It’s your wedding day and you’re vegan…what do you do for cake? Cake is generally made from milk,eggs, and butter so where and what do you turn to? Maybe you don’t have to turn to any alternative.

Kristi Touchette has a recipe to make wedding cakes and justabout any cake with out the use of milk, eggs, and butter forvegans to enjoy. There was once a time in the early 1900′swhere milk and eggs were in short supply and her ancestorshad to look elsewhere for ingredients to make a cake. Thesecake recipes were called Depression Cake, War Cake, andWacky Cake due to the time frame of when they were createdand were handed down from earlier family generations.

Touchette, now a vegan for the last 6 years never thought this recipe would come in handy until herdiet changed. Through this recipe, Touchette developed Ahimsa Custom Cakes, her own custom vegancakes business. Based out of Maine, Krisiti is now the go to cake specialist for all different occasionsand the most notable fact is that only 1 or 2 percent of her customers are actually vegan. Kristi believesshe developed her customer base due in part to her interesting flavors such as “French Toast” and tothe part that weddings consist of many people and while the customer might not be vegan, there areattendees that are.

Kristi likes to put a lot of time and effort into her cakes and as a result, she won’t overbook herself inorder to do a good thorough job.
