Fifty Shades of Chocolate - DarkerIt’s time to reaffirm our love affair with all things chocolate, savoury and sweet. Come and join Fifty Shades of Chocolate creator Chef/Culinary Instructor John Bela for the second chapter of his chocolate trilogy, as chocolate is about to get heated again! This evening, Chef John’s objective is to demonstrate the versatility of dark chocolate as a culinary ingredient that provides a wonderfully rich depth of flavour. Your savoury journey will begin with a Dark Chocolate and Exotic Mushroom Mille-feuille (layered puff pastry), and continue with Chef John’s signature temptation Mussels. The main entrée is a Black Pepper and Cocoa Nib–Encrusted Tenderloin with a Chocolate and Port Sauce, White Chocolate Mash and Asparagus with Cocoa Nibs and Shredded Prosciutto. We are all aware of the allure of chocolate as a sweet component. Our evening together concludes with a decadent Chocolate Soup with a floating meringue island. $35

Sleeman Brewery: Cooking with Beer (Interactive)From notorious beginnings to a legendary resurrection, the Sleeman family upholds five generations of brewing heritage. Sleeman Brewery, Guelph’s oldest and most Notorious Brewer is coming to the Loft. Sample their lineup of award winning brews while Damien Smith from the brewery prepares beer-infused food items. Try Sleeman’s line up of beers including their Sleeman Railside Session Ale, Sleeman Original Draught and Sleeman Honey Brown, all while learning about the history of Guelph’s oldest brewer and how to incorporate beer into your cooking and meal preparation. Damien will be preparing Maple and Brown Sugar Beer Nuts, Bacon and Cheddar Rustic Beer Bread, and for dessert, decadent Beer Brownies. Cheers! $25

In this hands-on baking class, cookbook author Charmian Christie will share tips and tricks that will have you whipping up decadent pastries with confidence. $30

Cooking with Guinness Stout There is more to do with Ireland’s beloved stout than just drink it. This evening, Chef/Culinary Instructor John Bela will create a menu that will make you want to eat your Guinness. Chef John will use the distinctive flavours of this iconic stout to create a multi-course meal, including Cheddar and Guinness Soup served with a Corned Beef Grilled Cheese with Guinness Caramelized Onions. The journey continues with a delectable Beef and Guinness Stew with Guinness-Braised Potatoes. Dessert is chocolate Guinness goodness: a beautiful Chocolate and Guinness Pudding with a Guinness cream made to resemble a poured glass of the iconic stout! Not just for St. Patrick’s Day. $30

Mexican Mango, Chicken & MoreMexican-Hungarian cooking instructor Hendrik Varju will take you on a Mexican culinary feast, starting with a delicious Pico de Gallo featuring mango, red onion, jalapeños and lime juice served with tortilla chips. The main feature is Chicken served with the most amazing pumpkin seed Mole Verde, a green sauce you’ll want to sop up with your Mexican White Rice Pilaf. The Louisiana Kitchen Tonight we head back to the kitchens of New Orleans where Chef Jim Comishen continues his never-ending journey to bring classic Southern cooking to the kitchens of Canada. We start with a rich and creamy Snow Crab and Corn Chowder finished with heavy cream and chives. Next it’s the classic Sausage, Blackened Shrimp, Red Beans and Rice as a great main. For dessert a decadent Chocolate, Banana, Pecan and Bourbon Bread Pudding with bourbon sauce and whipped cream to satisfy any sweet tooth. $30

Hungarian Comfort Food Hungarian-Mexican cooking instructor Hendrik Varju will bring you some very traditional Hungarian comfort foods you’ll easily be able to duplicate at home. He’ll start you off with an appetizer known as Lecsó, featuring sautéed sweet peppers, onions, tomatoes and garlic cooked with paprika and spicy Hungarian kolbassa. From there you’ll enjoy a traditional Hungarian Chicken Soup, which easily serves as a meal with pieces of chicken, super thin German noodles, carrots, celery, onions and spices.
