Modern CookingThis cooking class features well-presented, restaurant-style cooking that can be replicated in your own kitchen. Your teacher is Chef Jose Gonzalez, who has been sharing his extensive culi-nary expertise for more than 22 years. A new menu each session, these meals are creative without being time-consuming. The class is a mix of presentation and hands-on work. This class fills up quickly, register early. Class is limited to 12 students.

Wine Appreciation Wine TastingAn exploration into three of the most popular white wine varietals and four of the most popular reds, from different parts of the world. The com-parison and contrast of the same grape from different sources will give students the basic knowl-edge to be able to choose wines from a wine list or at a wine shop with confidence. A materials fee of $30, all to be spent on wines, is payable to the instructor the first night of class. The last class will be a practical/social session. Classes are held at Shelton High School. Upon completion of 21 credits of approved instruction, students receive a Valley Regional Adult High School Diploma.

Fly Tying Get ready for the season! This class is designed for the new or novice fly-tyer. Students will learn basic fly tying techniques and the use of many common fly tying materials while creating several different types of flies. Fly patterns to be taught during the class will include nymphs, woolly-buggers, bucktail stream-er, wet fly, terrestrial and dry fly. Students that do not already have basic fly-tying equipment are urged not to purchase it until after the first class. Art and Science of Fresh Water Fly FishingThis class will cover all aspects of fresh-water fly-fishing starting with the basic equipment need-ed, fishing etiquette and safety, types of rods, lines and flies that are available and how to use them. Students will learn to cast, using their own equipment, the standard overhead cast, roll cast and side cast and will also learn how to mend. The course will also cover topics such as how to select the appropriate equipment for various conditions, learn how to think like a fish, how fish live and eat, how to read a river, choosing the proper flies, presentation and places to fish in CT and CT rules and regulations. The instructor has been a CT fly fisher for over 40 years and has fished many of the West’s Blue Ribbon Waters.

Cherry Blossoms @ the Brooklyn Botanic GardenExperience a great spring day in the 52 acre Brooklyn Botanic Garden. This is peak blooming time for over 200 dazzling trees on the Cherry Esplanade and the Cherry Walk along with graceful sweeps of weeping cherries in the Japanese Garden. The most showy trees have double pink, almost magenta, extravagant blossoms hang-ing in clusters of flowers. Walk through this fairytale experi-ence. The Brooklyn Botanic Garden has many different gardens; there is so much to see. This weekend features performances, demonstrations and foods celebrating Japanese culture.
