Ingredients powder mix (for 340 g of end product):

• Cryogel 220/400 or 200/3 (1)

• Icing sugar• Dextrose• Skimmed milk powder• Whipping agent (2)

• Flavors, Colors

Liquid• Liquid cream (32-35% fat)• Whole milk (20-25°C)

About CRYOGEL®...

Cryogel® is a 100% pure gelatin which offers the same functionality as regular gelatin. It differentiates itself in the great simplification of preparation it enables: the powder mix can simply be dispersed and dissolved in cold liquid. As there is no hot dissolution step, you can save time and labor as well as energy and additional equipment.

Method of Preparation

• Pour whole milk and fresh cream in a tall bowl and add the powder mix

• Stir with an electric hand mixer at low speed for 30sec until all the powder is dispersed. Then, increase speed to high and whip for 2min until texture is light and fluffy.

• Spoon ice cream into a 1L plastic container and cover with lid

• Leave it in the freezer at least 5 hours before serving
