From the EditorThis issue of OTR marks the first Holiday

issue of the magazine ever published. It cov-ers a broad subject matter regarding the holi-days, from sourcing products to philanthropic pursuits. About 70 businesses are featured - some from every quadrant and corner in Whitchurch-Stouffville.

Writing a catalogue is far more difficult than writing 5 or 6 articles, for each business listing requires an initial solicitation (do you want in?), then fact checking, follow up, and massive amounts of formatting and layout work.

It is also a very rewarding process. To be reminded about the variety of things and places around us, to discover new things in our back-yard, and to learn about our neighbours are all positive revelations. David Tuley, Editor | [email protected]

Christmas generates a charitable mood in the public-at-large. Many charities struggle through the feast-or-famine cycle of giving; suffering through the

summer, ramping up in early winter. Giving is needed, regardless of the month.

There is much philanthropic activity in Whitchurch-Stouffville. Heck, the Town is built on philanthropy - there wouldn’t be a public building at 6240 Main Street, a Lemonville Community Centre, or a Markham-Stouffville Hospital (where it is located) if Arthur Latcham hadn’t been giving and generous. Two examples of local philan-thropy landed in my lap last week, both are from restaurant owners.

Recently, in the quest for content for the Holiday Edition, I reached out to over a hun-dred businesses asking about special sales, holiday events, promotions, etc. When I inquired at Coach House Pub, the owners came back with “In The spirit of giving, every year we do a toy drive for children that are less for-tunate. For the first week of December (1st-8th), as we put up our Christmas tree, bring in a toy

ness is donating a product in order to entice patrons to give away products.

Coach House is not the only business in the culinary arts that is involved in philan-thropy. Lorrie Ramsay, owner of Tipperary Taphouse, has been at it for a while. Lorrie is known widely in the community because she worked at several Stouffville restaurants over the years, before opening the Taphouse at 5892 Main Street in 2015. She totally reno-vated the restaurant (again) last year - it looks good inside.

I knew already that Lorrie had been involved in the Servers of Stouffville, which has raised money and support through golf tournaments and other means for local kids and charity organizations. She has donated thousands of dollars back into the community through her own charitable efforts, not to mention the hours she has given to worthy causes.

What I didn’t know, Lorrie has teamed up with long-time, charitable donor and local volunteer Michael Humphries to launch the

more formalized concept - the Tipperary Care Fund.

The Tipperary Care Fund assists children and young adults reach for their dreams in activities often overlooked, such as arts, music, dance, song, gymnastics, martial arts, craft and swimming. Lorrie and Mike believe that these activities are often forgotten due to the fundraising power of “big sport”. They want to help change this dynamic and make a difference to those looking to participate in these varied cultural activities.

The Tipperary Care Fund Golf Tournament is one of their most successful funds-gathering mechanisms. While this mission is well under way, Lorrie is also directing more attention to families. On Christmas Day, she is looking to bring in 60 people along with their families to the Tipperary Taphouse who need a place to have a sit-down dinner with trimmings. Santa may be dropping by as well.

I don’t know Lorrie very well. Her expres-sions are hard to read, but not because she’s holding back - she won’t hesitate to lay her cards down. The fault is mine; I have not spent enough time at the Taphouse.

Mike supplied bullet point notes for this article. He had asked Lorrie if he missed any-thing. She said, “Most importantly I could not have done any of it without my friends and supporters.”

MACAROONS“Beeton’s Book of Household Management” was published in 1861 when Mrs Beeton was only 25 yrs old. It was a huge success and remains in print.

Ingredients—1/2 lb. of sweet almonds, 1/2 lb. of sifted loaf sugar, the whites of 3 eggs, wafer-paper.

Mode—Blanch, skin, and dry the almonds, and pound them well with a little orange-flow-er water or plain water; then add to them the sifted sugar and the whites of the eggs, which should be beaten to a stiff froth, and mix all the ingredients well together. When the paste looks soft, drop it at equal distances from a bis-cuit- syringe on to sheets of wafer-paper; put a strip of almond on the top of each; strew some sugar over, and bake the macaroons in rather a slow oven, a light brown colour. When hard and set, they are done, and must not be allowed to get very brown, as that would spoil their appearance. If the cakes, when baked, appear heavy, add a little more white of egg, but let this always be well whisked before it is added to the other ingredients. We have given a recipe for making these cakes, but we think it almost or quite as economical to purchase such articles as these at a good confectioner’s. Timer-From 15 to 20 minutes, in a slow oven.

OYSTER SOUPThis recipe is from the 1881 “Bank Street Church’s Cookbook” contributed by Mrs. Thomas McKay. Her husband’s uncle was the main contractor involved in the construction of the Rideau Canal. Following the completion of the canal, McKay built mills at Rideau Falls, making him the founder of New Edinburgh, the original settlement of Ottawa. INGREDIENTS—1 qt. oysters, 2 cups water, butter-size of walnut, 1 t. flour, 1/4 t. salt, 1/4 t. pepper, 1 T. mushroom ketchup, 4 T. milk, 2 T. cream (or more).Pour cold water on the oysters. Put into colander over a bowl and drain fluids into it. Pour juice into 6 c. saucepan. Blend the butter and flour together. Mix in the salt, pepper, and mushroom ketchup. Add to broth in saucepan and gently bring to a boil. Remove saucepan from heat. Add oys-ters, then return to heat and allow to boil up for 1 minute only. Meantime, into a well-warmed soup tureen, add the milk and cream. Add boiling broth. Stir and serve.

SCOTCH SHORTBREADLucy Maud Montgomery was Famous for her Anne of Green Gables and Emily stories. “Aunt Maud’s Recipe Book” contained her love of cooking and her talent in the kitchen. Some of her biographies do not mention her cooking, or the fact that she published a cookbook.Although fruit sugar is called for in this recipe, Maud indicates that she prefers light brown sugar, so we have followed her preference. We baked a batch using bread flour and another using all purpose flour; there was no appreciable difiference in texture.1 c butter1/2 c light brown sugar, packed closely in cup2 c flour1 pinch salt

Cream butter till very light. Gradually work in sugar. Work in flour and salt gradually. Turn dough out on a lightly floured board and knead till it cracks. Press into ungreased tin 10 inches square. Prick surface all over with a fork and bake in a slow oven (275°F) about 25 minutes.We recommend a 9x13 inch pan and an increased baking time of 40 to 45 minutes.

CHRISTMAS CAKE“Beeton’s Book of Household Management”Ingredients—5 teacupfuls of flour, 1 tea-cupful of melted butter, 1 teacupful of cream, 1 teacupful of treacle, 1 teacupful of moist sugar, 2 eggs, ½ oz. of powdered ginger, ½ lb. of raisins, 1 teaspoonful of car-bonate of soda, 1 tablespoonful of vinegar.

Mode—Make the butter sufficiently warm to melt it, but do not allow it to oil; put the flour into a basin; add to it the sugar, ginger, and raisins, which should be stoned and cut into small pieces. When these dry ingredients are thoroughly mixed, stir in the butter, cream, treacle, and well-whisked eggs, and beat the mixture for a few minutes. Dissolve the soda in the vinegar, add it to the dough, and be par-ticular that these latter ingredients are well incorporated with the others; put the cake into a buttered mould or tin, place it in a moderate oven immediately, and bake it from 1 ¾ to 2 ¼ hours.

MRS. BEETON’S TRIFLE“Mrs. Beeton’s Christmas Menus” is a more modern book (1997) and the author presents her recipes as modern takes on Isabella Beeton’s menus.Plain whisked or creamed sponge cake, individual buns, or Madeira cake are ideal for this trifle.SERVES 64 slices of plain cake or individual cakes 6 almond macaroons 12 ratafias 175 ml/6 fl oz sherry 30-45 ml/2-3 tbsp brandy 60-90 ml/4-6 tbsp raspberry or strawberry jam grated rind of % lemon 25 g/1 oz flaked almonds 300 ml/ 1/2 pint double cream 30 ml/2 tbsp icing sugar candied and crystallized fruit and peel to decorate CUSTARD 25 g/1 oz cornflour 25 g/1 oz caster sugar 4 egg yolks 5 ml/1 tsp vanilla essence 600 ml/1 pint milk

Place the sponge cakes in a glass dish. Add the macaroons and ratafias, pressing them down gently. Pour about 50 ml / 2 fl oz of the sherry into a bowl and set it aside, then pour the rest over the biscuits and cake. Sprinkle with the brandy. Warm the jam in a small saucepan, then pour it evenly over the trifle base. Top with the lemon rind and almonds.

For the custard, mix the cornflour, caster sugar, egg yolks and vanilla essence to a smooth cream with a little of the milk. Heat the remain-ing milk until hot. Pour some of the milk on to the egg mixture, stirring, then pour the mix-ture back into the saucepan with the rest of the milk. Bring to the boil, stirring constantly, then lower the heat and simmer for 3 minutes. Pour the hot custard over the trifle base and cover the surface with dampened greaseproof paper. Set aside to cool.Add the cream and icing sugar to the reserved sherry and whip until the mix-ture stands in soft peaks. Swirl the cream over the top of the trifle and chill. Decorate with pieces of candied and crystallized fruit and peel before serving.

GRAPE & FENNEL FLATBREAD WITH BLUE CHEESEFrom the 10th Anniversary Holiday Edition of the Longo’s Experience Magazine (2014) is this classic “Wonderful California” recipe. Longo’s is located at 5769 Main Street.PREP 15 min, COOK 20 min, SERVES 165 tbsp Longo’s Extra Virgin Olive Oil, divided2 tbsp fine cornmeal700 g Longo’s Whole Wheat Pizza dough, room temp1/4 cup whole wheat flour1/2 fennel bulb, trimmed and very thinly slicedPinch salt and Fresh Ground Pepper1 tbsp coarsely chopped Fresh Rosemary1 cup California red seedless grapes, halved1 cup crumbled blue cheese, about 6 oz2 tbsp chopped fresh parsley or basilUSE 2 tbsp of the olive oil to grease large baking sheet then sprinkle with cornmeal. STRETCH dough on lightly floured surface into a 10x16-inch rectangle. Transfer to baking sheet and brush with 1 tbsp of the olive oil.TOSS fennel with remaining olive oil and sea-son with salt and pepper. Sprinkle dough with rosemary then top with the fennel mixture, grapes and blue cheese, gently pressing grapes into dough.BAKE in bottom 1/3 of preheated 450ºF oven for about 20 minutes until crust is golden brown and grapes are wrinkled. King Cole’s Duck Store is located at 15351 Warden Avenue.INGREDIENTS:6 eggs1 King Cole fully cooked Smoked duck breast3 English Muffins, split into 6 halvesKNORR® Hollandaise sauce or scratchSalt & Pepper to tastePaprika or Parsley (optional)Serves 6.DIRECTIONS:Score the skin of the duck breast (cross-hatch) and place skin-side down in a non-greased skillet. Heat on med-high for 10 minutes; skin should be crispy. Set aside and keep warm.Using an Egg Poacher, heat water and place eggs in the 6 holders. Simmer for 3-5 min-utes until eggs are soft-cooked, set aside/warm.Prepare Hollandaise sauce as directed.Assemble 6 English muffin halves. Slice duck breast into med-size slices. Place one egg and 3-4 slices of duck on each muffin. Add sauce, salt & pepper to taste. Garnish with parsley or paprika if desired.

APPLE GOAT CHEESE TOWER WITH AN APPLE CIDER REDUCTIONThis recipe was provided by Cutrara’s Kitchen, the host of Cooking Social Events. Cutrara’s is located at 77 Katherine Crescent.Ingredients1 bunch watercress3 Belgium endive3 gala apple4 oz goat cheese6 oz walnut pieces2 oz butter melted unsalted3 gala appledressing :2 cups apple cidersalt & pepper to taste2 oz extra virgin olive oilPROCEDURECut watercress stalks off just were the leaves begin. Discard stalks. Wash and spin watercress until it’s fluffy and dry. Set aside.Remove the first inch off the base of the endive and discard. Pull spears apart leav-ing them whole and set aside.DRESSING:Place the cider into a sauce pot and bring to a boil. Reduce on med- high heat to 4 oz of liquid skimming away any impurities. Place into a bowl and add olive oil and seasoning.APPLE TOWER:Core the apples with an apple corer. Using a mandolin, slice the apples with the skins on into 2/8th inch slices parallel to the core. Grill for 1 minute only then turn over and cook 1 minute longer. Place the slices onto a dinner plate to hold. Brush each slice with a little bit of butter, One side only.To build a tower, place 1 apple slice onto silicone papered baking sheet to form 6 bases. With your fingers place approx. 2 tsp worth of goat cheese into the center of the apple. Top with another slice fol-lowed with more cheese to form a second layer and then finally the last layer and a bit more cheese on top with a few walnuts pressed into the cheese.TO FINISH:Place the apple towers place into a 400 degree oven for 5-6 minutes just (to warm). Remove and place onto individual plates.

Scatter some of the endive and watercress around the tower decoratively then drizzle some of the dressing overtop of everything. Scatter a few more walnuts and serve.OVERVIEWThis ones finicky but all the heavy lifting can be done ahead of time ( assembling the towers and the cider reduction). The efforts worth it, You can also do this with pears or any type of apple other than mac-intosh. The cider reduction brings every-thing together. It’s important to use the best quality cider you can find to make this recipe really sing.

Each has a different offering, whether it be a fixed price regardless of size, hot apple cider, a camp fire, sleigh ride, roping and other dec-orations, etc. Where ever you decide to go, it

should prove to be a nice wintry activity for the family to partake in together. If you are con-sidering a cut tree, consider cutting a live one over buying one from a parking lot. First, it will be fresher; second, these local farms provide oxygen for us to breath, and roots to keep the Oak Ridges Moraine from blowing away (being sand); and last, habitat for our wildlife.

Holiday EventsKeeping Track of a Busy Calendar Description of Events

The amount of Holiday-related events is mind boggling for a community the size of Whitchurch-Stouffville. I was able to collect data regarding 28 events between November 22 - December 31. I probably missed another dozen, and will be hearing about it.

These range from Town organized events and church basement affairs, and business-led workshops to open houses. Expect lots of bake and craft sales, hot beverages, vintage themes and holiday treats.

Discerning adults should not miss another glorious bake sale at Joyous Light Candles Nov. 24-25, rare coffees and holiday wreath making on Dec.1, a special duck class Dec. 3, an artisan sale on Dec. 8-9, and finally, a film fest gem that scored 96% on the Tomatometer Dec. 13.

For families, the Town and the church events could be a focus. Everything that the W-S Museum and 19 on the Park produces around Christmas is exceptional. Springvale, EastRidge and St. Mark’s churches have orga-nized some good events as well.

The calendar on the left provides the dates; blue dots indicate a date with an event. Beginning on the right is a brief description for all these events. The onus is on you to investi-gate further to see if there is a fee for entry or if a reservation is required.

Lastly, two events in particular - Ladies Night Out and Santa Claus Parade are described in greater detail below. SnowBall Gala is high-lighted on Page 16 - it is a premier event. Enjoy and Happy Holidays!

On Thursday, November 22, Stouffville ladies will enjoy the attention of 12 independent Downtown merchants that have collaborated to offer extended hours and special sales.

For $25 a ticket, participants will start at the Smokery at 5:00pm for an appetizer and entre, and then head out to browse and shop at the merchants. A fabulous night of socializ-ing with old and new friends, topped off with hot chocolate and door prizes at Main Street Bakehouse at 9:00pm.

The Town of Whitchurch-Stouffville pres-ents the Santa Claus Parade from 6-8pm on Saturday, December 1. This will be the first evening parade in recent memory, which will bring Christmas magic with floats, entertain-ment, holiday music and a visit from Saint Nick himself.

The parade begins at Ninth Line, travels east on Main Street, to end at Park Drive.

Consider coming Downtown early for a pre-parade family dinner, but be cognizant that Main Street will be closing down before the parade. Pastaggio is offering Parade goers Veal parmigiana with veg and potatoes, a side,

Tightening the Cycle between Innovation and Expansion

Nested in the heart of the Oak Ridges Moraine, Twilight Forest has opened a bed an breakfast that offers a unique “luxury feel like cabin” experience to enjoy and discover the treasures that the Moraine has to offer all year round. The property is located very close to many of our Town’s amenities such as golf and mini-golf, recreational farms, wineries, restaurants, shops and all of the unique places that we have covered and coveted in previous OTR issues.

I had the opportunity to enjoy a coffee with Jorge de la Garza around the fire on the B&B’s patio and talk about his motivation to start this venture. In line with Jorge’s philosophy to “reinvent being in nature”, he would like to offer domestic and international guests and visitors a unique way of experiencing Canada’s natural beauty outside of the typical big city attractions.

Being immersed in the forest in the comfort of a cozy and inviting home does not happen every day. As a guest you get to enjoy the prop-erty trails and complimentary use of fatbikes, electric bikes and snow shoes, so you can explore the York Regional Forest and come back and relax by the fire or in a swim SPA. The warm breakfast is prepared using locally sourced ingredients accompanied by coffee or tea. Museum News

Residents are asked to remove basketball nets from the roads and boulevards and move them onto to private property. They are not permitted on any road or boulevard within the Town.

Nets also cannot overhang onto the road. These nets are a safety hazard to other residents/vehicles and interfere with waste collection and the Town winter maintenance operations. The Town may remove these nets at the owners expense if deemed necessary.

There is a 3-hour limit for on-street parking year-round. Winter Parking Restrictions take effect on December 1 and conclude March 31. There is no parking between 2 a.m. and 6 a.m. on neighbourhood streets.

Any vehicle without valid license plates parked on a street or in a Town parking lot, will be tagged and/or towed as an abandoned vehicle.

York Regional Police will receive information from Town By-law Officers when a vehicle is towed. During business hours, please contact our By-law Enforcement if you suspect your vehicle has been towed. After hours, please contact York Regional Police (non-emergencies only).

The Parking Permit Process

Residents that require parking for such things as driveway repairs and overnight guests, may obtain a free parking exemption from the Town. Residents may obtain up to 12 exemptions per year per license plate.

For longer parking needs you may purchase permits for facility parking lots that allow overnight parking.

On-street permits are not applicable during winter maintenance activities (i.e. snow flurries, snow clearing and sanding/salting operations). If a permit has been used during winter maintenance activities, the on-street permit becomes null and void. Any tickets issued will not be canceled.

Your municipal dog licence helps the Town facilitate the following:

• Issuing an identification tag for your pet• Help us reunite you and your dog quickly

when they are found. This reduces the stress a dog may experience from staying at a shelter for an extended period of time.

• When attending to your pet, licensing allows us to contact you in case of emergency so we can make vital decisions regarding the care of your pet.

• Licensed dogs receive a free ride home to reunite with their owners, should we or the public find a dog straying from their property wearing a tag.

TOWN HALL Pay in person at the Customer Service Centre using cash, cheque, Visa, Mastercard or debit card.

ONLINE Purchase and renew on our website at townofws.ca/dogtags (Visa and Mastercard only). Tags will be mailed to the address you specify in your registration.
