Turkish Culinary Art

“One of the most richly varied”

The Turkish cuisine is rich and varied, from Aegean olive oil based vegetarian cuisine to famous spicy kebabs of south-eastern Anatolia, from dough/pastry based boreks, raviolis, pides, to tandir (slow cooking style of lamb). The huge variety in Turkish cuisine is due to several factors. In summary, the variety of products offered by the lands of Asia and Anatolia, the interaction with numerous different cultures over a long history, the new tastes developed in the palace kitchens of the Hittites, Seljuk, Greeks, Persians, Roman, Byzantine and Ottoman empires have all played a part in shaping the new character of our culinary culture. Turkish Cuisine, which in general consists of dishes with sauces prepared with grains, various vegetables and some meat, soups, cold dishes cooked with olive oil, pastry dishes and dishes made from wild greens and herbs has also produced a series of health foods such as pekmez, yogurt, and bulgur. The eating habits of the Turks, which reflect the changing tastes from one location to the next, gain a new meaning and near-sacredness during special occasions, celebrations and ceremonies.

“from the Bronze Age to Antiquity”

The first traces of viticulture and winemaking in Anatolia date back 7,000 years. Wine had an indispensable role in the social lives of the oldest civilizations of Anatolia the Hattis and the Hittites. It was the primary libation offered to the gods during rituals attended by royalty and high governors. Provisions protecting viticulture in Hittite law, and the custom of celebrating each vintage with a holiday, suggest that wine was important to both ancient economies and ancient cultural practices.

The Phrygians Introduced Wine to Greek Colonists on Anatolia’s Western Flank

For the Phrygians, who lived in Anatolia after the Hittites, wine was an essential part of daily life and an important element in their diet along with olive oil, fish, and bread. The Phrygians introduced wine to Greek colonists on Anatolia’s western flank, and by the 6th century BC wine was being exported as far as France and Italy from trading and production centres such as Tabae (Tavas, near the present-day Pamukkale) and Klazomenai (near Urla) both in the southern Aegean region and Ainos (Enez) to the north. Knidos (today’s Datça), on the southwest Mediterranean coast, and the island of Rhodes were also leading centres for the wine trade. One of these early Anatolian grapes, Misket, became known as Muscat in Europe. Another variety from Smyrna (today’s Izmir), was used in the production of the famous wine of Pramnios, which is mentioned in Homer’s Iliad.

Wine Historyin Anatolia

“The Neolithic Period”

Vitis Vinifera’s Natural Distribution and Archaeological Discoveries.

According to Dr. Patrick E. McGovern, the Scientific Director of the Biomolecular Archaeology Laboratory for Cuisine, Fermented Beverages and Health at the University of Pennsylvania Museum in Philadelphia and to Dr. José Vouillamoz from University of Neuchâtel in Switzerland who specializes in the study of the origin andparentage of grape varieties through DNA typing (or genetic fingerprinting); they both show the South East part of Turkey as the origin of grape seeds and grape domestication dating back to 9.000 BC.

Turkey is situated between 30° and 50° latitudein the very Heart of the “Grand Terrain”.

“The Turkish Republic”There was a considerable amount of wine production before World War I and the War of Independence in Turkey. But wars affected production negatively, especially in the Thrace and Aegean regions.

The production of all alcoholic beverages went under the control of government monopoly in 1927, with the exception of wine, for which private production and the development of vineyards was still permitted. This was specifically done to develop and protect wine production. The only restriction, which in today’s terms could be called “controlled wine regions-appellation controllée”, was the permissions given to wine production on specific regions where wine grapes were being produced. In 1928 the government began to support wine producers with technical knowhow and semi-financial support. (There was also support for export tax exemptions and a support fee/kg).

M.Emile Bouffart was one of the first pioneering consultants who evaluated wines and the wine regions in Turkey, including advising on where to develop wineries. In 1946 there were 28 small sized wineries all around Turkey exploring the potential quality of wine production with different varieties and terroirs under the Government Monopoly.Marcel Biron was also one of the consultants working for the Government Monopoly and identifying different wine regions and wines in Turkey (1937-1947). The 1950’s government initiated French grape varieties for plantation in the Aegean and Thrace regions (Semillon, Clairette, Sylvaner, Gamay, Cinsaut, Pinot Noir and Cabernet Sauvignon are among the varieties planted and explored during these dates). The subsequent decrease in quality began with the non-implementation of this “controlled wine regions” regulation as well as political changes in the 1960’s. Private producers stayed in the market throughout this period, but remained relatively small in size. By the late 1980s, as the Turkish economy began to integrate with other global economies and deregulation became more prevalent, the tourism sector also began to develop, thus substantially boosting wine sales. This was the impetus for the wineries to invest in the latest technology, machineries, to develop their wineries, begin investment in their vineyards and plant international and local grape varieties to international quality standards.

“From the Ottoman Empire to the Turkish Republic”

Later still, Turkish tribes arrived in Anatolia from Central Asia and they, too, drank wine. Production continued even after Islam began to dominate the region, and a comfortable balance developed between Christian and Muslim residents: Christians, for the most part, produced the wine; both Christians and Muslims consumed it. During the long period of the Ottoman Empire (1299–1923), wine production and trade were carried out exclusively by non-Muslim minorities (Greeks, Armenians, Syrians, and others). However, what we today would call wine-bars, usually in Christian neighborhoods, were also patronized by Muslims.

During the Ottoman period, the general atmosphere of tolerance was interrupted from time to time by official prohibitions on the use and sale of alcohol. Wine-bars were forced to close and heavy sanctions, even death penalties, were applied to those who didn’t obey the new rules. The prohibitions were always short-lived, however each time they would be first loosened, then eventually lifted completely. This regular reversal of policy had an economic reason: the tax collected from wine sales was an important source of income for the Ottoman treasury, so any long-term banning of alcohol sales contradicted state interests. Even during periods of prohibition, vineyards were never uprooted: grape production was simply diverted to other types of consumption. A ready supply of grapes enabled wine production to recover rapidly after each hiatus.

Wine production reached record levels and alcohol prohibitions ceased during the second half of the 19th century, in the atmosphere of tolerance and freedom brought about by the Ottoman modernization movement. At the same time European vineyards were being devastated by an epidemic of phylloxera (a vine-attacking insect), reducing wine production dramatically. In order to meet the resulting surge in European demand, the Ottoman Empire’s wine exports increased substantially reaching 340 million litres in 1904.

General Information on Biological Diversity in TurkeyTurkey, bridging Europe, Asia and Africa, surrounded from 3 sides with seas of different ecological characteristics, with altitudes ranging from sea level to above 5000 meters resulting in a variety of climatic conditions through the country, has a biological wealth incomparable to any of the neighboring countries. The ecosystem mosaic of several different ecological characteristics provides nesting and breeding areas for thousands of fauna and flora species and their populations. Another factor that increases this wealth is that, two of the four migratory routes of West Palaearctic Region pass above Turkey.

There have been above 11000 plant species identified in Turkey, 3000 of those being endemic species. It is estimated that animal species are around 80000. Turkish nature also constitutes centers of origin and diversity of genetic resources.

Ecosystem DiversityTurkey has biogeographically different three regions which are Europe-Siberia, Iranian-Turan, and Mediterranean. These regions consist of different types of ecosystems with their transition zones. Economically the most important ecosystems are steps, since most of the crops grown as a food supply were derived from wild species. Wetlands, as favorable nourishment, reproduction and housing places for lots of species, have high level of biological diversity after Tropical forests. These ecosystems have vital significance for endangered and endemic species.

Genetic DiversityTurkey is at the crossroads of two important Vavilovian gene centers: -The Mediterranean and the Near East- each important for the origin of field crops as well as horticultural plants. Some of the cultivated plant species originating in Turkey are Linum, Allium, Hordeum, Secale, Triticum, Avena, Cicer, Lens, Pisum, Vitis, Amygladus, Prunus, Beta, etc. There are 5 “micro-gene centre” in Turkey (Harlan 1951):

Thrace-Aegean Region: bread wheat, durum wheat, Poulardwheat, club wheat, einkorn wheat, lentil chickpea, melon, vetch, lupine, and clover.

Southern-Southeastern Anatolia: emmer wheat, einkorn wheat, Aegilops speltoides, squash, water melon, cucumber, bean, lentil, broad bean, grapevine, and forage plants.Samsun, Tokat, Amasya: numerous genera and species of fruits, broad bean, bean, lentil, and several forage legumes.

Kayseri and environs: almond, apple, pea, fruit species, grapevine, lentil, chickpea, alfalfa, and sainfoin.

Agri and environs: apple, apricot, cherry, sour cherry, forage legumes and watermelon.

Species DiversityTurkey has 75% of the total number of plant species found in the whole of Europe. One third of Turkish flora, which is more than twice as diverse as that of neighbouring countries are found only in Turkey. Cherries, apricots, almonds and figs all originated in Turkey. Turkish flora includes many wild relatives and genetic diversity of important domestic species (e.g. wheat, chickpea, lentil, apple, pear, apricot, chestnut, and pistachio). Turkey is also home to a number of ornamental flowers, the most notable being the tulip. Among continental countries, Turkey ranks 9th in terms of biodiversity richness with over 33% of its flora being endemic.

TURKEY: DID YOU KNOW?Turkey’s Little Known Facts...Istanbul is the only city in the world located on two continents, Europe and Asia. In its thousands of years of history, it has been the capital of three great empires - Roman, Byzantine and Ottoman.

The oldest known human settlement in the world is located in Catalhöyük, Turkey, dating back to 7000 B.C. The earliest landscape painting in history was found on the wall of a Catalhöyük house, illustrating the volcanic eruption of nearby Hasandag.

Two of the Seven Wonders of the Ancient World stood in what is now Turkey - the Temple of Artemis at Ephesus and the Mausoleum of Halicarnassus in Bodrum.

The Turks introduced coffee to Europe.

The first coins ever minted were done so at Sardis, the capital of the ancient kingdom of Lycia, at the end of the seventh century B.C.

The word “turquoise” comes from “Turk” meaning Turkish, and was derived from the beautiful colour of the Mediterranean Sea on the southern Turkish coast.

The Turks first gave the Dutch their famous tulips that started the craze for the flower in England and the Netherlands. Bulbs brought to Vienna from Istanbul in the 1500s were so intensely popular that by 1634 in Holland it was called “tulipmania”. People invested money in tulips as they do in stocks today. This period of elegance and amusement in 17th century Turkey is referred to as “The Tulip Age.”

The most valuable silk carpet in the world is in the Mevlana Museum in Konya, Turkey. Marco Polo’s journeys in the thirteenth centuries took him here, and he remarked that the “best and handsomest of rugs” were to be found in Turkey.

Many important events surrounding the birth of Christianity occurred in Turkey. St John, St Paul and St Peter all lived and prayed in southern Anatolia. Historical evidences show that St John brought Virgin Mary to Ephesus after the Crucifixion, where she spent her last days in a small stone house (Meryemana Evi) on what is now Bülbüldağı (Mount Koressos). Many archaeologists and biblical scholars believe Noah’s Ark landed on Ağrı Dağı (Mount Ararat) in eastern Turkey.

The seven churches mentioned in the Book of Revelation are all found in Turkey: Ephesus, Smyrna, Pergamum, Thyatira, Sardis, Philadelphia and Laodicea.

A cave known today as the Grotto of St Peter, or Church of St Peter, is believed to be where the apostle Peter preaches when he visited Antioch (Antakya, in southern Turkey). It is widely considered to be one of the earliest Christian houses of worship. In 1963, the papacy designated the site as a place of pilgrimage and recognised it as the world’s first cathedral. Every year on June 29, a special service held at the church, is attended by Christians from around the world.

Anatolia is the birthplace of many historic figures and legends such as the poet Homer, King Midas, Herodotus (the father of history) and St Paul the Apostle.

St Nicholas, or Santa Claus as he is know today, was born and lived in Demre (Myra) on Turkey’s Mediterranean coast. The village contains the famous Church of St Nicholas with the sarcophagus believed to be his tomb.

The first man ever to fly was Turkish. Using two wings, Hezarfen Ahmet Celebi flew from the Galata Tower over the Bosphorus to land in Usküdar in the 17th century.

Location:Marmara designates a region spread across southern Bulgaria (Northern Thrace), north-eastern Greece (Western Thrace) and north-western Turkey.

• Emir is a native white grape of Cappadocia and most of the grape is planted in the Nevşehir province. It acquired its name (Emir = Ruler / Lord), from the fact that it was a quite popular wine at the local lords’ tables. It was used since the Roman times to make crisp, refreshing wines.

• Emir makes straw yellow coloured wines with green reflections; famously with green apple and minerals on the nose. On the palate it makes lively, crisp wines. Wines are; light-medium bodied, light yellow colour, high acidity and delicate.

• Emir is used in sparkling and still wine making. Does not match with oak and generally should be consumed in 1-2 years, no malolactic.

AVŞA(BALIKESİR)

Büyülübağ winery is established by Alp Toruner on Avşa Island, Marmara Sea, Turkey. The island with a history of viticulture and wine making since 1800’s, has a unique microclimate and sandy-loam soil. Our vision is to grace the island’s indigeneous grape variety ‘Adakarası’ with international awareness and to exploit the potential of the well-adapted cosmopolitan grape varieties in the Avşa Island’s terroir. At present Büyülübağ has 20 hectars of vineyards consisting of Cabernet Sauvignon, Merlot, Syrah, Chardonnay and Adakarası. The best fitted root stocks are chosen resulting from the soil climate analysis conducted in France.

The winery construction has begun in October 2004 with this no pumps, no damage strategy. In our four level facility, there is a tasting room at the top level with a wonderful view. Production takes place between the rest three levels; the grape processing begins at the first level, with picking bins tipped on the first vibrating sorting table, then stem remover, the second vibrating sorting table and into a crusher/stemmer on this level. The tanks are at the lower level so crushed berries drained into tanks at this second level. Finally at the lowest level, there is the barrel cellar which is located under the ground level, water insulated, therefore it has a 70% annual average of humidity and 14º C of heat. The cellar consists of Burgundy and Bordeaux style 225 lt. French oak barrels. With our gravity flow winery, which is the first and only one of its kind in Turkey, Büyülübağ ensures that wine movement is slower, and therefore gentler and more controllable. The resulting wine is better because it has been moved in a more delicate manner that preserves its inherent qualities.

Today Büyülübağ Winery and Vineyards produce stylish, elegant and rich wines that already won medals at national and international wine competitions.

Mustafa Vasfi Diren, founder of Diren Wines started wine production in 1958 after 18 years of preparation. In 1963, Diren Wines won the first wine competition in Turkey and from that moment on, Diren has continued to invest in information and technology in winemaking. Diren Wines has been presenting quality wines of Anatolia, predominantly from Tokat region, and has gained many national and international awards. Diren Wines has served wine lovers with a wide range of products: Mahlep, Les Muses, Karmen Selection, Collection, Enjoy, Karmen, Vadi and Cadde brands for over 50 years with a growing product portfolio.

In January 2012, Diren Wines launched Les Muses that reflects appreciation to terroir and is made entirely from Cabernet Sauvignon grapes in Diren Vineyards – Tokat, an area where Cabernet Sauvignon gains a delicate and complex character. A testament to the true potential of our vineyard, the Diren wine family is an important proof in our ongoing exertion to improve cultivating new varieties in Tokat terroir. Les Muses is the first example that born from this passionate spirit.

Diren Wines reflects the characteristics of Anatolia, where 6000 years of history in wine-producing lies. For three generations, DOLUCA has been a part of the Turkish winemaking industry, reflecting its traditional and innovative character in its service and product quality. At the beginning of the adventure in 1926, Nihat A. Kutman, returned to his home country after completing his education at the Geisenheim Wine Institute’s programme in Enology and Viticulture and he established DOLUCA. Second Generation Nihat A. Kutman’s son, Ahmet Kutman, received his education in the fieldof Food Technology, Enology and Viticulture at the University of California at Davis, from where he graduated in 1967, shortly after which he returned home and joinedthe company management. DOLUCA today, continues to present over 45 differentproducts to consumer’s liking, with a 14 million bottle annual capacity. Paying as muchas meticulous attention to consumer relations as to production quality, especially after Ahmet Kutman’s daughter Sibel Kutman Oral and son Ali Kutman, joined the company as a member of the third generation, DOLUCA has attained a broader contemporary outlook and embraced the mission of developing and enhancing thecultural awareness of wine in Turkey.

In its 85th year, Kavaklıdere Wines, as the first private sector wine producer in Turkey, remains to be the leader with the 3rd generation who runs the family business.

Kavaklıdere aims sustainable high quality wines by promoting best Anatolian noble grapes and growing international grape varieties in different Anatolian microclimates. Since 2008, Stephane Derenoncourt and his team are consulting the company.

Company owns 635 hectares of vineyard in various growing regions of Anatolia: Cappadocia, Pendore, Güney, Elazığ, Kalecik and Kırşehir and three cellars where tradition meets technology, located in Ankara, Cappadocia and Pendore.

Kavaklıdere Wines has a wide product range including 47 different wines in 23 brands. In the international wine competitions, Kavaklıdere Wines won nearly 700 medals so far.

Company has 3 branches abroad - Kavaklıdere Europe Gmbh in Germany , Kavaklıdere Europe B.V. in Holland and Kavaklıdere Europe N.V. in Belgium. Export operations to Europe are being held by the Belgium Warehouse. Currently, Kavaklidere Wines exports directly to 21 countries and meet with wine lovers in 25 countries besides Turkey.

Pendore vineyard, located in Aegean region, is on the foot of the mountain “Bozdağlar” near the historical place “Sardis”, the capital of Lydia civilization and the center of viticulture in antic era.

194 ha vineyard is favored by an individual microclimate combining the Mediterranean and the continental features. The mountain “Bozdağlar” prevents maritime winds, blowing from Aegean Sea, so bringing coolness for full ripening.

Vineyard is composed of slope hills with different aspects where the altitude varies between 200-450m. The soil, varies along the land, is composed of clay, clay-loam, limestone with gravel, thus; the vineyard is divided into small plots having unique terroir.

The indigenous grape varieties; Öküzgözü (red), Boğazkere (red) with the international grapes Muscat, Syrah, Cabernet Sauvignon, Merlot, Carignan and Petit Verdot are grown.

Cellar nearby is designed with gravity system to reflect the character of the grapes to the wine at the very best.

Cappadocia, meaning “land of beautiful horses”, features a unique beauty that combines nature and history widely known with “fairy chimneys” Côtes d’Avanos Vineyard is located in this charming region where the viticulture and winemaking tradition stretches back to thousands of years.

Vineyard, firstly planted in 1993, extends up to 179 ha. Vines, facing north-south, are 900-1050 m above the sea level. The soil is distinctive for Côtes d’Avanos Vineyard, which is composed of calcar and tufa, formed by the break-up of volcanic rocks.

The climate is typically continental where the winters are cold and snowy and summers are dry and hot. Kızılırmak River (Avanos) passing through the region, affects the microclimate of the vineyard. The significant difference of temperature between day and night and the high altitude provide the grapes with long ripening period, in addition preserve high acidity and aromatic structure.

The indigenous grapes Narince(white), Emir(white), Kalecik Karası(red) and Öküzgözü (red) together with the international ones Chardonnay, Sauvignon Blanc and Tempranillo are grown in this unique terroir.

Cellar nearby is designed with gravity system to reflect the character of the grapes to the wine at the very best.

Our practice in winemaking have given us experience that only time can bring, and we have invested all of this experience and have added passion to a new brand that will carry our winemaking heritage into the future. Based on our faith in the goodness that is the essence of wine, we have named our family of wines “Kayra” a word that expresses kindness, benevolence and grace. We can describe ourselves as the new generation of winemakers truly searching the great potential of this land, called Anatolia, when once the legacy of wine ruled the grape.

Our portfolio offers a wide variety of choices from fruity young wines to artisanal small lot hand crafted bottlings. The portfolio reflects an easy way to reach needs of consumers as well as sophisticated offerings. In that sense, our portfolio includes wines produced of indigenous grape varieties as well as international grape varieties. Also, the winemaking style for each of our wines differs based on the brand group in our portfolio. Indeed, the style of wines made from indigenous grapes may be classical Anatolian style in one brand or a sophisticated reflection of a search for the true potential of the grape in another. This is the key of our brand portfolio under the brands Kayra Imperial, Kayra Versus, Kayra Vintage, Kayra Buzbag Rezerv, Terra Anatolia and Buzbağ.

Kayra wines are being produced from the grapes grown in Anatolia’s diversity of soils and climates processed at our Elazığ Winery, only winery in the South-eastern Anatolia and Şarköy Winery, in Thrace where Kayra Vineyards are also located.

Today, Kayras tastes from Anatolia are listed in many international fine dining restaurants and are receiving awards in international competitions. As a part of its investments on the wine industry in Turkey, Kayra established the first and the only wine training and information center, Kayra Wine Center in 2008. Kayra Wine Center is also the Turkish Programme Provider for WSET (Wine and Spirits Education Trust).

Born in Anatolia, wine has always been among mankind’s most noble culinary achievements; so much so that it has been known as the “water of life,” and referred to in sayings like “the truth is in the wine.” Now, we believe that it is time for wine to regain its glory in the land where it belongs.

Kocabağ, located in the heart of Cappadocia which is characterized by fairy chimneys and has a unique historical and cultural heritage, is established in 1972.

The family owned winery, has 10 hectares of vineyard where the soil is composed of calcer and tufa formed by the breakup of volcanic rocks. Cappadocia has a continental climate with hot and dry summers, cold and snowy winters. The vineyard benefits from the micro-climate softened by Kızılırmak basin nearby.

In the region, many indiginious grape varieties are grown; Emir, Narince, Kalecik Karası and Öküzgözü.

Grapes are gently processed by gravity system in the rock-built cellar, where adequate humidity and temperature for cuvage and maturation is provided.

Today, Kocabağ is the leading winery of the region, whose products are also being imported.

LA was born amidst great history and civilizations. We carry the impressions of our rich culture and history to our modern days. We combine the land, water, climate of Aegean region with our love and patience and present a unique world full of different tastes. We bring you (together with) what the metropols of civilizations shared for thousands of years as Consensus, Mon Rêve, Smyrna and Idol.

LA Project was founded with a dream to produce wines in world standards in Aegean Lands which has been the cradle of winery and viticulture for hundreds of years.

LA Vineyards, the largest vineyard in Turkey on a single lot has been established on land with 1,168 acres in Torbalı of Izmir. The characteristic of the soil and the climate has been examined by experts. In consequence of soil and climate analysis, the saplings supplied from Europe have been shipped to LA Vineyards by means of special air conditioned vehicles. Qualified wine grape species such as Tempranillo, Chenin Blanc, Viognier, Marselan, Trebbiano, Ugni Blanc, Cabernet Sauvignon, Merlot, Chardonnay, and Misket, supposed to be accommodated to the soil and climate conditions of Aegean and some of them have never been planted in Turkey before, have been determined to be planted in LA Vineyards. The grapes has been started to be settled by using organic viticulture methods for the first time in Turkey in order to preserve the original fruit characteristics.

Registered by Ecocert, we have raised our grapes in our vineyard without using any hormones, synthetic chemical pesticides and fertilizers by using organic viticulture methods. Thus, we manage to preserve original fruit aromas generated by the grape terroirs in a natural way. Furthermore, we contribute to restructuring natural balance being spoiled by means of organic viticulture which is a human and nature friendly production method.

URLA(İZMİR)

Mozaik Winery’s vineyards and the wines produced in its on-site winery located inIzmir-Urla are together a part of the project to realize our dreams as a family. In our vineyards in Urla, we have started from scratch, and are growing several red varietal imported from France and Italy, namely Sangiovese, Syrah, Marselan, Montepulciano, Petit Verdot, Tannat, Ekigaïna and Rebo. We grow our vines organically, and work in coordination with the laws of the nature.

As passionates of wine, we started our project by planting our first vine in March 2006 under the supervision of our Italian agronomist. We created this project byintegrating the history of Urla, and its natural character with our own past and ourdreams, and by keeping loyal to the winegrowing traditions rooting from this region’s history. Since the first day of our project, we have closely followed our vineyards’ development and reaching maturity by respecting the dynamics of the grape and the wine, and by not compromising from our understanding of consistent level of quality.

With this project, we aim for our vineyard and wines to pass on to the next generations, so in order for our vineyards to be ever-lasting, and for our wines tokeep their high level of quality, we limit the amount of production we get from ourvines, and we do that by our special system of pruning, thus not leaving much burden on the vines throughout their season.

Meanwhile, our work in the winery is directed by our experienced Italian academician oenologist. In order to bring out the grape’s own character and the local history in the wine without any interruptions, our work is carried out in great simplicity. In our winery, every grape verietal is processed according to its specific needs and teated with details special to itself, and carefully fermented into wine. Our wines of high quality and rich character are almost completely aged in oak barrels for at least 12 months to achieve the correct level of maturity and balance of flavors.

Finally, our wines are bottled in our winery with great care to present itself to itsconsumers with our love, the force of nature, the history of our soil, and the tasteof our grapes.

Pamukkale Wines is founded in Guney county of the Denizli city in 1962

Güney country is in the north of Denizli, at 38°9’14.64” N latitude and 29°3’58.60’’E longitude and 750 - 850 meters above the sea level. In winter, cold and snowy continental climate prevails in county of Guney with the average of annual rainfall of 475-550mm and the temperature difference between day and night in the summer reaches 15°C - 20°C. Soil is clay - loam, limestone and pebbly. The Guney Plateau is an important vineyard for winery because of the ideal natural conditions as well as the investments made to the region by Pamukkale Wines.

Pamukkale winery, with its fully grown 65 hectares of vineyards and contracted farmers, makes chateau style production that is described as “processing on site”.

In cooperation with the leading wine cultivation institutions, the local manufacturers had the opportunity to continue their education. Hundreds of thousands of grape vines and plant protection agents were provided free of charge. The main target of Pamukkale Winery was to increase local wine cultivation. Because of the surge in the cultivation of grapes, many people returned to the wine-growing region and for this the company can be very proud.

Today, Pamukkale Wines is one of the most important producers in Turkey with its gold medal awarded products in international contests and with a modern winery that has 4500 tons/year capacity.

Since 1989, 20% of Pamukkale Winery’s wine production has been for Germany, France and UK. It has also been exported to the Netherlands, Denmark, Austria and other European countries as well as to countries in the Far East.

Pamukkale Winery’s chief goal is to use the most modern technology to produce the best quality wine at the best prices for all those who share a love of wine.

Vinkara’s tale dates back to the 1960s when the group purchased land in the Kalecik region in Ankara. Venture into viniculture began in 2003 with the cultivation of vineyards in Kalecik. Today, Vinkara has vineyards and production facilities on 160 acres with a capacity of produce 1,040,000 liters of wine.

In 2008, Italian wine producer and oenologist Signor Marco Monchiero joined our group.

The microclimate created as result of the mountains surrounding the Kalecik terrain, makes it one of the most important centers for viniculture in the world. This climate characteristic is the same as that of the regions around the world where Merlot, Cabernet Sauvignon and Pinot Noir grapes are cultivated. The air hits the mountains as it rises, creating hot weather in the valley and rain in the plains. Our vineyards are approximately 650 meters above sea level and in close proximity to Kızılırmak. Because there is a big difference between day and night temperatures, the grapes cultivated in Kalecik have a distinctive taste and aroma.

The most prominent grape cultivated carries the name of the region: Kalecik Karası. The aromas of Kalecik Karası wines are not strong with just the right level of tannins with a soft finish.

60% of Vinkara’s vineyards are allocated to Kalecik Karası grapes as the priority, but other Anatolia grapes along with world class grapes are cultivated.

Vinkara as a dynamic wine company for the first time in Turkey produced a sparkling wine by traditional method from Kalecik Karası (Blanc de noir) named Yaşasın. The objective of the company is to present this special grape “Kalecik Karası” to international wine lovers.

In Vinkara’s short history, Vinkara products have won Grand Gold medal at the 2011 Mundus Vini (Germany), Gold Medals at the 2011 and 2012 Selections Mondiales des Vins (Canada), Gold Medals at the 2013 Mundus Vini (Germany) and 2013 Concours Mondial Bruxelles (Belgium) competitons.

Yazgan family is one of the oldest wine producers in Turkey. The company was founded by Mr.Huseyin Yazgan in 1943. It has been four generations since this family carries its wine production in Izmir which is located in the Aegean region of Turkey. Today Yazgan family continues the business with the help of modern technology but also making use of the traditional way of wine production.

With a yearly approximate production capacity of 7.5 million liters, Yazgan is among the largest producers in Turkey. To produce such a volume, Yazgan has established strong partnerships with various grape suppliers all around the country and purchase the best quality grapes from every region such as : Öküzgözü from Elazığ, Boğazkere from Diyarbakir and Emir from Nevsehir. These are the autochthon grapes of Turkey which make the Turkish wines so delicious and unique. These grapes have preserved their specifications over centuries.

In order to complete his range, Yazgan has also his own vineyard planted in Turgutlu, 40 km in the east part of Izmir. Facing the hills around them, the vineyards of Yazgan, are planted with some of the most prestigious grapes: Cabernet Sauvignon, Merlot, Cabernet Franc, Syrah, Chardonnay and Sauvignon Blanc. Cultivated with French practices adapted to its specific “terroir”, the grapes give over there our premium wine. Today, Yazgan offers a full range of wine which will satisfy the expectations of wine lovers.

GENERAL SECRETARIAT OF ISTANBUL EXPORTERS’ ASSOCIATIONS

General Secretariat of Istanbul Exporters’ Associations (IEA), which began to operate in 1940 with the foundation of Istanbul Cereals Pulses Oil Seeds Exporters’ Associations, operates under Ministry of Economic Affairs. There are seven associations under (IEA-IIB)’S roof, operating in seven different sectors.

These associations are:

• Istanbul Fresh Fruits and Vegetables Exporters’ Association• Istanbul Wood and Forestry Products Exporters’ Association• Istanbul Cereals Pulses Oil Seeds and Products Exporters’ Association• Istanbul Hazelnut and Hazelnut Products Exporters’ Association• Istanbul Aqua and Animal Products Exporters’ Association• Istanbul Dried Fruits and Products Exporters’ Association• Ship and Yacht Exporters’ Association The main activity of General Secretariat of Istanbul Exporters’ Associations is to implement the rules and regulations of export procedure designed by Ministry of Economic Affairs. In addition, the General Secretariat serves to assist, motivate and drive exporters to reach new markets, prepare them future developments and help to increase their sales as well as raising the quality of their products. Some of the tasks and functions of General Secretariat are to make studies and research activities with the aim of harmonizing the production and export potential of Turkey with the requirements of importing countries, to organize courses and seminars, to arrange trade missions in abroad, to make exhibitions, to participate fairs, and to perform other duties given by Ministry of Economic Affairs. Also, General Secretariat transmits the changes of trade flows and informs the exporters about the current developments within the foreign markets.

General Secretariat contains wide range of companies dealing with export of commodities such as cereals, pulses, confectioneries, canned food, and seafood products, paper based packaging materials, furniture and so on.

One of the main duties of the General Secretariat is to organize the national participation of Turkish companies to the international exhibitions.
