We bring you all kinds of information about several different types this sweet treat, from bundt to sponge. • Ancient Egypt was home to the world’s first large-scale bakeries, which were the first to use yeast to make cakes rise before baking them on hot stones. To the ancient Romans, cake meant a small bread, as there was no sugar, and honey was an expensive commodity. • Cake-baking underwent a dramatic change in the mid-1800s. Previously, yeast was used as a leavening agent, but yeast was replaced with the introduction of baking soda and baking powder, both of which are greater raising agents. Temperature-controlled ovens also contributed to increased success. • Flour is classified by its protein content. The higher the protein, the harder the flour. All- purpose flour has a protein content of 10-11 percent and is a good choice for cookies. Bread flour’s content is much higher, 15 percent, and is not suitable for cakes. Cake flour’s protein measures 7-8 percent, and its low gluten content makes it a perfect choice for delicate cakes. • Sponge cake uses only eggs, sugar and flour in its preparation, with no fat or leavening. Veterans Treatment CourtVeterans who have Post-Traumatic Stress Disorder (PTSD) sometimes act out and

commit crimes as a result of their mental-health issues.

Veterans Treatment Court was developed as an intermediary stop for veterans who would have

ended up incarcerated for their crimes. VTC works in conjunction with local Department of Veterans Affairs facilities to decrease the

number of veterans who become involved with the justice system and divert them to mental-

health treatment. In areas that are on board with the VTC program (most major metropolitan areas are), when a veteran is arrested for a

non-violent crime that was committed due to substance abuse or mental health issues, the veteran is sent to Veterans Treatment Court.

In VTC, eligible veterans receive mental-health assessment and treatment, likely through the VA. While in treatment, which might include

weekly visits to the court to check in, the judge will watch progress. Once the treatment is

finished, the original charge can be reduced or dismissed. Any failure on the part of the

veteran -- drug use, for example -- can lead to punishment such as fines, re-arrest or jail time.The VTC program isn’t only about intervention with the justice system. Help also is available

for housing, transportation, job training and search, and medical and mental-health

treatment.Another program, Veterans Justice Outreach, centers on assisting veterans whose mental

illness led to the commission of crimes. Rather than jail, each veteran is assigned to a justice outreach specialist at a VA medical center for assessment, treatment planning and referral.

The specialist coordinates with the court system and also may train local law enforcement

about dealing with veterans who have PTSD or traumatic brain injury and provide services to

• On March 28, 1979, the worst accident in the history of the U.S. nuclear power industry begins when a pressure valve in the Unit-2 reactor at Three Mile Island in Pennsylvania fails to close. As engineers struggled to understand what had happened, the reactor came within less than an hour of a complete meltdown.

I signed up for a small plot in our community garden. It was a big step, going public this way. While others can grow glorious mounds of colorful flowers, my past attempts had humble results that were best relegated to pots on the porch.

For the second year, the local land trust has divided up one of it properties and made small rectangles of land available at a low cost to seniors who want to garden. I was able to select my own site -- near one of the faucets and the hose.

For those of us who don’t have a green thumb (as I apparently don’t), the land trust is holding a series of weekly gardening classes, designed to help us get the most out of our little plots of dirt.

Different types of mulch, how to understand the three numbers on the labels of fertilizer, planting seedlings versus seeds, soil pH, staying organic -- all are topics we’re learning about.

This weekend I went to the community garden and located my plot. It’s weedy and flat, with cold, hard-looking soil. It was used last year, so I assume all the rocks are gone, but still, I wondered: How am I going to transform it into a space full of beautiful flowers?

I made my decision while standing there looking at the weeds. I won’t grow flowers. I’m going to grow vegetables for the two homeless shelters near me and for the food bank. This time my attempts to succeed with a garden will be different: The land trust will provide hands-on help and advice.

I hope the food bank is prepared for a deluge of carrots, beans and tomatoes.

Well Confused, if I may call you that. I will put it this way, I used to think the same thing as you. I did all my workouts at home, no people, no driving, no memberships, no trainers, no hassle, no one on my machine I wanted to use etc.... it was perfect......so I thought. Yes there was none of that stuff, but I was only getting so far in my progress. I still wanted to better my health, physique and all around feel good. I mean that is why we workout right? Feel good, look good and be happier.So instead of joining a gym, I got a job at one. Immediately I found out why a gym is so beneficial to a person. The Gym is away from your work and home surroundings a chance to get away for your time. The lifelong friendships that are made and built at a gym. The accountability you have to someone or a class that you have committed to take. and the biggest is the accountability to yourself. And that’s why I became a trainer. I wanted to help better peoples lives and prove their self worth to themselves. Like I tell all my clients “ you drove here, you bought the clothes for here, you made time for here, you paid for here......so while you are here lets make it worth it.

So in closing, DVDs, at home machines and magazines vs friendships and results that you can be proud of? Why is the gym worth it, cause above all, YOU are worth it.

THE CHANNEL TUNNELConsidered one of the SevenWonders of theModernworld,theChannelTunnel,orChunnelas it is commonly called, links England andFranceunderneaththeEnglishChannel.Learnmore about this engineering accomplishmentthattakestravelersthroughtheworld’slongestmarinesubway.• The idea of an undersea tunnel betweenEnglandandFrancewasconceivedasearlyas1802.AFrenchminingengineerenvisionedapassagewaylitbyoil lampsandservicedbyhorse-drawncoaches.Theproposal includedan artificial island midway as a stop forchanginghorses.Severalplanswerepresentedover the next several decades, but itwasn’tuntil1988thattheactualexcavationbegan.

• Construction commenced in 1988 andconcludedin1994.Threeofthoseyearsweredevoted to the actual boring of the chalkyearth beneath the sea. The boringmachinesspanned the length of two football fieldsandcouldbore250feet(75m)aday.Thereare actually three tunnels, two ofwhich arefull-sized, large enough to accommodaterail traffic. Between these two train tunnelsis a service tunnel, a smaller tube that is anemergencyescaperoute.During thepeakofconstruction,15,000workerswereemployed.

•TheChunnelbridgesadistanceof31.4miles(50.5km)betweenFolkestone in theUnitedKingdomandCoquelles,France,nearCalais.The tunnel actually runsunderwater for 23ofthosemiles.BoringmachinesworkedfromboththeEnglishsideandtheFrenchsideina race to the middle, a contest won by theBritish. The tunnel’s average depth is 148

feet(45m)belowtheseabed,withitsdeepestpointat250feet(75m).

•Onthedayoftheofficialdedicationceremony,England’sQueenElizabeth traveled throughtheChunnelonaEurostartrain,whileFrenchPresident Mitterrand traveled from Paris.Theirtrainsstoppednosetonoseaspartofthefestivities.Overthenextsixyears,12millionpassengersutilizedthenewrailservice.Lastyear,closeto10millionpeoplerodetherailsundertheEnglishChannel.

•TheChunnelcertainlycouldn’tbeconsideredaneconomicalventure.Itwasoneofhistory’smostexpensiveconstructionprojects,carryingapricetagof$21billion,(about700timesthecostofSanFrancisco’sGoldenGateBridge!),80 percent above the forecasted budget,and taking over a year past the estimatedcompletiondate.Theprojectclaimedthelivesof10workers,eightBritsandtwoFrenchmen.

• Since its opening, there have been threemajor fires in the tunnel, producing seriousdamage.Oneyear intooperation,31peopleweretrappedinafire,buttheservicetunnelproveditsworth,asallpassengerswereabletoescape.Inaddition,therehavebeenotherincidents when passengers have becometrappedbyelectricalfailures.Onesuchfailurekeptpassengersstrandedforsixhours,whileanotherincidenttrapped20,000undertheseaovernight.

• The average ticket price on a EurostarpassengertrainfromLondontoParisisabout$200 for a trip that takes two hours and 20minutes.About 30,000 people ride the traindaily.

Here come higher gas prices -- again. No one should be surprised. These things run in cycles. Yes, prices are generally higher in spring and summer -- when we all need more gas for vacation -- and go down in the winter. If you don’t get good gas mileage, consider whether it’s time to buy a more efficient, economical vehicle. You won’t be alone. The sale of small and compact cars has increased in the past year. One automaker reported that sales of its small cars increased by 40 percent. Another reported an increase of 43 percent.Decide, too, whether the vehicle you buy should be considered your “last” one. In other words, buy as though the vehicle will be the last one you’ll ever own -- and then drive it for the length of its useful life. The idea is to keep driving the car long after it’s paid off. Keep up with all scheduled maintenance to extend the life of the car. A payment-free vehicle is a nice thing to own. Besides not making a hefty monthly payment, the older a vehicle is, the lower the taxes and insurance.If you’re going to trade your car in, invest in a detailing package so it looks its best. At the very least, run it through a carwash and spring for the wax.These basics of saving on gas apply to whatever type of vehicle you own:--Keep your vehicle tuned. Not being at peak

performance means it is going to use more fuel. Keep an eye on the tire pressure as well.--Plan and combine your errand trips around town. --Carpool, if you can, or take public transportation at least a few days a week.For more ideas on saving on the cost of fuel, see the website by the U.S. Department of Energy: www.fueleconomy.gov/feg/gasprices. DEAR PAW’S CORNER: We make sure to pick up after our dog, both when out for a walk and in the yard, which keeps the neighborhood and our lawn looking good. We store the collected excrement in an open box by the garage, daily, and then dispose of it each week in the trash. However, since this past summer we have been finding wood roaches -- two outdoors on our deck and three indoors. Could our disposal routine be attracting these roaches? -- Cindy in Michigan

DEAR CINDY: A bit of research gave me some insight into wood roaches, and I am reasonably sure that your disposal method is not causing the infestation -- and in fact, you may not have a big problem.Wood roaches are very different from the German cockroach (a tough-to-eradicate house pest). They live and breed outdoors. Homeowners most often see them in the warmer months, between May and October, according to colonialpest.com. Their breeding season is in May and June.Most wood roaches enter through small cracks or

openings in a home, but they can sometimes be carried inside with firewood or other items that are stored outdoors. They’re also attracted to lights and can sneak into the house that way.Wood roaches can’t breed indoors and usually can’t survive in an indoor environment. You can shoo them outside in most cases, rather than using pesticides to kill them. They’re actually beneficial to the woods and wild areas around your home, although they are unsightly. So, as long as your dog’s droppings aren’t causing an odor problem that bothers your neighbors or attracts other pests, your collection and storage methods are probably OK.

Don’t Get Carried Away ... Yet

Early in every season, it’s easy to get carried away. The season has 34 more rac-es. Even Jimmie Johnson, who left the Daytona 500 (pending appeal of NAS-CAR penalties) with minus 23 points, has 24 races to make the Chase.

As if to prove the lunacy of drawing early conclusions, Johnson came back to fin-ish second in the season’s second race. He had crashed after one lap at Daytona.

Matt Kenseth, of course, won the 500 for the second time.

In 2009, Kenseth won the 500 and followed it up a week later with a victory in Fontana, Calif. He failed to win again that season and missed the Chase for one of only two times in his career. This time the second race was at Phoenix Internation-al Raceway, and Kenseth finished 13th.

Denny Hamlin took the Sprint Cup point lead by winning Phoenix’s Subway

Fresh Fit 500 a week after he finished fourth in the Daytona 500.

Even though it’s early yet, Hamlin was ecstatic about his early momentum, espe-cially since he is coming off a bit of a down year.

“Huge momentum,” Ham-

lin said. “We’ve never been in this position this early in the season. We’ve always struggled. We’ve always taken our time — five or six races in — before we hit our stride.

“He (crew chief Darian

Grubb) made me a winner today.”

Ah, Darian Grubb. He was Tony Stewart’s crew chief last year. In fact, Grubb was fired by the reigning cham-pion. He moved to Joe Gibbs Racing, Toyota and Hamlin. As a result, dating back to

the 2011 Chase, the winning crew chief in six of the last 12 races is ... Grubb.

Not that the drivers, Stew-art and Hamlin, didn’t have a lot to do with it, mind you.

Stewart is off to a slow start. Remember, though,

that he barely made the Chase last year, and his per-formances didn’t take off until the Chase, when Stew-art won half the 10 champi-onship-deciding races.

In short, it’s way too soon to start drawing conclu-sions.

Goodell the Bounty Hunter

When some entity wants to bury a story, it usually makes an announce-ment late Friday afternoon in the hopes that nobody will notice dur-ing the weekend when news con-sumption takes lower priority. Last Friday’s announcement by the NFL, however, will have legs.

According to the results of an NFL investigation, the New Orleans Saints defense operated a cash pool that paid “bounty” payments for plays made the previous game. The investigation is said to have shown that the total amount of funds in the pool may have reached $50,000 or more at its height during the 2009 playoffs. The program paid players $1,500 for a “knockout” and $1,000 for a “cart-off,” with payouts dou-bling or tripling during the playoffs.

NFL Commissioner Roger Goodell said the investigation began in 2010 after allegations were made that Saints defenders had targeted Arizona Cardinals quarterback Kurt Warner and Minnesota Vikings quarterback Brett Favre during New Orleans’ 2009 run to the Super Bowl.

“They went beyond what was nor-mal in regards to when they were going to hit me or how they were going to hit me,” Warner said about the scandal.

Former quarterback Brett Favre said he wasn’t upset about the boun-ty program.

“It’s football, and I don’t think anything less of those guys,” Favre told media. “I’m not going to make a big deal about it. In all honesty, there’s a bounty of some kind on you on every play.”

Former Giants linebacker Law-rence Taylor would agree. He was the guy who snapped Joe Theis-man’s leg and said he didn’t con-sider any tackle a sack unless the quarterback was left on the ground “blowing snot bubbles.”

Eli Manning, the Giants two-time Super Bowl MVP said the scandal disgusted him, though.

“It’s not good for football and can’t be part of football.”

But it was part of the NFC Cham-pionship game, bounty or not, and worked well for the Giants. The Giants forced two fumbles from 49ers punt returner Kyle Williams, who had a history of concussions, which Giants players said they were aware of. “We were just like, ‘We gotta put a hit on that guy,’” Devin Thomas, the special teams player who recovered both fumbles, said after the game. “[We] did a great job hitting him early, and he looked kind of dazed when he got up. I feel like that made a difference and he coughed it up.”

Hockey has its enforcers, baseball pitchers will brush you back, and basketball players will give you a hard foul if you’re running up the score. Make a good play in college or Pop-Warner football games and they give you a sticker.

Expect to see a bunch of players knocked out of the game before the NFL spring meetings. It’s a billion-dollar game and nobody wants to see it turn into “The Longest Yard” every Sunday. In the meantime, keep an eye on the defense.
