Choosing which wine to go with your food does not have to be a complicated task, and some simple tips can help. We have four basic tastes that our tongues pick up, which include sweet, sour, bitter and salt, so these need to be taken into consideration when choosing a wine.

When making your decisions it’s best to think about all the ingredients you have in your dish as a whole. In other words is it going to be rich, acidic or mild? once you know this, you can then match the same style wine as your food. For example, if you’re having a rich meat dish like beef then you want a full bodied wine with a good tannic structure

like a shiraz or a good cabernet sauvignon. If you’re having something acidic like salmon with lemon then you need to match it with a fresh acidic wine like sauvignon blanc.

If we’re sticking to tradition this year then most of us will be enjoying a succulent roast turkey with all the trimmings. However, other Christmas dishes may include goose, duck or beef and the type of sauce will also contribute to your choice of wine. Manor Farm Shopsince 1935 the noble family have bred pigs and grown watercress at manor Farm in sherfield english. From the 1960’s we concentrated on the arable and livestock side but gradually moved to specialise in pig production. these days we focus in watercress, pigs and arable.

We started selling pork, bacon and sausages at car-boot sales in Hampshire, small farmers’ markets and our shop on the farm. then in 1999 farmers’ markets became more popular due to the quality of the produce and the public being more determined to buy from local suppliers, which was great news for us!

manor Farm now supplies you with extremely tasty english meat at competitive prices. our pigs are traditional breeds of large White, landrace and Wessex saddle back and are bred naturally (no a.i), which enhances the flavour of the pork. We cure and oak smoke our bacon on the farm, and have recently introduced collar bacon to our range.

We make 15 varieties of sausages all with a minimum of 80% pork, although our gluten free range contains 95% pork. The sausages are made from shoulder meat so are really tasty.

With the whole family involved in the running of Manor Farm and the production of our top quality produce, we hope to carry on the farming tradition for the next generation. It’s hard work but it’s in our genes and the loyalty of our customers makes it all worthwhile!

When I took to mushroom hunting everyone thought I was probably mad and certainly doomed. “How can

you think of eating things which could be deadly?” came the plea? Indeed, how could I? Well it’s just a matter of taking things slowly and carefully. I’ve now eaten about 120 species of wild fungi and never had as much as a stomach ache. The key is to only eat something if you’re absolutely sure of its name. There are plenty of old wives’ tales about mushrooms, but most are nonsense – you just have to know what something is.

So how do you start? First thing is to buy a good book. Take your basket into the autumn woods – I suggest beech, oak or pine woods, or some unimproved (unploughed) grassland to start looking. Collect just a couple of each species you find and don’t overwhelm yourself with too many – half a dozen is about right.

Carefully unearth your specimen to ensure that you have the base of the stem to help with identification (very important as the poisonous Death Cap and Yellow Stainer have distinctive bases on their stems). Note its surroundings – certain fungi grow with beech, some with oak, some just in grassland and so on. Take a little sniff of you specimen – most have some sort of smell, often it’s just mushroomy but sometimes it will be aniseed, curry, even plasters (Yellow Stainer alert!) and these smells are usually strongest in the fresh specimen. Also note any colour change that may occur from handling and take them home carefully in a basket or some plastic boxes.

Now this section is a little daunting but there’s some more reassuring news later so do read on! It’s fair to say that identifying fungi is not the easiest thing to do – all you have with mushrooms and toadstools is a cap, a stem and the rest is fine detail. However, if you examine your find very carefully, listing all its characteristics, identification is a fairly straightforward process.

If you have no idea what your specimen is then you need to start by taking a spore print. Spore colour is very important and many of the books use it as the starting point in identification. Just make a stem diameter sized hole in a piece of white paper, sit it on a cup and push the stem through so that the gills of your specimen sit on the paper. After a few hours you’ll get a spore print which will be white or various shades of pink, brown or black.

Then look at everything else. Note down the size, colour and surface texture of the cap; then do the same for the stem. Note

whether or not the stem has a ring and, if so, whether it hangs down like a skirt or is more like a collar. Also, is there a bag at the base of the stem? There are many more details which will help you build up a picture, so examine as many as you can.

Now it’s time to refer to your book. It’s actually not very helpful to flick through hoping to find something that ‘looks a little bit like’ what you’ve found, so instead go straight to the ‘key’ to gradually narrow things down. There may also be a picture key showing typical species from each genus which will also help and be sure to check with as many books as you can find and never jump to conclusions!

The good news is that you’ll only really have to go through this process once for each species, because once you’ve learnt one you’ll not easily forget it! You don’t need to be an expert to pick mushrooms, but the experience can be truly rewarding and can be very tasty too! Horse Mushrooms, for example, are large and highly distinctive – and taste great. The Giant Puffball is very common and easy to identify and gourmet treats such as Ceps and Chanterelle are also hard to confuse with anything else. But if I were to choose the ideal beginner’s delight it would be the Hedgehog Mushroom. This has everything: good taste, good texture, very common (mostly beech woods), never gets maggots, has a long season and, best of all, are difficult to confuse with anything nasty!

The other was a trip in an ancient Morris over Portsdown to pick blackberries. Now I forage for everything that could conceivably be eaten – including that most worrying of wild edibles – mushrooms.

3 In a large bowl, use a hand-held electric whisk to beat together the butter and sugar until pale and fluffy. Gradually beat in the beaten egg, a little at a time. If the mixture begins to curdle, add a spoonful of flour with the last few additions of egg.

4 Add the soaked fruit and walnuts, with any remaining liquid, then mix well. Fold in the rest of the flour. Spoon into the cake tin, then use a round-bladed knife to level the top of the mixture. Stand the tin on a tray and bake for 3-4 hours until cooked through, covering the top of the cake with foil if it starts to over-brown. To check that the cake is cooked, insert a skewer into its centre: if it comes out clean, the cake is cooked. Leave to cool completely in the tin.

5 Remove the cake from the tin and store in its lining paper, wrapped tightly in foil. Keep in a cool place. Feed the cake every few weeks by unwrapping it, making small holes in its top, then drizzling with a couple of tablespoons of Drambuie. This will help to keep the cake moist and add extra flavour. If the cake has domed in the centre during baking, neatly slice off the top before covering with marzipan.

1 Place all the dried fruit in a large bowl then stir in the grated orange zest and juice, and the Drambuie. Cover and leave to soak overnight.

2 Preheat the oven to 150°C, gas mark 2. Grease and line the base and sides of a 20cm square (or 23cm diameter round) cake tin with baking parchment so it stands 5cm above the top. WHAT AgE DID YOu START COOkINg?I think I was about 12 years old when I first started cooking. My dad had his own catering business, so it was always an area of interest in my family. My dad had a real passion for seasonal cooking and using local ingredients was a strong factor with him. I think that must have rubbed off on me as I always wanted to become a professional chef... either that or a doctor.

A TWICE MICHELIN STARRED CHEF; WAS THIS A DREAM OF YOuRS?Yes, but it always was just a dream really! I have a real fear of failure, so I always work extremely hard but I didn’t realise that all that time and hard work would pay off so handsomely! Getting my first Michelin Star was certainly the most rewarding experience of my life!

WHAT gAvE YOu THE IDEA TO CREATE A FuSION OF BRITISH AND INDIAN DISHES?Indian cuisine has always been the main inspiration for me. My family is from Punjab and I was born and bred in Jamshedpur, which is a really multicultural town. I’ve also lived in Bihar, studied in Madras (Chennai) and worked in various other parts of India, so I consider myself a true Indian, as I’m from all over.

Indian food has so many influences intermingled into it that it’s a true fusion in itself, so combining it with British food was an easy idea. Food from the world over can be given an Indian twist – as long as it has been adapted well with traditional Indian spice mixes.

HOW DO YOu THINk THE BRITISH PALETTE DIFFERS TO THE INDIAN PALETTE WITH REgARDS TO INDIAN FOOD?I think, in general, the British palette is more sensitive and loves more basic, mild flavours. Don’t forget that Indians have been using spices for centuries so they are more accustomed to the complex mix of spices and can appreciate things a little stronger. There are always exceptions to every rule though.

WHAT ARE YOuR FAvOuRITE INgREDIENTS TO uSE?My favourite and most used ingredients are coriander, lime and black salt. I also use a lot of fresh vegetables as there is so much vegetarian cooking in India – it’s big and versatile and hugely inspirational, but it’s really important to use seasonal produce, so that’s a big inspiration too. I also love to cook with daal, rice and fish, but that’s probably because I love to eat them!

HOW DID YOu FIND THE WHOLE gREAT BRITISH MENu ExPERIENCE?I first took part in the Great British Menu in 2006, and managed to beat Gary Rhodes in order to represent the South-East in the final round, which was a real achievement. I then got through to the national final in the 2007 with a ‘Spicy John Dory’ with mushy peas and chutney, and a Main Course of a Spicy Rack of Lamb. The whole experience was excellent and it really taught me a lot – in this profession you really do learn something new every day!

WHAT BROugHT YOu TO HAMPSHIRE TO SETuP YOuR vATIkA RESTAuRANT?The problem is that I have big dreams and a bad habit of chasing them! Being in country is something I have fancied doing for long time, but the main charm of setting up a restaurant in Hampshire was the wonderful and award-winning Wickham Vineyard.

RECIPE

gOAN SPICE OIL:• 3 tbsp Coriander Powder• 1 tbsp Chilli powder• ½ tbsp Black Pepper• 1 Star Anise• 2 Cinnamon sticks• 6 Cloves• 4 Green Cardamom • 6 tbsp Desiccated Coconut• 500 ml Vegetable Oil1) Roast all the spices, blend together

in a food processor with the oil and leave for 24 hours to infuse.

2) Decant as and when required for a flavoursome kick!

FOR THE LOBSTER TAILS:• 1 fresh lobster tail per portion• Knob of Butter• Goan Oil1) Steam the lobster for 2 minutes

then de-shell the tail and claws.2) Place each tail in a sealed bag with

Goan oil and a knob of Butter.3) Poach in boiling water 25 minutes.

FOR THE SWEET N SOuR LENTILS:• 100g Yellow Lentils• 50g Butter• 30g Tamarind Sauce

FOR THE APPLE CAvIAR:• 50g Cous cous• 100ml Apple Juice• 20ml Olive Oil1) Boil the cous cous in the apple juice

for 10–15 minutes and finish with Olive Oil.

FOR THE TAMARIND SAuCE:• 500g Tamarind• 1 Onion• 6 Tomatoes• 2 Green Chillies• ½ bunch Curry leaves• 150g Ginger• 400g Palm Sugar• 3 tbsp Mustard Seeds• 3 tbsp Coriander Powder• Salt to season1) Slice the Onions and Tomatoes. 2) Temper the mustard seeds

and Curry leaves in oil. 3) Sweat the onions then add the rest of

the ingredients and cover with water. 4) Cook till thick and sieve.5) Boil the lentils with salt

till they are soft. 6) Finish with butter

and Tamarind sauce.

FOR THE LOBSTER SALAD:• 50g Knuckle Meat• ½ tsp Mustard Seeds• ½ tsp Curry Leaf• ¼ tsp Turmeric• Dash of Lime• 1tsp Mayonnaise1) Temper the Mustard Seeds,

Turmeric and curry leaves in a pan. 2) Toss the knuckle meat in the

pan and finish with lime. 3) When cool fold in the mayonnaise.4) For the tempura fried claw,

make a batter with tempura flour and deep fry the claw.

FOR THE APPLE CONFIT:• 1kg Apples• 50g Brown Sugar• 100g Butter1) Peel, core and slice the apples. 2) Lay them on a oven proof tray,

sprinkle brown sugar on top and dollop butter. Cook in a oven at 145C for 45 minutes.

3) Portion and Caramelise with a blow torch.

4) Assemble all the elements on a plate.

“This dish might look quite complicated to the ‘unseasoned’ chef, as it has lots of different elements. However, it’s actually quite straightforward and it’s not only delicious, but will certainly impress the most discerning dinner guests!”

Nearby in the Alter Markt, you’ll find another Christmas market, close to the River Rhine, with its many bars and cafes, serving tasty glasses of mulled wine, a lovely way to relax after a day’s sightseeing and shopping. While in Cologne, if you like German beer, then try the traditional Fruh Am Dom Brauhaus Koln, Am Hof 12/14, 50667, Koln. It’s a popular drinking house, serving Fruh Kolsch beer in tiny glasses and typical German meals, perfect if you don’t want to leave the centre.

You can get to cologne by direct air services in the south from gatwick, Heathrow or stansted (one hour, 20 minutes) or eurostar via brussels (four hours, 11 minutes). Prices are dependent on dates, but there are still flights for under £100 per person, available for this year’s christmas market. accommodation is plentiful and somewhere like the excellent three-star Flandrischer Hof starts at £105 per person, for a three night stay.

newyorkChristmas in New York starts with the Macy’s Thanksgiving Parade on 25th November 2010, when over 250 participants of marching bands, performance groups, floats and Santa Claus all make their way down 7th Avenue. A spectacular event, it kicks off the holiday season in New York, watched by over 3.5 million people along the streets and over 50 million people tuning in to the television broadcast.

The ceremonial lighting of the huge Rockefeller Centre Christmas tree is on 1st December and the tree is on display until New Years eve, until 11.30pm daily. It’s here that you can Ice Skate, or take a ride in the elevator to ‘Top of the Rock’, with amazing views over Central Park.

Grand Central Station becomes a magical place at Christmas with the Grand Central Holiday Laser Light Show. Visitors will delight in the high-tech winter wonderland images on the famed astrological ceiling in the main concourse, 125 feet above their heads. This kicks off on Monday 30th November at 11am. one show is presented every half hour, between 11am and 9pm over the next six weeks.

New York can be as little as £380 per person. Hotels are plentiful and the centrally-based hotels start from £485 per person, from 24th–29th November.

While at Grand Central Station, do visit Juniors Bakery, to taste their fabulous New York Cheesecake, they’re delicious!! For the best burger in town, head to Norma’s at Le Parker Meridien. An unlikely location as it’s in a hotel, but it’s received rave reviews and is well worth checking out!

the test of a healthy heart is to measure your resting heart rate. the less often your heart beats per minute (bpm) in rest, the better, as a strong heart doesn’t need to beat as much because it pumps out more blood per beat. elite athletes will have incredibly low resting heart-rates (around 45 bpm) because their hearts are so strong.

Liam Butt, Group Health and Fitness manager at david lloyd leisure says: “Increasing your heart strength can lower blood pressure and cholesterol. It can also work to prevent coronary heart disease and diabetes. It’s very easy to take up an active lifestyle and get your heart working properly if you have the proper advice.”

Liam suggests three different types of cardio-vascular exercise to help get your heart working more efficiently. The first is Steady State CV exercise, which refers to exercising at the same pace over a long period of time, for example, running at 5mph for 30 minutes.

Another way is through Interval Training, where you alternate between quick bursts of activity and slower exercise, for example alternating between a sprint and a jog. This is particularly good for sport-specific training, as the pace is always changing with sports like tennis and football.

The third recommended way is through Circuit Training. Your circuit should include several different exercises that include resistance/weight training, squats, lunges and some cardio-vascular work. These exercises keep the heart rate up and vary how hard it needs to work.

To check that you are working hard enough, Liam suggests working at around 60–90% of your maximum heart rate. This way you will see the best fitness level results as your heart will be working efficiently. It’s widely accepted that to measure your maximum heart rate you should

minus your age from 220, for example, for a 30 year old their maximum heart rate would be 190. Working at 60–90% of that would benefit their cardiovascular system. Several pieces of fitness equipment can measure your heart rate or you could use a heart rate monitor.

With a little work, your heart can work better and the evidence will be in the lowering of your resting heart rate and your fitness levels increasing.

WHAT MADE YOu CHOOSE THE vINTAgE THEME AND WHAT INSPIRES YOu?I’ve loved dressing up in vintage fashions since I was 13. The thrill of getting an amazing item for a pound has never left me – and it became an obsession.

I used to sell my finds around London at weekend markets, but finding a way to make a sustainable business out of second-hand items was proving a challenge for me. That’s why I started hosting a monthly event that would allow women to

come to my studio to buy vintage clothes and have a glass of wine, while I cooked for them! The two ideas seemed to work so well together and was an amazing way to make my passion profitable.

I love making people smile and my business is the perfect platform for this.My inspiration firstly came from my family. My mother has five sisters I used to watch them get dressed up for parties and dinners and wanted to be that glamorous too. The movie maidens of the past like Louise Brooks, Ava Gardner, Greta Garbo, and Rita Hayworth are also a big inspiration…everyone looked so fabulous back then!

SO, TELL uS WHAT YOu’vE BEEN uP TO SINCE THE DRAGon’s DEn...No-one can really prepare you for the exposure you get after the programme, so life before, during and ever since has been pretty hectic! I’ve had my head down since the screening of the show, making sure that quality of our service isn’t affected and that the personal touch is still strong. That’s how I grew the business and it really is the most important thing.

There have been so many interesting opportunities come my way of late and it could have been so easy to get carried away and say yes to them all, but the business would have suffered and without that being strong, the opportunities will not be there in the future!

So now I’m concentrating on growing and training the Vintage Patisserie team and with baking, chocolate making, party hosting and event organising, there’s hardly been time to take a breath!

HOW DID YOu FIND THE DRAGon’s DEn ExPERIENCE?Terrifying! Most entrepreneurs like things done their way… that’s why they go into business for themselves! Knowing I was not in control and that they could potentially destroy my dream was really hard to deal with, but I did it because the positives outweighed the negatives and I knew in my heart that I was on the right path.

The best thing about getting the investment is knowing that you have a partner to turn to for advice. Getting that kind of direction and confidence is why people put themselves through the Dragon’s Den experience!

DO YOu THINk YOu WOuLD STILL HAvE COME THIS FAR IF YOu HAD NOT gONE ON DRAGon’s DEn ?I’m an incredibly focused individual and I’ve had this vision for years. I was certainly on the correct path before the Den, but that experience really was invaluable. The blessing of the Dragons means that people take me more seriously and, overnight, so many more people know about the business (three million people tried to log on to my site that night!).

WHAT WOuLD YOu SAY TO SOMEONE WHO IS STARTINg OuT IN BuSINESS?Make sure you’re passionate about what you do. Business can be tough sometimes so you have to be patient, dedicated and prepared to put in the hours, because at the start you will have to do everything!

Everyday will have a different challenge, but one day you will be able to reflect on what you have achieve – and when that day happens it will all seem worth it.

WHAT ARE YOuR FuTuRE PLANS?The main event will be setting up the first Vintage Patisserie flagship store and launching our own range of clothing and accessories. All our energy is going to ensure that the store is the most fabulous place you’ve ever been!

My biggest challenge is to grow the business without losing what makes it special – the personal touch.

NOTHINg TO ENvY: REAL LIvES IN NORTH kOREA BY BARBARA DEMICk It describes a country where all the radio dials are fixed to the same frequency; the

only colour you see on the street is from propaganda posters; you’re required, by law, to have a portrait of the nation’s leader in prime place in your home and sexual desire is repressed, except for the purpose of reproduction. While this may sound like some bleak vision of the future, this is, in fact, the shocking reality of modern-day North Korea, told from the viewpoint of a collection of defectors and refugees.

Despite being a work of non-fiction, this book reads like a novel, with cliff-hanger endings to chapters, characters you invest in and care about, and a refreshing pace not often seen in non-fiction. Readers have a varied selection of stories to follow, from a pair of young lovers, who can never express their true feelings; a frustrated and disillusioned doctor; a young, petty criminal and a caring mother who, despite it all, remains loyal to her ‘Dear Leader’, Kim Jong-il. We also see their lives post-defection, and discover whether life really is better in the capitalist South.

Demick revels in the small details, the daily diet, the clothing, the way housing was built and provided, the schooling of the children, university life and how Koreans adapted to life after the war in the 1950’s. These people aren’t the brainwashed masses you would be led to believe, but normal citizens like you and me, going to the movies, hanging out with their friends, enjoying good food and company, and wanting the best for their children.

The state, however, control everything. The food is rationed, the films at the picture house are state produced and sanctioned, neighbours are encouraged to spy on each other and report any unpatriotic speech or sentiment to local officials. Jobs are allocated based on social status and party membership, and those people not deemed ‘pure blood’ are destined to lead a life of hard labour and poor housing. While elements of the population become disillusioned with the leadership, yet remain in fear of voicing their opinions, others remain blindly loyal to the belief that Kim Jong-il will lead them out of hardship.

This is a deeply moving book, full of injustice and heartbreak, but one which gives the reader a real understanding of these long suffering people who lack any voice of their own. Nothing To Envy is

SkIPPY DIES BY pAUL MURRAYPoor old daniel ‘skippy’ jester. only five pages into the novel he’s lying prone on the floor; a tragic victim of

a doughnut eating competition. this sets the tone for the next 656 glorious pages of irishman, Paul murray’s superb second novel.

skippy’s death is merely the catalyst for the rest of the book. the action takes place in seabrook college, the kind of institution that’s struggling to come to terms with modern life.

and what a cast of characters. skippy shares a dorm with ruprecht van dorn, an obese genius, whose days are spent pursuing quantum theory. Howard ‘the coward’ Fallon is the history teacher who finds himself dragged back to his old school – a drudgery that’s only alleviated by the appearance of miss MacIntyre, an attractive and aloof supply teacher. the presence of an all-girls’ school neighbouring seabrook means that it’s not just the teachers who are attempting to get amorous, as Skippy falls for the impossibly beautiful lori.

but for all the humour, all the ribbing and innuendo, skippy dies veers near some pretty dark issues. Self harm, domestic abuse, bereavement and drugs are just some of the issues that murray tackles. the fact that he is able to do this while maintaining the upbeat, buoyant tone is testament to the skill of the writer. it’s this harmony of the tragic and comic that makes the novel so irresistible and also brought it to the attention of the judges at the 2010 man booker Prize.
