pre-workout or competition doping. For those swimmers looking to compete in college, four of the six ingredients listed on a popular supplement are on the current NCAA banned substance list. “This is a problem rooted in both perception and reality, and it is a problem related to doping, athlete conduct, and the credibility of the sport,” says former Michigan State Athletic Director Bill Martin. Doping at any age calls into mind an entire set of moral and ethical com-ponents about competition that all should have informed knowledge of.

My professional opinion as a coach with an exercise science background is that no product will ever be able to duplicate the total endorphin rush of out touching your toughest competi-tor knowing that hard, consistent, training is what got you to the wall first. I have not nor will I ever en-dorse any form of stimulant into our training regime here at Tampa Palms. There simply is no substitute that falls into my level of high moral and ethi-cal integrity that will allow for an easy way out of hard training.

Team Tennis Junior League is an ex-cellent way to challenge and motivate

your junior to play tennis in a fun and supervised environment. League structure is arranged by skill level for beginners, intermediate and advanced levels. Our tennis professionals will determine team creation and player placement. Each team consists of 6-8 players. Our teams play against other teams in the area. The season lasts 6 weeks and matches are played on Sunday afternoons. Tampa Palms always has a good number of teams ranging from beginner to advanced teams participating. Those tough shots from the long rough.

When your ball finds the deep rough, the smart play almost

always is to take a higher-lofted club and either lay up or pitch the ball back into the fairway. Why you ask?

The shorter the club, the more descending the blow you’re going to have into the golf ball. The longer the club, the flatter the angle you’ll come into the ball. This is the main reason it’s so difficult to hit longer irons and fairway woods from the rough. Because of the shallower angle of attack, there’s too much rough coming into contact between

the clubhead and ball, making it difficult not only to get the ball airborne, but also to move it out of the rough.

The right play? Punch it out to a comfortable distance in the fairway, with a high-lofted iron or wedge.

On a side note, because the rough is a lousy place to hit long irons and fairway woods, it’s not an accident that hybrids are de-signed to be played with a steeper angle of descent. Try hitting your hybrid like a middle to short iron from the rough, and see if it helps you.

The Shops at Wiregrass has always allowed well behaved pets on leashes, but on

October 29th, the Shops goes to the dogs . .and cats . . and birds.

Animal Based Charities, Inc., is hosting their 3rd Dogtoberfest Pet Costume Contest and Adoption Event at the Shops with prizes including trophies and gift cards for 1st, 2nd, and 3rd place, in each of 6 different categories, so people and their pets can get creative.

The categories for the pets this year include Most Festive Costume, Cutest Costume, Scariest Costume, Best Costume Transforming Pet in to a different animal, Best Celebrity look-a-like , and the one that allows humans to be part of the festivities, Owner/Pet look a like. Registration begins at 10 a.m. in Center Court.

The event is shaping up to be THE PET EVENT of the year because

surrounding Center Court will be more than 50 different pet rescue groups with adoptable pets and pet-related vendors. While there will be a lot of dogs and puppies available for adoptions, with cat and kittens as well, there will be other less common pets available for adoption. “Its hard to announce what rescues will have available on the day of the event, but ferrets, guinea pigs and lizards will probably be available as well.

There will be Halloween themed pictures available for a donation for anyone in the costume contest or anyone who adopts a new family member. All proceeds raised go to the animal rescue organizations participating, to help more animals.

Whether you come out to enter your family pet in the costume contest, to find a new family pet, or just to be part of the festivities, it will be a great day for all. v

Thyroid disorders are very common: approximately 200 million people worldwide

are affected. Thyroid disease is more common in women and the risk in-creases with age. Underactive thyroid (hypothyroidism) may affect as many as 1 in 7 adults. The thyroid is a small, butterfly-shaped gland in the front of the neck. It produces hormones that play a part in many body processes, includ-ing growth and development, body temperature, water regulation and metabolism. Healthy thyroid function is important for energy, achieving and maintaining ideal weight and support-ing overall health and a general sense of vitality.

The most common screening test for thyroid disease is a TSH (thyroid stimulating hormone) level. Many people have symptoms of an underac-tive thyroid but are told that there is no problem with their thyroid because their TSH level is “normal.” However, there has been a significant change in what is now considered a normal TSH level: in 2003 the American As-sociation of Clinical Endocrinologists recommended a narrower range for a normal TSH level in order to more accurately diagnose hypothyroidism. Most labs have not adjusted their ranges so a TSH test read as “normal” may actually show hypothyroidism. People previously considered to have normal thyroid function now are correctly diagnosed and treated for an underactive thyroid.

Hypothyroidism:When the thyroid gland is underac-tive, the metabolism slows down and you may suffer from symptoms such as:

Fatigue, Weight gain, especially in the stomach, Constipation, Dry skin, Brittle nails, Hair loss, Cold intoler-ance/cold hands and feet, Menstrual irregularities/PMS/infertility/en-dometriosis, Headaches/migraines, Decreased memory and difficulty concentrating, Anxiety/panic attacksDepression, Low sexual desire, Muscle and joint pain, High cholesterol,Swollen appearance, and Insomnia

Thyroid metabolismThe thyroid predominantly produces thyroxine (T4) which is then con-verted by the liver to the active form of thyroid hormone, triiodothyro-nine (T3). Hypothyroidism may be caused by an inadequate production of T4, but difficulty converting T4 into T3 can also be responsible. Inadequate T4 production may be caused by nutrient deficiencies, autoimmune thyroid disease, and adrenal stress. Many factors affect the conversion of T4 to T3 including nutrient deficiencies, liver disease, medications, and stress.

It is important to have blood tests that provide a complete picture of thyroid function. We measure levels of T4 and T3 production, assess how well the thyroid uses T3 and check whether thyroid antibodies are present. All these measurements

are essential in choosing appropriate treatment.

Treating hypothyroidismMost physicians prescribe synthetic T4 for their hypothyroid patients. This may adequately treat some patients. However this approach is inappropriate for patients who have difficulty converting T4 to T3 or a high level of inactive T3. Most patients feel better when both T4 and T3 are replaced. At Tampa Rejuvena-tion our physicians assess your blood work and symptoms to create an individualized prescription which is then filled by our compounding pharmacy.

In addition to replacing thyroid hormone, it is important to provide nutrients and a diet which help the thyroid function optimally. Some people improve using only non-prescription interventions. Others need thyroid hormone temporarily, while others need long term thyroid replacement. Our physicians will make recommendations to improve

your thyroid function and help you feel your best.

The bottom line is that nutrition, stress management, and exercise are the keys to your well-being and optimal thyroid function is not likely without them. Beyond this founda-tion, you may still need thyroid hormone replacement, and this is something you should discuss with your healthcare provider. We can tell you that we’ve seen in our practice patients who improve using nonpre-scription thyroid interventions, but for some women, thyroid hormone replacement is absolutely crucial. In these cases we recommend alternative thyroid treatments as a complement, rather than a substitute, for thyroid medication

This exciting event will feature artists and crafters from all over Florida displaying their original works of pottery, jewelry, flowers, wood carvings and many other unique items. As in previous years, there will be vendors stimulating your senses with kettle corn, nuts, Caribbean cuisine, frozen treats and the all-time favorites such as hot dogs and hamburgers. There will befree face painting for the children.

The September meeting for TPWC featured guest speaker Elizabeth Healy Marques

speaking on the ‘ Am I Hungry?’ program for weight control. Ms. Marques discussed eating cycles, both

good and bad, and ways to approach food intake in a healthy manner. By asking 6 basic questions: “Why, When, What, How, How Much, and Where”, we can start to look at our food intake and learn to consume food in healthier (and weight losing) ways. She urged us to consider this more positive program, rather than a restrictive, rule driven typical diet. One of the basic ideas of the program is that restrictive diets lead to yo-yo weight loss and gain. By following their program, they assert that you can end the yo-yo cycle, and find a healthy balance. At the end of her presentation, she had us all try a small snack, with the focus on taking time to enjoy and savor each small piece, rather than a handful at a time. We are thrilled to announce that over 3000 grandparents/children came to school to enjoy a special movie night in their honor. Safety Patrols A very special congratulations to the following fifth grade students who have been selected to serve our school as Safety Patrols. Our officers for the first grading period are: Captain-Joshua Garcia, Lieutenant-Sadie Koch, Sergeants-Alex Haynes and Susan Morales. “Teaming Up Against Hunger”- Canned Food Drive will be held on October 24th-October 28th. Students may bring in canned food for the Salvation Army. Please share what you can with the needy in our community. Story Book Parade will be held on Monday, October 31st. Please encourage your child to dress up as their favorite book character and bring the book to the parade. We are asking that costumes be “child friendly”: no toy weapons, fake blood, or scary outfits will be allowed to participate in the parade. All parents who have completed a Volunteer Applications are welcome to come and watch the parade.

SAC Walk A Thon will be held on Friday, November 4th. The Walk A Thon is a wonderful way to promote fitness and provide financial support to our school’s computer lab. Thank you in advance for your support!

She will autograph the book Going Around the Sun: Some Planetary Fun, which she illustrated. Books will be available for pre-sale. On October 31st the kids will enjoy the annual Storybook Parade. Parents are invited to watch the parade in the courtyard at 8:30 a.m.

Baseball FundraiserTexas Roadhouse Fundraising Nights are back!!! For those of you who are new, the Freedom Baseball Team reserves nights at Texas Roadhouse Restaurant to help raise money for the program. According to statistics, children are likely to be injured from falling

accidents on Halloween night four times more than any other night. It stands to reason what with improperly fitted costumes, masks that block vision and hearing, and children crowded together, pushing, in a hurry to get to the next house. There are basic safety tips that can insure your family has a safe Halloween night.

But don’t wait until Halloween night to spring all these safety tips on

them. Because of the excitement of the night, the sugar they may have consumed before going out, and the natural ability of children to tune adults out, you may want to begin addressing this issue long before then. It’s easy to sneak in a safety tip here and there throughout the week before.

Costumes are one leading cause of accidents during this holiday, which can be alleviated by making sure the costume doesn’t drag the ground. By allowing the child to wear the costume before the big night, you

can check to see if it needs hemming. And above all else, check the label and make sure it’s either flame retardant or flame resistant. Polyester is generally the best choice of material for the costume since cotton has a tendency to burn quickly.

Other safety measures include making sure your child’s mask is easy to see out of and there are no sharp items being carried that can cause injury when falling. Have your child carry a flashlight, even if you’re going out with them, or one of the many glow sticks available. By going with children you are insuring their safety, but when you can’t, always make sure children travel in a group and there is someone old enough to supervise.

Shoes that match the costume are not always a good idea, especially if these shoes are hard to walk in, wobbly, or too elevated. A safe shoe to wear for tramping door to door on this dark and scary night would be tennis shoes. Maybe paint “Tinkerbelle’s or Buzz Lightyear’s white tennis shoes with sparkly glitter and other decorations.

Remind them about sharing and making sure they don’t crowd to the front of the line and push fellow trick-or-treaters. Shoving causes accidents. Keep the excitement down by not allowing them sugar treats before they leave the house. And above all else: No candy consumed until they get home to have it inspected.

For older children who will be trick-or-treating without parents, make sure there is a curfew set, or better yet, make sure those older children check in with you periodically so you know their safe.

What would Halloween be without carved pumpkins? But remember, a candle-lit pumpkin on the porch, or dangerously placed, can be hazardous. Place the lit pumpkin away from where the child will stand waiting for candy. Talk to your kids about the hazards of burning jack-o-lanterns and lit up decorations.

The North Tampa Arts League Artist of the Month for October is Carol

Northington. Carol was born in Dallas, Texas. She studied art and design at the University of North Texas and the University of Texas in Austin. She holds a bachelor’s degree in Business Management at Rutgers University.

Her latest series, on display at the New Tampa Regional Library reflects the awesome variety of life in the waters of the earth. In this series of paintings entitled Sea Creatures, the artist epitomizes the vivid colors hidden in the marine universe. One of her works entitled The Green Sea Turtle comes to life with exquisite detail. The artist uses a juxtaposition of intense colors

with a strong sense of texture. Another work on display is the Sea Dragon. This colorful work finds the dragon floating in the sea completely in sync with its watery environment...a testament to the awesome adaptations in natural world. Finally, Carol’s artistic rendition of the Sea Snail is an exercise in natural beauty and simplicity.

This series was inspired by the 2010 oil spill in the Gulf. Carol worked for a major oil company from which she retired. Destructive oil spills got her attention. Her words: “I am very sensitive and concerned about the millions of sea animals that live deep in the ocean that may be affected.”

Carol creates with acrylic paint using a variety of textures. She has also experimented with a variety of mediums and mixed media to create different textures. She has a primary focus on design and color with her abstracts and character with her portraits which she does in charcoal. Subject matter includes abstracts, people, animals, and flowers.

Carol has been President of the North Tampa Arts League since 2010. Her work has also been exhibited at the Carrollwood Cultural Center; The Great Frame Up; Beck Gallery; New Tampa Library where she has been artist of the Month (August 2007 & February 2009); Jimmie Keel Library; Exclusive Clientele Salon, Wine Harvest and The Jewelry Studio.

Artist’s Statement: “I bring a different interpretation and perspective in reproducing a subject. I want the viewer to have an emotional reaction to my art.” Carol expects that the specific responses of those who view this art will vary. She hopes that her creative passion continues to translate to those who appreciate the visual arts.

Girl Scouts Support Sister Girl Scouts in Japan In March, Girl Scouts of the USA encouraged girls to make origami cranes (Sadako) to send to their sister Girl Scouts in Japan as expressions of friendship after the devastating earthquake and tsunami on March 11, 2011. Girl Scout Senior Troop 457 (Wesley Chapel) took the call to heart and made 1,000 cranes to send to Girl Scouts in Japan. They started making the cranes in June and continued during each meeting over the summer. Local Girl Scout Wins National Rocket Contest FOr SeCONd CONSeCuTive Year Girl Scouts of West Central Florida (GSWCF) is thrilled to announce that Girl Scout Cadette Mari Hernandez (grade 6) of Tampa was one of six national winners of the year-long Reach for the Stars Rocket Contest, presented by the Helping Kids Reach for the Stars program.

Mari and her family will visit Kennedy Space Center (Canaveral, Fla.) this weekend, where she will have the opportunity to launch her rocket. When asked how she felt about winning, Mari said, “It’s pretty amazing – I didn’t expect to win. A girl who didn’t know anything about science just won a rocket contest!”

Mari built her winning rocket earlier this summer during the Minds for Design day camp, attended by more than 30 girls. Mari and Charnae Horton, another girl at the day camp, launched their rockets and landed closest the pre-designated target and were entered into the national competition. “One of Girl Scouts’ initiatives is STEM (science, technology, engineering and math), and we wanted to offer a STEM day camp that would give girls the opportunity to try new things,” said Patricia Hemenway, pathway collaborations manager, GSWCF. “Mari is a terrific role model for girls of all ages – whether or not they’re in Girl Scouting – to reach for the stars… anything is possible!” Mari is the second Girl Scout from west central Florida, and the third Girl Scout overall, to win this prestigious award. In 2010, Girl Scout Cadette Azriel Clary of Kissimmee (then in grade 7), won the top prize, and in 2009, Michelle Jorgensen of Colorado Springs, Colo., took home the award. In addition, Girl Scouts has a rich history with NASA – 22 career astronauts are Girl Scout alumnae. Girl Scouts recognizes the need for girls to pursue educational courses in STEM (science, technology, engineering, math) at an early age; have opportunities to participate in STEM activities; and the overall benefit to the workforce and economy resulting from girls and women pursuing STEM careers. As a council, GSWCF offers STEM programs throughout the year. v
