Pork Production Sets Record High in 2004
Red meat production for the United States totaled 45.6 billion pounds in 2004, 2 percent below lastyear. Red meat includes beef, veal, pork, and lamb and mutton. Red meat production in commercialplants totaled 45.4 billion pounds. On farm production totaled 136 million pounds.
Beef production, at 24.7 billion pounds, was 6 percent below the previous year. Veal productiontotaled 176 million pounds, down 13 percent from last year, and set a new record low. Porkproduction, at 20.5 billion pounds, was 3 percent above last year, setting a new record high. Lamb andmutton production totaled 199 million pounds, falling 3 percent below the previous record low set ayear ago.
Commercial cattle slaughter during 2004 totaled 32.7 million head, down 8 percent from 2003, withfederal inspection comprising 98.2 percent of the total. The average live weight was 1,240 pounds, up 9 pounds from a year ago. Steers comprised 50.4 percent of the total federally inspected slaughter,heifers 32.2 percent, dairy cows 7.3 percent, other cows 8.4 percent, and bulls 1.7 percent.
Commercial calf slaughter totaled 842,400 head, down 16 percent from a year ago with 97.7 percentunder federal inspection. The average live weight was 330 pounds, up 12 pounds from a year earlier.
Commercial hog slaughter totaled 103 million head, up 3 percent from 2003 with 98.9 percent of thehogs slaughtered under federal inspection. The average live weight was up 1 pound from last year, at267 pounds. Barrows and gilts comprised 96.6 percent of the total federally inspected slaughter.
Commercial sheep and lamb slaughter, at 2.84 million head, was down 5 percent from 2003 with94.3 percent comprised by federal inspection. The average live weight was up 2 pounds from 2003 at136 pounds.
There were 825 slaughtering plants under federal inspection on January 1, 2005 compared with 855 lastyear. Of these, 689 slaughtered at least one head of cattle during 2004 with 13 slaughtering almost 52 percent of the total cattle killed. Hogs were slaughtered at 664 plants, with 13 accounting for slightlyover 58 percent of the total. Likewise, 13 of the 234 plants that slaughtered calves accounted for 83 percent of the total and 4 of the 500 plants that slaughtered sheep or lambs in 2004 comprised about60 percent of the total head.
Iowa, Kansas, Nebraska, and Texas accounted for almost 52 percent of the United States commercial redmeat production in 2004, similar to 2003.

Livestock Slaughter Estimates
Data Sources: Primary data for the commercial livestock slaughter estimates are obtained fromelectronic reports completed by inspectors from the Food Safety and Inspection Service (FSIS),USDA, which provide actual counts of animals slaughtered in Federally Inspected (FI) plants. These counts are combined with data from State-administered Non-Federally Inspected (NFI)slaughter plants to derive total commercial slaughter estimates. Over 95 percent of the totalU.S. slaughter for any species is under FI. Number of head slaughtered daily under FI arereported by species and class. Number animals condemned and total live and dressed weightsare also given.
There are 825 plants in the U.S. operating under Federal Inspection and over 2,100 plants underState inspection. Slaughter from State-inspected Talmedge-Aiken plants is included in FI totals(see Types of Plants, page 98). To prevent duplication in reporting between NFI and FI plantsand assure all FI plants are included, certificates prepared by FSIS identifying operating statusare constantly monitored.
Revision Policy: Revisions are generally the result of late or corrected data and are less thanone-half of 1 percent. Revisions for the previous month and the year-to-date totals are noted ineach monthly release by an (*) or a footnote. Final data are published in the annual summary.
Procedures and Reliability: Individual inspectors may be contacted by telephone if reports arenot received by NASS in time for summarization. This assures that all plants slaughtering alarge number of head or several species are accounted for each week.
All head kill data are tabulated on a weekly basis approximately two weeks after the kill week. A computer edit compares each plant's data with the historical data for that plant. The editprovides a missing reports listing for follow-up telephone contact and imputes missing weightdata. In addition, data are checked for unusual values for species, class, head kill, and pattern ofkill, generally based on each plant's past operating profile.
If no report is received electronically or other means, data for plants slaughtering fewer than 50total head weekly of only one species are imputed. Imputation of live and dressed weights mayalso be necessary on partially completed forms for any plant. The imputation is also based onthe history of each respective plant and represents the recent operating characteristics until finaldata are tabulated. Imputed head kill for missing plants usually is less than 0.5 percent of theU.S. head kill totals. Imputation for live and dressed weight data for cattle is usually less than10 percent and for hogs about 7 percent. The imputation for calves and sheep is more frequentand variable.
Average live and dressed weights and dressing percentages by State are compared with theprevious week as an additional check. Fluctuations are frequently the result of plantspermanently or temporarily closing and a shift in the species reported.
FI data are summarized weekly and accumulated to a monthly total for this release, while NFIdata are summarized monthly only. These weekly totals are published by USDA's AgriculturalMarketing Service (AMS) in Livestock, Meat, Wool Market News, Weekly Summary, andStatistics.

Livestock slaughter estimates are based on a census of operating plants and therefore, have nosampling error. However, they may be subject to errors such as omissions, duplications andmistakes in reporting, recording and processing the data. These errors are minimized throughrigid quality controls in the edit and summarization process, and a careful review of all reporteddata for consistency and reasonableness.
No data are published, unless permission is granted, if less than three plants slaughter a speciesin a State or if one plant has 60 percent or more of the total commercial or FI slaughter for aspecies or class. If not published, these data are included in U.S. totals. A review of the data ismade annually to determine if publishable.
Types of Plants
There are generally four types of slaughtering plants.
(1) Federally Inspected (FI) Plants: Plants that transport meat interstate must employfederal inspectors to assure compliance with USDA standards. Any State whosecommercial plants operate entirely under federal inspection may still have custom-exempt establishments for which NFI estimates are made.
(2) Talmedge-Aiken (TA) Plants: Slaughter plants in which USDA is responsible forinspection. However, federal inspection is carried out by State employees. These plantsare considered to be federally inspected.
(3) Non-Federally Inspected (NFI) Plants: Plants which sell and transport only intrastate. State inspectors assure compliance with individual State standards for these NFI plants. Mobile slaughtering units are excluded and are considered farm slaughter.
(4) Custom-Exempt Plants: Plants that do not sell meat but operate on a custom basis onlyare custom-exempt. The animals and meat are not inspected, but the facilities must meethealth standards. These are considered NFI plants and head kill is included in NFI totals.

Terms and Definitions
Commercial Production: Includes slaughter and meat production in federally inspected andother plants, but excludes animals slaughtered on farms.
Dressed Weight: The weight of a chilled animal carcass. Beef with kidney knob in; veal withhide off; lamb and mutton with pluck out; pork with leaf fat and kidneys out, jowls on and headoff.
Dressing Percent: Usually expressed as a percentage yield of chilled carcass in relation to theweight of the live animal on hoof. For example, a live hog that weighed 200 pounds on hoofand yielded a carcass weighing 140 pounds would have a dressing percentage of 70.
Food and Meat Inspection: Includes examination, checking, or testing of a carcass and/ormeat against established government standards and involves checking the facility forcleanliness, health of animals, or parts of animals and quality of the meat produced.
Live Weight: The gross weight of a live animal when received at the slaughter plant.
Plant, Slaughter: An establishment where animals are killed and butchered.
Red Meat: Red meat production is the carcass weight after slaughter including beef, veal, pork,and lamb and mutton. It is derived using the number of head times average dressed weight forFI and NFI separately. FI head kill must be adjusted for condemnations using the factor derivedfrom the FSIS inspection reports.
The FI meat production formula is (FI head kill) X (1 - condemnation factor) X (average dressedweight) = FI red meat production. The condemnation factor is the number of animalscondemned as a percentage of the total kill. It has been fairly stable for the last five years;running about 1.90 head per 100 head for calves, .5 per 100 for cattle, .40 per 100 for hogs and.20 per 100 for sheep. The NFI meat production formula is (NFI head kill) X (live weight) X (FIdressing percentage) = NFI red meat production.
Slaughter: Killing and butchering of animals primarily for food.
Slaughter, Farm: Animals slaughtered on farms primarily for home consumption. Excludescustom slaughter for farmers at commercial establishments, but includes mobile slaughtering onfarms. These estimates appear only in the annual slaughter release.
Wholesome Meat Act: Legislation that specifies that all meat produced for sale in the U.S.must be inspected. Meat that is transported interstate must be inspected in compliance withFederal (USDA) Standards.
