• Olive tree cultivation dates back to many centuries. The first testimonies of olive tree cultivation in Greece were recorded 3,500 years ago. Olive oil has been an integral part of Greek everyday life from antiquity up to today. It is a symbol of immortality, fructification, fertility, abundance and peace. It is also a fundamental part of our diet with many positive properties. Olive oil is a religious element, used in ancient sacrifices, but also in Christianity - a symbol of sanctification and purity. Moreover, it is a cosmetic product, a source of power and admiration.Nowadays, olive oil represents an essential part of the internationally renowned Mediterranean Diet, while its antioxidant ingredients have also scientifically been proven to have cardio-protective and anti-inflammatory properties.

• Greece produces many famous varieties of cheese, 20 of which are registered as PDO (Protected Designation of Origin). Greece is mainly accomplished by using small animals, mostly goats and sheep and to a lesser extent cows. The particular flora typically found on the mountains and plains of Greece, the microclimate, the local breeds together with free grazing and the limited use of lairs are the conditions for the production of cheese with a special character and unique organolepticproperties. The history of cheese begins in Central Asia about 10.000 years ago, when man managed to domesticate animals like goats and sheep. Both in Greece and the rest of the Mediterranean countries, cheese making has been an essential activity and occupation for a long time.

• In Greece, even to this day, spoon-sweets are the established treat, the sweetest welcome treat, offered to any house visitor. Spoon-sweets are made from fruit or vegetables that are boiled and preserved in syrup. They are named after their quantity when served: it is actually limited to the teaspoon capacity! honey• The history of honey dates back to ancient times,

when honey was a special part of the daily diet. The ancient Greeks believed that honey was the food of the gods on Mount Olympus and was often referred to, as the Nectar of gods. According to Greek mythology, Zeus was fed on honey by the nymph Melissa in Dikteo Andro (Dikteo Cave), while the ancient Greeks offered honey to Gods at sacrificial ceremonies.During the period of the Byzantine Empire, honey was a part of the diet, especially in monasteries.Nowadays, the world-acclaimed Mediterranean Diet, and especially the Cretan Diet, that endows people with sound health and longevity, includes honey as the main sweetener.The symbolic importance of honey, is also worth-mentioning, given the fact that it has represented fertility and welfare from ancient times to this day and age.As far as its nutritional value is concerned, this is without a doubt, very high. Honey contains simple sugars which are directly absorbed by the bloodstream, thus making it an immediate source of energy for the human body. It also contains vitamins and invaluable trace elements. Finally, honey is a great stimulant with antiseptic properties and antibiotic action, moreover, it helps in the healing of wounds, contributes to good bowel health, relieves insomnia, sore throat and stomach ulcer. It generally contributes to a healthy body.

• In the past, Greek villagers made pasta mostly in the summertime when they could dry it naturally. They would then keep it in the cellar of their homes and cook it in winter. It was thus a very convenient and easy food to prepare and a wonderful solution to feed a large and hungry family both economically and in a most nourishing way. The shape, size and cooking method of the Greek traditional pasta varies, depending on the region. Whether served with cheese, with some sauce, with meat, in soups or even in pies, pasta is definitely a delicious dish, irrespective of its cooking method.
