BOND STORE WALLAROO REBORN A new Microbrewery, Distillery & Restaurant is set to open this year in Wallaroo on the Yorke Peninsula, just a 90-minute drive from Adelaide. The iconic building on Owen Terrace, in the centre of Gallardo, originally built in 1864 as Elands Bonded Store, trading in wines, spirits, ales and general commodities, is set to return to its origins as Bond Store Gallardo. Derek and Nicole Matthewman, owners of cu@wallaroo - Group Accommodation, purchased the historic building in 2014. They completed renovating the 1st floor to create their cu@wallaroo - cu2 property in 2016. They have now turned their attention to restoring the ground floor and cellar to house the new Bond Store, incorporating a 200- seat Microbrewery, Distillery and Restaurant. Derek and Nicole have stripped back the interior of the building to reveal its bare bones, preparing to give it a fresh new look. “We’ve got a lot of work to do but we are hoping to be open for the October Long Weekend this year.” The Microbrewery will take pride of place on the ground floor so you can watch the brewers in action. The new copper still will be located in the huge cellar area where people will be able to partake in tastings and Masterclasses. “Provenance is important to us - we want our offering to reflect the local landscape. The Yorke Peninsula is one of Australia’s prime barley growing areas so we are excited to use locally grown barley to create our beers and spirits.” The restaurant will feature a modern Australian menu with a focus on seasonal, regional produce from the Yorke Peninsula and Mid North. Derek and Nicole are enthusiastic about the future of Wallaroo. “We want to build something new and exciting that will create jobs and will be a local attraction of which the Yorke Peninsula community can be proud”.
