Combine 1/4 cup San-J Thai Peanut Sauce, 2 Tbsp. toasted sesame oil and water. Cube tempeh and marinate in Thai Peanut mixture. Toss with remaining 1/4 cup San-J Thai Peanut Sauce and 2 Tbsp. sesame oil. Lightly steam snow peas and sauté mushrooms. Combine tempeh, rice, snow peas and mushrooms. Top with chopped peanuts if desired. Serves 6.

3 eggs, beaten1/2 cup cornstarch, plus1 lb. chicken thighs, boned and cubed

Mix eggs and cornstarch well. Add cornstarch until desired thickness. Place chicken in mixture and coat well. In a fry pan or wok, fry chicken until golden brown, stirring frequently until slightly crisp. Reduce heat. Slowly stir in sauce and coat evenly. Transfer to plate and serve hot. Serves 4.

Roasted Red Potatoes with Kalamata OlivesI N G R E D I E N T S

10 small to medium red potatoes1/2 stick butter, unsalted1 tsp. salt

D I R E C T I O N S

Slice potatoes as thinly as possible. Sprinkle with 1/4 tsp. each of the salt and pepper. Melt butter in a large pan on medium-high heat. As butter begins to brown, reduce heat. Add potatoes to the pan and stir. Cover potatoes and roast on medium heat for 20 minutes. Sprinkle with remaining salt and pepper. Add rosemary. Stir again, cover, and roast for an additional 20 minutes. The potatoes are done when they are almost slightly mashed but still retain some shape. Add olives, stir, re-cover and remove from heat. Let potatoes rest before serving. Serves 4.

4 Tbsp. butter 1/2 tsp. chopped garlic 1 medium red onion, chopped 1/4 lb. blue cheese, crumbled

Cook Pasta Valente per package directions. Drain and set aside. Sauté garlic and onions in butter for 2 minutes. Add crumbled blue cheese, cream cheese and artichokes. Stir in milk slowly. Add dill, salt and pepper. Serve over hot pasta. Serves 4 – 6.

Cover Recipe — Shrimp with Garlic and VegetablesI N G R E D I E N T S

15 garlic cloves, minced1 Tbsp. crushed red chile flakes1/2 cup olive oil1 zucchini, sliced1 red bell pepper, diced2 tomatoes, sliced1/2 cup white wine

D I R E C T I O N S

Sauté garlic and chile flakes in olive oil for 5 minutes over low heat. Add zucchini and bell pepper and sauté another 5 minutes. Add tomatoes and cook 2 more minutes. Add wine and simmer for 5 minutes. Add stock and bring to a boil. Add shrimp and cook for 2 minutes. Remove from heat. Squeeze in lime juice; add cilantro and salt. Serve immediately with crusty French bread. Serves 6. Recipe created by Chef Michael H. Flores.

Oil for frying 1 cup yellow corn meal1 cup flour2 tsp. salt1/2 tsp. black pepper2 tsp. garlic powder

D I R E C T I O N S

Heat oil to 375º F. Mix corn meal, flour, salt, black pepper, garlic and onion powder and cayenne pepper in a large bowl. In a separate bowl, mix eggs, buttermilk and hot sauce. Set aside. Soak fillets in egg mixture for at least 5 minutes. Remove fillets and shake off excess liquid. Dip in corn meal mixture and carefully place into hot oil. Fry until golden brown. Serve immediately. Serves 8 – 10.
