In June 1776, representatives of the 13 colonies then fight- ing in the revolutionary struggle weighed a resolution that would declare their independence from Great Britain. On July 2, the Continental Congress voted in favor of independence, and two days later its delegates adopted the Declaration of Independence, a historic document drafted by Thomas Jefferson. From 1776 until the present day, July 4 has been celebrated as the birth of American inde- pendence, with typical festivities ranging from fireworks, parades and concerts to more casual family gatherings and barbecues. Sun City Mesquite carries on this tradition by offering an All-American Celebra- tion Dinner beginning at 4 p.m. that includes fried chicken, baked beans, potato salad and rolls for only $6. Always fun is the water balloon toss at 5 p.m. followed by the golf chipping contest at the outdoor pool. Bingo at $5 rounds out the fes- tivities at the Pioneer Center starting at 6 p.m. But wait, there’s more to come! Take a short bus ride from the Pioneer Center for $5 to the Eureka Casino Resort for the fabulous fireworks display that begins after dark. The fireworks are free and are the Eureka’s gift to the community. More details will be posted in the Pioneer Press. Sign up at the concierge desk before July 1. Children and guests are welcome. On july 2, the Continental Congress voted in favor of independence, and two days later its delegates adopted the Declaration of Independence, a historic document drafted by Thomas jefferson. From 1776 until the present day, july 4 has been celebrated as the birth of American inde-pendence, with typical festivities ranging from fireworks, parades and concerts to more casual family gatherings and barbecues.

We have excellent seats in row 1 in center Section 5. $104 per person includes show and transportation. We will have some leisure time before the show at the wonderful Venetian Resort. We would like to thank Cones-

toga Golf Club and 1880 Grille for being the title sponsor for Armed Forces Day putting tour-nament. We appreciate eureka Casino and Hotel for providing prizes for tennis, bocce and bil-liards tournaments. Residents and businesses who sponsored a hole for our AFD putting tourna-ments greatly added to the funds being raised for Mesquite Veter-ans Center. Thank you!! We would also like to thank all our wonder-ful volunteers who helped with all facets of Armed Forces Day. It was a splendid success! Without your help we couldn’t do all these wonderful activities! 2013 Armed Forces Day Celebration

If you look in the dictionary for a defi-nition of “Active Adult” you’ll see this

picture of Rita and Stan Hermie. They are what living in a Sun City community is all about – they enjoy the many amenities here, contribute to the lifestyle in many ways and as they say, “It’s like being on vacation all the time.”Rita and Stan moved to SCM in janu-

ary, 2009 from Wheaton, located about 30 miles south of Chicago. They had first met while attending college at Illinois Wesleyan in Bloomington. They both graduated, Rita with a degree in educa-tion and Stan’s degree in economics.

Rita went to work for the Tupperware Corp. as a Manager, supervising sales in the area while Stan started with the Federal Deposit Insurance Corporation as a Bank examiner. Most of his work was in the Chicago area so he commuted by train the 30 miles from Wheaton, taking about an hour each way.Rita’s musical career started in the second grade with piano lessons. While their

two sons were growing, she gave piano lessons at their home. Last year she co-founded the “Sun City Sounds” that have entertained our residents at many events, like last month’s Armed Forces Day. She also teaches line dancing, participates with the “Treblemakers”, a local Mesquite womens’ musical group and is working to form a Mesquite Community Band that needs musicians of all kinds.Stan retired after 27 years with the FDIC and has been busy with many diverse

activities ever since. He uses our fitness center, plays pickleball (took 3rd place in mens’ doubles in the recent Senior Games.) They both enjoy hiking, traveling, cruising and of course, pickleball. They are also Saddlehorn Village Coordinators for the neighborhood Watch program.What a terrific couple, we’re sure glad you both live here!

Champagne Grapefruit Sorbet

This recipe is from The Greenbrier Hotel in White Sulphur Springs, West Virginia.

This is a wonderful not-too-sweet sorbet that derives its “kick” from the champagne and the tangy-sweet citrus flavor from the pink grapefruit. Light and refreshing to the palate, the sorbet is a delicious elegant finale to any meal.

Ingredients:3 cups good quality Champagne1 cup granulated sugar1 1/4 cups water1 cup pink grapefruit juice, freshly squeezed1/3 cup lemon juice, freshly squeezed Preparation:

Pop cork from champagne bottle 1 to 2 hours before using. Gradu-ally pour champagne, allowing for foaming, into a 2-quart container; set aside.

In a medium saucepan over me-dium heat, combine sugar and water. Stir until mixture comes to a boil; reduce heat to low and sim-mer 5 minutes. Remove from heat, cover, and let stand approximately 10 minutes or until cool.

To the champagne, add sugar syrup, grapefruit juice, and lemon juice (do not strain pulp from juic-es); stir until thoroughly blended. Ice Cream Maker - Transfer mixture to ice cream maker, pro-cess according to manufacturer’s instructions. Freezer Method - Pour into

container, cover, and place mix-ture in the freezer. When it is semi-solid, mash it up with a fork and refreeze again. When frozen, place in a food processor or blender and process until smooth. Cover and refreeze until serving time. Can be prepared 3 days in ad-vance. Cover and keep frozen.

Makes 8 to 10 serv-ings.

workers at Primex called her,” and aptly depicts the types of foods that Michelle offers: “sweet” for cakes and other confections, and “pea” for all kinds of custom-catered food-

stuffs, from cocktail-type fare to full dinners, to party taste treats.As the owner, proprieter, and sole worker bee, Michelle does not enjoy holidays off, but

gets her enjoyment from her work and happy customers.She caters parties big and small, and has done wedding receptions for up to 150 per-sons. Her specialty cakes are well-known for being beautiful as well as delicious.Michelle is also as happy to work with customers who are entertaining just five or six

people. IntelliSites, LLC and InSite Towers, LLC are pleased to announce that they received zoning approval from

the City of Mesquite to build a 100’ lattice tower (with 20’ windmill feature on top; 120’ overall height) within Sun City Mesquite. They received an overwhelming amount of support at the May 14th Council meeting with numer-ous residents who came to the hearing and spoke in sup-port of the project. In addition to those in attendance, the city officials reported receiving thirty-three emails from SCM residents that were unable to attend the conditional use hearing. Debbie DePompei, principal with IntelliSites stated “It is a pleasure to attend a hearing and have such an outpouring of support, which only confirms there is a definite need to improve wireless communications in this community! The residents have been actively call-

ing their individual carriers non-stop and now that we have approval from the city, I expect the homeowners to continue calling their providers until they are heard.” So, we would appreciate everyone’s assistance in continuing your calls to your providers so they will be anxious to get on board our new tower.
