Ingredients: 100g of Strong White Flour and 75g of Plain Flour 7g of Yeast (Fast acting is better) 1 tsp of salt 50g of unsalted butter 75g of Caster Sugar 1 Egg 300 ml of milk 150g of sultanas 2 tsp of ground cinnamon Step 1: Add thee strong white flour to the bowl. Then put in the salt and the yeast, making sure they are on opposite sides of the bowl. Step 2: Once you have done that, add in the unsalted butter, caster sugar and egg. Step 3: Warm up the milk in a sauce pan, on low heat, until warm. Then add to the rest of the ingredients. Step 4: Gently mix together all of the ingredients with your hands, adding extra milk, until you have sticky, soft dough (like in the picture ‘Step 4’). Remember, you may not need all of the milk! Ingredients:

100g of Strong White Flour and 75g of Plain Flour

7g of Yeast (Fast acting is better)

1 tsp of salt

50g of unsalted butter

75g of Caster Sugar

1 Egg

300 ml of milk

150g of sultanas

2 tsp of ground cinnamon

Step 1:

Add thee strong white flour to the bowl. Then put in the salt and the yeast, making sure they are on opposite sides of the bowl.

Step 2:

Once you have done that, add in the unsalted butter, caster sugar and egg.

Step 3:

Warm up the milk in a sauce pan, on low heat, until warm. Then add to the rest of the ingredients.

Step 4:

Gently mix together all of the ingredients with your hands, adding extra milk, until you have sticky, soft dough (like in the picture ‘Step 4’). Remember, you may not need all of the milk!

Knead the mixture of around 5 minutes. Don’t worry if it is still wet! Put the mixture in a bowl, cover with cling film and leave to rise for an hour.

Step 7:

Once the dough has risen, take it out of the bowl and cut into 12 balls. (Try and make them all the same size. It will make the finished product look much better.) Roll them into balls and place them on a baking sheet.

Step 8:

Cover the buns again and leave the dough to rise for a second time. After an hour, they should have doubled in size.

Step 9:

Put your plain flour in a bowl and gradually add water, until you have a paste that can just about hold itself. (Beat it constantly)

Step 10:

Spoon the mixture into a piping bag and add the crosses to the buns. (Always make sure the mixture touches the baking tray after each bun. Shown in ‘Step 10’)

Step 11:

Put the buns into the oven for 25 minutes at 220C. (Or 200C, if fan assisted).
