SELECTION:• Although green asparagus shoots are the most common color, other flavorful varieties include purple and white. Fresh
asparagus season runs from February through April, but asparagus may also be found year-round, frozen or canned.• Fresh asparagus shoots grow to be pencil-sized or larger, and can be found in the produce section in dark green, creamy
white, or violet-purple colors. Smaller-sized asparagus shoots are usually more tender than larger shoots. • Asparagus shoots should be firm, with tips that resemble cone shaped buds that are tightly compact and closed. Avoid
fresh asparagus when its tips are slimy.
FUN FACTS:• A member of the lily family, asparagus has been an important food and medicinal
source for more than 2,000 years. It was first cultivated as a food crop in Egyptian and Mediterranean areas.
• Asparagus must be planted three years in the ground before its shoots can mature!• The Roman Emperor Caesar Augustus was a connoisseur of asparagus and sent
fleets of ships throughout the empire to procure the best varieties. The coveted asparagus shoots were taken by the fastest runners up into the Alps so it could be frozen and eaten throughout the year.
• Asparagus makes for a great addition to salads and can be eaten raw. Toss it in with some baby spinach leaves, walnuts, and a bit of feta cheese for a great tasting salad.
STORAGE:
NUTRITION/HEALTH/WELLNESS:• One cup of asparagus contains only 20 calories per cup, while being low-fat and providing some protein.• Asparagus is not only plentiful in vitamins C, A, E, and K, but is also a good source
of folate, fiber, potassium. Folate/Folic acid contributes to healthy cell growth during pregnancy and can decrease the risk of spina bifida in offspring.
• Always wash and trim the bottoms of asparagus shoots to remove sand or hardened ends. You can also use a vegetable peeler to gently remove the outer skin to increase tenderness and to decrease cooking time.
• Inspect the shoots for any brown or soft spots. Wrap the freshly trimmed shoots in a paper towel and refrigerate to preserve freshness.
• You can also place the freshly trimmed ends in a small vase or glass, filled with about an inch of water to maintain hydration. Place in the refrigerator for no more than three days.

Ingredients: 4 servings
• 2 cups baby spinach leaves• 1 lb. asparagus• 4 oz. walnut halves• 1 pound strawberries• 2 tbsp. fresh cilantro, chopped (optional)• Juice from ½ lime• 2 tbsp. olive oil• 2 tbsp. of balsamic vinegar• ½ tsp. garlic powder
Directions:
1. Wash and dry the produce. Remove the hard end from each asparagus stalk (cutting about one inch from the end) and discard. Cut the remaining stalks into thirds. Place the cut asparagus in a microwave safe dish with 2 tbsp. of water. Cover and cook on high for 4 minutes.
2. While the asparagus is cooking, pour the spinach leaves in a large salad bowl. Add the walnuts. Then add the strawberries, which have had their tops removed and cut in halves. Add the zest of one whole lime to the salad mixture. Toss gently. Sprinkle with the chopped cilantro and toss again.
3. To prepare the salad dressing, whisk together the olive oil, vinegar, lime juice, and garlic powder in a large bowl.
4. Drain the water from the asparagus, then add the asparagus to the salad. Drizzle the salad dressing over the mixture and toss gently. Serve immediately.

Ingredients: 4 servings
• 4 boneless pork loin chops (4-6 oz. each, 1 inch thick)• 3-4 medium-sized potatoes, diced to equal 2 cups• 2 medium sweet potatoes, diced to equal 2 cups• 2 medium Granny Smith apples, cored and sliced
into quarters• 1½ pounds fresh asparagus, hard stalks removed,
and then cut into 1-inch pieces ½ tsp. cumin• 1 tsp. garlic powder• ½ tsp. onion powder• ½ tsp. salt• ¼ tsp. pepper• ¼ cup olive oil• A couple of dashes of cinnamon• Cooking spray
Directions: Preheat oven to 425 degrees F
1. Lightly spray with cooking spray or use a few drops of olive oil to lightly cover the pan. This will prevent sticking.
2. In a small bowl, mix the olive oil with cumin, garlic and onion powders, salt and pepper. Place the pork loins in one section of the baking dish. In sections dedicated to each item, place the sweet potatoes, potatoes, and asparagus in a single layer. Lightly coat the items on the pan with the olive oil mixture. Leave a space for the apple slices next to the pork.
3. Place the pan in the oven and bake for 10 minutes. Flip the pork and place the apples next to the pork so the juice can run into the apples. Sprinkle the apples lightly with cinnamon.
4. Return the pan back to the oven and cook for an additional 15-20 minutes or until the apples are tender and the pork reaches 145 degrees F, using a meat thermometer.
5. Remove the pan from the oven and let it rest for 5-10 minutes before serving.

• This technique is a great way to use up a variety of vegetables while placing it in the oven and leaving it to cook. Play with the meats, spices and veggies and use this for a quick dinner or to meal prep for a week’s worth of meals.
• Change up what is portioned out for lunches. For example, for this recipe you could use sweet potatoes and apples for one lunch, and potatoes and asparagus for others.

1. Pour the chicken broth in a large pot with 1½ - 10 oz. bags of frozen mixed vegetables (a ½ bag will not be used) and bring to a boil on the stove over medium high heat. (If you have bay leaves on-hand, then add two to the pot.)
2. While the broth and vegetables are simmering, dice the onion. 3. Place the chicken strips in microwave safe dish with 1 cup of
water and the diced onions. Cover and microwave on high for 2 minutes.
4. Remove the chicken from the microwave. Cut into bite-sized pieces, and add the chicken and the onions with liquid to the pot.
5. Add a third of a box of penne pasta to the pot of broth, chicken, and vegetables.
6. Turn down the heat to prevent the liquid from boiling over and simmer for about 8 minutes or until the pasta is tender. Season
to taste with pepper, garlic powder, and just a few dashes of dried basil.
7. Serve this hearty soup in a deep bowl alongside a piece of your favorite fresh fruit.
Notes:• In Step 3, The chicken won’t be fully cooked. It will finish when
added to the soup. • Freeze individual servings for a quick after school or late
evening snack or tote to work. • Keep a container in your freezer, and rather than throw out a
few bites of leftover veggies such as corn, green beans, lima beans, etc., put them in the container. Use this when container is full in Step 1., instead of the bag of vegetables.
Soups are a great way to use up leftovers and a very simple strategy to
add nutrient-dense, powerhouse foods like vegetables and whole grains to your meals. Believe it or not, there is a quick method for soup that makes a budget friendly, healthy meal that tastes like it simmered all day on the stove. All it takes is a little creativity, and keeping a few starter items on hand.
The healthiest soups are low-fat and low-sodium. The best way to keep fat and calories in check is to use low-fat meat (lean pork or beef) and poultry (skinless turkey or chicken) or drained and rinsed canned legumes/beans (kidney beans, black beans, etc.). Be sure to keep the sodium in check by using fresh or frozen vegetables that are not in a sauce and/or low-sodium, canned vegetables that have been drained and rinsed, and low-sodium broth/stock. Instead of using salt for seasoning, add a variety of flavors by experimenting with spice and herb combinations such as garlic, pepper, and rosemary, OR curry and garlic OR chili powder, pepper, cilantro, and garlic.
