Meat CaseGilled Apricot Skewers

Ingredients: 4 servings

• 1½ pounds thickly cut, boneless pork loin chops

• 8-12 fresh apricots, pitted and halved

• 1 tsp. salt

• 1 tsp. garlic powder• 1 tsp. freshly grated ginger

or ½ tsp. ginger powder• Juice of one lime

• 1 tbsp. honey• 2 tbsp. safflower oil• 1 tbsp. fresh basil, chopped

(optional)

Directions:

1. Cut the pork loin chops into 1 inch chunks and place the pieces in a medium-sized mixing bowl.

2. In another bowl, whisk together the oil, lime juice, garlic powder, ginger, and honey. Pour this mixture over the pork pieces and mix gently to coat all the pork. Cover and let marinade for 1-2 hours.

3. Soak 8 wooden skewers in water for at least 30 minutes.4. Begin preheating the grill.5. While the grill is coming to medium heat, assemble the skewers by alternating the

pork chunks with the apricot chunks. Save the marinade.6. Place the assembled skewers on the heated grill, baste with some of the

marinade, close the grill and cook for 4 minutes on one side. Uncover and then flip the skewers, quickly baste with the marinade (discard any remaining marinade), cover and cook for 3-5 minutes or when the pork is no longer pink throughout and/or reaches a temperature of 145 degrees F.

7. Remove the skewers from the grill and let the pork rest at least 3 minutes. Sprinkle with cut basil (optional) and serve 2 skewers per plate.

Produce StandFrozen Apricot Smoothie

Directions:

1. Place the banana slices on a baking sheet in a single layer and put it in the freezer for at least 45 minutes.

2. Place the flaxseed in a blender and mince until nearly ground. Add the almond milk and half of the frozen bananas. Use the pulse button to slowly break up the bananas. Hold for three seconds. Stop. Shake the container and repeat. Do this 5-6 times. Add the remaining banana slices and apricots. Pulse and blend until smooth.

3. Pour into 4 separate glasses and serve immediately.

• 2 very ripe bananas, sliced• 6 apricots, pitted and halved• 2 cups of almond milk

Zucchini Boats


Directions:

• 4 medium-sized zucchinis, about 7-9 inches long

• 1 lb. ground turkey or chicken

• ½ cup finely chopped mushroom• 1 ½ cup chunky spaghetti sauce• ¼ cup Parmesan cheese

• 1 tbsp. of fresh basil, thinly sliced (optional)

1. Preheat the oven to 350 degrees F.2. Trim the ends of each zucchini and discard. Cut each

zucchini in half lengthwise. Scoop out the pulp in the middle but be sure to leave about ⅓ inch in the shell. Place the pulp on a plate lined with paper towels.

3. In a medium-sized skillet, begin browning the ground meat over medium-high heat.

4. Turn down the heat and add the mushrooms and cook for about 2 minutes. Add the sauce.

5. Using another paper towel, gently press down on the zucchini pulp to remove most of the excess water add the pulp to the ground meat mixture.

6. Let the mixture cook for an additional 1-2 minutes, uncovered, over medium heat. Stir often.

7. Place the zucchini halves on a baking sheet that has been lightly coated with nonstick cooking spray.

8. Scoop the meat mixture into each boat.9. Bake uncovered for about 25 minutes. Evenly

distribute the Parmesan cheese over the boats and cook for an addition 3-5 minutes.

10. Remove from the oven and let sit for 5 minutes before serving. Sprinkle with freshly chopped basil, if desired.

11. Serve two halves per plate and consider serving alongside a piece of garlic bread.

These zucchini boats can be made in the kitchen or on the grill. Whichever way you make them, they’re an easy meal to use to teach your kids how to cook. You can turn these zucchini boats into actual boats by using a toothpick to help turn a thin slice of zucchini into a sail. Add more sauce for the water.
