Hello Again,
I may have wrongfully assumed I had a workable handle on the King’s English.
For sure, I’m not a wordsmith, just a country-speaking boy. However, I would never
say, “I ain’t got none,” or “If ’n I had my druthers,” or “I know I dasen’t speak liken
that.”
Now I find myself between a pile of rocks and a hard spot. First of all, the name
of our Florida campground is Vacation Inn Resort. Kind of a highfalutin name for
a campground, isn’t it?
Several of our neighbors live in their fifth wheel R.V.’s or motor homes year
around. They are known as full-timers. During the hot Florida summer season,
they head up North for a cooler vacation. More than a few end up in our
Adirondack, Mohawk Valley, Catskill Mountain area. Might be closer to heaven
than they will ever get.
Native Floridian complain a little about us Northerners, calling us “snow birds,”
hinting we should go home. You know, “Go home, Yank.” Being a gentler breed, we
Northerners do not complain about these transient Floridians when they visit
our piece of heaven on earth. As long as they arrive with good credit cards and/or
their pockets full of cash and have the good sense to go back South before they
go broke, well maybe nearly broke.
The point that I am attempting to make is—Most of those summer birds claim
to be Americans like us but speak a strange dialect. For example, in church the
parson is not the pastor but “ever” parson in a room. Other times the pastor is
a “pasture” where the livestock graze. You might overhear a lady say she uses
lord for fryen or baken, or excusing herself to take a five minute innermission to
attend the batroom.
Up home, we mow the grass on our lawn. Down here they claim it’s a lawn time
since they’ve had a cold drink. They might say, “less go to the movie ta-nite,” or
“it’s a shower thing a doctor will iron more than a ditch digger.”
A young man from up home was overheard bragging about
the girl who would soon become his bride. He said, “She’s
unna like any other girl I have ever met.” We all understood
what he said.
Last fall I met a lifetime resident of my old hometown
village of Middlefield. He asked, “Do you ever visit Mif-field
anymore?”
Now—maybe you can understand why I feel I am caught

between a pile of rocks and a hard spot. I want to fit in and sound like a native
storyteller—a good solid English-speaking boy and not a snow bird, a summer
bird, or even a lad from Mif-field. On the other hand, a good Irish boy, John F.
Kennedy, said the U.S. was in trouble with “Cubur” and he was the president. So
maybe you can learn to overlook my country-effort at being a storyteller. Like a
country preacher, I just chatter away until I can think of something to say.
A country preacher noticed a group of boys standing around a small stray dog.
“What are you boys up to?” he asked. “Telling lies,” said one of the boys. “The one
who tells the biggest lie gets the dog.” “Why, when I was your age,” the minister
said, “I never thought of telling a lie.” A bit crestfallen, the boys stared at the
dog. Finally one of them shrugged and said, “I guess he wins the dog.”
I called home yesterday and asked my lawyer friend, “Who will win the election?”
He answered, “That depends.” What would we do without legal opinions?
I was talking with a fellow one day. He said, “I don’t believe in the Bible.” Then I
asked, “Does that mean you read the Bible?” He answered, “Why would I want to
read it?” I believe the day will come when he will wish he had read John 3:16-18. As
your friend, I suggest you do read those three verses.
One of our southern city friends trying to get our goat referred to use as
“hillbillies” when we told him our hometown of Saint Johnsville has only one
traffic light.
He asked, “What do you and your hillbilly friends think of Daylight Savings
Time?” I explained that in St. Johnsville it stays light until it gets dark, so it
doesn’t make much difference.
About a month from now we will be crossing the Mason-Dixon line on the way
home. The dividing line between “You’s guys,” and “You all.”
Remember to say thank you to the advertisers in the Original Valley Pennysaver.
Without them, this little paper would not exist, and without you—their
customers—they would not exist either. One local hand washes another.
By phone, a couple of days ago, a friend said, “Fred, it’s
good to hear your voice.” Say “Hi” to your neighbors. They will
enjoy your voice. Better yet, invite them to go to Church
with you.

For years now, experts havebeen predicting that the key-board will replace longhand.The instruction of penman-ship in primary schools hasgreatly declined. Go back tothe middle of the last century,when longhand ruled person-al communication, and thestate-of the-art, the ballpointpen, was just catching on.
Prior to that, the fountainpen, which could hold a reser-voir of ink, was a pretty neatreplacement for the dip penthat had to be continuouslydipped in an ink well as onewrote.
With the use of dip pensand earlier writing instru-
ments (and even some foun-tain pens), excess ink had tobe soaked up from a letter.Blotting paper appeared inthe U.S. in the 1840s andslowly replaced the use ofblotting sand that would besprinkled on the freshlypenned page and then blown
off it. The sand was dispensedfrom a shaker like the oneshown here, which is ownedby Willis “Skip” Barshied Jr.
Fountain pens are still soldby companies like Montblanc,but today they are more of astatus symbol than a primarymeans of communication.

There will be one rabies vaccination clinic fordogs, cats, and ferrets in the month of March onSaturday, March 17, at the Mohawk TownBarn, Park Street, Fonda, 9 a.m. - noon. NewYork State Public Health Law requires that alldogs, cats and domestic ferrets shall have initialvaccinations administered against rabies nolater than 4 months of age and stay up to datewith re-vaccinations. Re-vaccinations arerequired one year later and a booster shot everythree years. It is important to have pets vacci-nated in a timely manner in order for the pet tobe considered protected against the virus. Pet
owners should bring proof of their pet’s lastrabies vaccination. This helps the veterinariandetermine whether the pet will receive a one orthree year vaccination; without it your pet willreceive a one-year vaccination only. To assurethe safety of other pets and people; dogs mustbe leashed; cats and ferrets must be containedin a pet carrier or box when attending the rabiesclinic. the PalatineSettlement Societyheld its annualAntique Show & Salein the ‘Great Hall’ atthe Arkell Museum inCanajoharie.
Twenty-five vendorsexhibited a wide vari-ety of antiques includ-ing jewelry, silver,crystal, quilts, books,postcards, paintings,furniture, early brassand iron.
An appraisal boothwas available where,for a small fee, sea-soned antique apprais-ers evaluated the valueof items brought in bythe public.
“This is one of ourmajor fundraisingevents for the restora-tion of the NellisTavern,” said DonnaReston. Reston, who isan antique dealer anda trustee of thePalatine SettlementSociety, is the ShowManager for the annu-
al event. “Six yearsago we started outholding the show atthe Benefit Club in St.Johnsville, but wegrew and it justbecame too small,”Reston said. “This isour second year hereat Arkell and it worksout very well. It is avery nice site andclose to the Thruway.”
Attendees camefrom far and wide tobrowse the sale — andsome local folks founditems that broughtback memories andeven reflected theirfamily history.
Walt Haig ofCanajoharie pur-chased an early1900’s photo ofemployees at theStewart & Bergenhardware store. “Thismay have one of myrelatives in it!” he saidof his find. “My GreatUncle Bill Hartmanworked there.” Haigsaid he might donatea copy of the photo to
the Friends of FortPlain, as his great-grandfather, who wasa professor of Latinand Greek, had livedin Fort Plain at 224Main St.
Skip Barshied ofPalatine was search-ing through postcardsfrom the early 1900s.“You never know whatyou might find inhere,” he stated —just before pulling oneout and reminiscingabout the lady whowrote it. Turns outshe was someone heknew when he wasquite young.
Robbie Halley of‘Robbie’s Cookies,LLC,’ Ravena, stoppedin to browse and evenbrought some of hisfamous, four-spice,gluten-free, all naturalcookies to share.Halley admitted hewas a long timeantique collector andhad owned an antiqueshop many years ago.
“This is the first timeI’ve been to thisshow,” he commentedas he examined apewter tankard atRuth Hess’ booth.
Hess had recentlymoved to Canajohariefrom RensselaerCounty. “I’ve been col-lecting antiques forev-er and this is my firstshow ever!” She saidexcitedly.
In addition to otheritems, Hess displayeda lovely collection ofvintage crystal.
All in all, accordingto Palatine SettlementSociety TreasurerSandy Nellis Lane,there were approxi-mately 300 folks thatattended the show,and about 30 whotook advantage of theantiques appraisers.“People were having agreat time socializing,”Lane reported. “Wewere very happy andNellis Tavern will bevery happy, too!”

Borrowers who areunderwater (the houseis worth less thanwhat’s due on it) butstill holding on will getcome help in the formof reduced debt, eitherfrom lowered interestrates or principalreduction. It’s thoughtthat 11 million bor-rowers owe more thantheir homes are worth,which means theyhaven’t been able tosell or refinance.

Ideally,banks won’t release allthe properties at once.
The programs fund-ed with the $25 billionsettlement are set torun for three years,but lenders are beinggiven incentives to actwithin the first year.
What to do if yourmortgage is in trouble:Call your lender. Askspecifically who isholding your note, aschanges might havebeen made whenloans ended up in var-ious secondary-mar-ket packages. Takethe names of thoseyou talk to. Ask whatspecific programs willbe available to helpyou. Ask for a timeframe and follow upweekly.

to rising gas prices,consumers who modi-fy their driving habitsand properly maintaintheir vehicles will getmore miles per gallon.The Car Care Councilrecommends the fol-lowing ways to drivesmart and save gasmoney:
• Observe the speedlimit. Gas mileagedecreases rapidlyabove 60 mph.
• Avoid excessiveidling. Idling gets zeromiles per gallon.Warming up the vehi-cle for one or two min-utes is sufficient.
• Avoid quick startsand stops. Aggressivedriving can lower gasmileage by 33 percenton the highway and 5percent in the city.
• Consolidate trips.Several short tripstaken from a cold startcan use twice as muchgas as one longermulti-purpose trip.
• Don’t haulunneeded items in thetrunk. An extra 100pounds in the trunkreduces fuel economyby 1 to 2 percent.
• Check the gas cap.Damaged, loose ormissing gas caps allowgas to vaporize intothe air.
• Replace dirty orclogged air filters onolder vehicles toimprove gas mileageby as much as 14 per-cent.
• Replace dirtyspark plugs, whichcan reduce mileage bytwo miles per gallon.
• Change oil regu-larly and gain another
mile per gallon.• Keep your car
properly tuned toimprove gas mileage
by an average of 4 per-cent.
• Keep tires properlyinflated and improve
gas mileage by 3 per-cent.

manufactured more than ahalf-million gallons of maplesyrup in 2011, the highestproduction rate in 64 years.Want to know what goes intomaking all that syrup? Findout at one of the sweetestevents of the season, the 17thannual Maple Weekend.
The event takes place overtwo weekends -- March 17-18and 24-25 2012 from 10am -4pm each day. From Buffaloto Albany, Rochester to Bing-hamton and Jamestown toPlattsburgh, more than 100 ofthe finest maple producersthroughout New York Statewill open their sugarhouses todemonstrate the making ofmaple products "from tree totable." In Western New York,almost 50 maple producerswill participate.
Maple Weekend is a family-oriented event, showcasingNew York maple producersand how they make some ofthe world's finest syrup and
related products. Admissionis free!
On Maple Weekend, visitorscan see all aspects of syrup-making, from the tapping ofthe trees for the sap, to theboiling of the sap into syrup.Some producers also demon-strate how maple syrup ismade into other products in-cluding maple cream, maplecotton candy and maple sugar.Most sugarhouses allow peo-ple to sample the products.Techniques of maple produc-
tion vary from producer toproducer. Some are state-of-the-art and some use tradi-tional methods, so the publicis encouraged to visit morethan one participating farm.Many producers offer a vari-ety of additional activities, in-cluding horse and wagonrides, snowshoeing, guidedwalks in the woods and kids'corners.
In conjunction with this an-nual event, New York’s finestmaple syrup will be the fea-
ture attraction at many all-you-can-eat pancake break-fasts. It’s the perfect way tostart your Maple Weekend ad-venture.
2011 was a very good yearfor New York State maplesyrup producers. Productionincreased 81% over 2010, thehighest levels since 1947.The USDA’s National Agri-cultural Statistics Service re-ports New York producedabout 20% of all the syrupmade in the US. New York maintains its num-
ber two ranking among maplesyrup producing states, with anearly six percent increase intaps from 2010. There weremore than two million taps inthe state. New York Statemaple syrup has an estab-lished reputation as some ofhighest quality syrup in theworld.
Maple Weekend Co-Founderand Chairman Greg Zimpfersays maple fans are ready forthe 2012 yield. “There’s al-
ways a high demand for deli-cious New York maple syrup,and lots of folks come to theevent every year for a sampleand to watch our demonstra-tions.”
From the first Maple Sundayin Wyoming County in themid 1990s to today’s state-wide Maple Weekend event,the goal remains the same --to give the public a first-handopportunity to see how mapleproducts are produced, fromtree to table, along with thechance to taste and purchasemaple products.

History of Maple Syrup ProductionWho would think of sticking
something in a maple tree andboiling the sap to make syrup?The Iroquois have an answerin this old legend. The storybegins on a day in earlyMarch. Chief Woksis hadthrown his tomahawk into anearby maple tree. The nextday, he needed the weapon forhunting and yanked it from thetree. The weather turnedwarm and the gash in themaple tree dripped sap into acontainer that was near thetrunk. That evening, thechief’s wife was heading to
the stream for water and foundthe container with sap andthought it was just like water.She tasted the liquid, found itto be sweet, and used it forcooking water. When Woksiscame home from hunting, hesmelled a wonderful scent – amaple aroma. The water hadboiled down to syrup and hadsweetened their meal withmaple. So, the legend says,the happy practice of maplesyrup production began! Sap is produced in Spring – it
flows from the roots to thebranches of the tree. But ear-
ly on in maple syrup produc-tion, getting to the sap was noteasy. Recorded accounts indi-cate an ax or some other sharpobject was used to chop agroove into a tree to releasesap. But producers found the“ax method” damaged treesand contaminated the sap infuture years. So, they began todrill holes into the trees a fewdays before the sap was ex-pected to start running. Pro-ducers then collected the sapin buckets hung from woodenspouts called spiles. Original-ly, spiles were made from hol-
lowed out sumac branches, butlater were fashioned out ofmetal. Spiles were removedafter the sap stopped flowingto allow the tree to heal.
While the sap flowed, buck-ets were checked daily tomake sure there was no over-flow. Full buckets were emp-tied into barrels and hauledthrough the woods (also calledthe sugar bush) by horsedrawn wagons.
Not much has changed overthe years – some large scalemaple producers continue tocollect sap in buckets – a time
consuming and hard job. Butby using buckets, maples pro-ducers can easily recognizegood sap-producing trees.And today, the equipment is ofmuch higher quality.
Turning sap into syrup in-volves evaporation – watermust be removed to produce amore concentrated sugar solu-tion. Early methods includedusing hot rocks in hollowedout logs to speed evaporation.Later, metal containers wereused over open fires. But pro-
ducers discovered that boilingsap in a single kettle often re-sulted in a darker, lower quali-ty syrup. Using a series ofkettles produced a highergrade of syrup. Modern evap-orators evolved from that openkettle system.It still takes approximately 43
gallons of sap to make just onegallon of maple syrup. Sapbecomes syrup when the sugarconcentration reaches about67%.
Spicy Maple Glazed Pork ChopsServes 4 – 8• 4 – 8 pork chops
• 1 1/2 cups Pure New York State Maple Syrup• 1/2 cup white vinegar• 1/4 cup horseradish• 2 tablespoons ancho chilepowder
Preheat oven to 400° F.
Mix the maple syrup, horse-radish and chile powder well.
Sear the pork chops on bothsides then place in a bakingdish. Set aside half of theglaze for finishing.
Baste the glaze over thechops and continue basting
while the chops finish cook-ing.
Pour the reserved glaze overthe chops just before serving.
Visitors watch howmaple syrup was
made forhundreds of years.
