Yes, Vail is know for its ridiculously fabulousskiing and après ski locales, but during thesummer and fall, Vail becomes a charming,quite destination where chefs experiment withthe delectable fruits and vegetables that arein season.

Check into the gorgeous and centrally-located Four Seasons Resort. The resort opened inDecember 2010 and is just steps away from Vail Mountain and in the heart of Vail Village. Just across the street from the Four Seasons Resort is Kelly Liken restaurant. It’s awards andaccolades include those from the James Beard foundation, Wine Enthusiast, Wine Spectator, andTaste of Vail. Kelly Liken is one of Colorado's most promising and influential young chefs. Hermenu reflects the incredible bounty of Colorado and a reverence for the seasons. She explains,"Colorado has an amazing selection of ingredients you can't get at the local farmer's marketincluding Bison, Elk, wild porcini mushrooms grown on the local hillsides, or turnips and potatoesgrown at 8,300 feet above sea level, that are truly divine."

For an absolutely decadent afternoon, go on a culinary cruise with bicycles. First, rent cruisersfrom Christy Sports. Then, head to Lionshead for the first stop at The Vail Chophouse. Forgirlfriends who love seafood, the Chophouse Cold Seafood Tower is a must. Don’t forget thebloody Mary with homemade bacon and chilled prawn. Make the second stop at Sweet Basil,which is a Vail icon and hangout for over 20 years. There, the House Cut Fries with Truffle andParmesan and Black Truffle Deviled Eggs, and Dill Whipped Truffle Ricotta Toast are perfectappetizers to share. For your final stop, head back to the Four Seasons and get a table outside atFlame. For a little pick-up, try the Chilled Cumber and Peach Soup. And if there is still room formore, definitely order the Rocky Mountain Elk Corn Dogs. They are itty bitty, so feel no guilt.

As a guest of the Four Seasons Resort, you have access to their luxurious spa. Enjoy acomplementary afternoon in the hot tub, sauna, and stream room. Or better yet, get a signaturetreatment.

That night, try dinner at Larkspur. Start with Golden Potato Gnocchi with meyer lemon, pistachio,and parsley oil. Dinner favorites include: Almond Crusted Arctic Char, Rocky Junior Free-rangeChicken, and Veal Scaloppini. The passion and care that Thomas Salamunovich, Rich Hinojosa,Allana Smith and pastry chef Mark Metzger put into each dish is remarkable. If you love dessert –then this is the place to splurge with the Brooklyn Blackout Cake (fox’s u-bet froth, fudgesiclesorbet), Saigon Cinnamon Doughnuts, or Jumpin’ Good Goat Cheesecake with boozy cherries,peach sorbet, and shortbread.

After all that incredible cuisine, the best thing to do the next day is get active. Some of the localfavorites are:

Visit the Colorado Ski Museum. Located on the 3rd level of the Vail Village parkingstructure adjacent to the famous Covered Bridge. The museum is a wonderfulopportunity to learn more about topics like the Winter Olympics, the history of Vail, andthe 10th Mountain Division.Rent a bike and explore along the Vail Recreation Path, which runs from East Vail toWest Vail providing 15 miles of trail surrounded by 350,000 acres of national forest.Visit the Vail Nature Center nestled along the banks of the Gore Creek in the heart ofVail. The Vail Nature Center is a hidden gem and must-see for visitors to the area.Enjoy the highest botanical gardens in the world – the Betty Ford Alpine Gardens -with a unique collection of alpine, sub-alpine and other mountain plants and flowers.The gardens are named after former First Lady Betty Ford.

At Elway's restaurant, Chef de Cuisine Shawn Cubberley and Sous Chef Justin LaCapria arecooking up a storm with the seasonal, local ingredients. Heirloom Tomatoes and Fresh MozzarellaSalad and Organic-Sustainable Farm-Raised Salmon are two of their signature dishes.

Enjoy the long days and relax at one of the countless cozy restaurants in the village with yourgirlfriends. Walk the farmer’s market and shop at the many high-end boutiques in town. Spend anafternoon hiking the many trails or just relaxing by the pool. Regardless of what you want to do –Vail has it!
