THE WINE LIST Our wine list offers wines from around the world which we hope will give pleasure, interest and possibly excitement. Wine may be becoming too complicated for its own good and often the best advice we can offer is to keep it simple. Systematic vintage notes are not given. With the help of the wine media we have become obsessed by vintages to an extent that we risk ignoring wonderful wines at reasonable prices just because a wine pundit has told us that they come from a vintage that only gets 3 glasses on a scale of 5, 6 points out of 10 or similar. There are always some successes in even the most difficult years and some poor wines in the very good ones. For this reason there is an old adage that there are no good vintages, only good bottles. A rare and exciting find produced by the highly revered Maurizio Zanella, leader of the Italian wine renaissance of the early ‘70s, whose wines were the earliest and still remain the best expressions of the Franciacorta region. A blend of 70% Chardonnay, 17% Pinot Nero and 13% Pinot Bianco, to which no added sugar is used at the dégorgement stage. The result is a perfectly balanced, elegant palate of damsons, yeast, vanilla and minerals to rival the complexity of any Champagne.

The grape varieties used here are Sémillon and Sauvignon Blanc. Sémillon provides ageing potential and at maturity, when well made, wines of great aroma and finesse, lacking recognition therefore often good value. White Burgundy provides the best Chardonnay based wines in the world and, come to that, the best dry white wines in the world. Even within this one area the range of styles is astonishing and shows how well this grape expresses the enormous range of terroirs on which it flourishes. Some of these wines may, or even must, be drunk young. The greatest may require many years of cellaring. As with red Burgundy, the quality of a given vintage should not be confused with that of Bordeaux..

The style of Chablis may vary greatly depending on the use of barrels for fermenting and ageing the wine. Louis Michel and Jean Durup are notable exponents of the stainless steel approach, producing wines of the purest fruit aromas and minerality. Tribut vinifies in oak barrels and the result is an enriching underpin of vanilla and other flavours derived from the oak. The Grand Crus are lightly oaked, discreetly increasing the density and complexity of the wine.

The wines of Alsace have appealing fruit flavours and drink well with food. The names can be confusing, despite the use of grape varieties and quality levels are not as easy to define as other appellations. However, the general quality is good so you have very little to fear. R E D B O R D E A U X – (Claret)

Bordeaux has come in for criticism recently and seems to be in a permanent state of crisis! It remains however the greatest fine wine area in the world, both for size and for the variety of its production. A few names are enough to make the point: Latour, Margaux, Cheval Blanc, Pétrus, Yquem, Haut Brion Blanc…

Much of the production is in fact far less prestigious than this and a great deal of it, despite the received opinion of New World buffs, is very good indeed, and above all very good value for money. A new generation of wine makers is at work: mainly young, technically accomplished and committed, the proponents of a style more in tune with the times, suppler and fruitier than that lean, tough old Bordeaux that has been swept off the shelves by Australia and the rest. Not everyone can wait 10 to 15 years before opening a bottle nor do they necessarily want to pay the price entailed.

At The Peat Inn we are searching out the producers of excellent lesser Bordeaux, buying direct from the vineyards when we can. We shall of course continue to offer the great wines in their mature prime.

For convenience Burgundy is used in the sense of ‘Greater Burgundy’, to include Beaujolais and other, much less well known wines, which we shall be introducing in the future.

Burgundy vintages suffer from confusion with those of Bordeaux, with which they have little in common. Despite a run of recent low yielding harvests and the inevitable ensuing price rises we have still managed to source many well-crafted wines at something like reasonable prices. We offer many of the established top producers of the region as well as some of the stars of the future such as Roblet-Monnot, Dureuil-Janthial and Arlaud whilst their prices are still affordable!

R H Ô N E

The Rhône wine region is really two: in the north, below Vienne, the vineyards constitute a narrow band, the vines tucked discretely behind clear boundaries on spectacularly vertical slopes. The restrictive landscape explains the rarity of the finest wines – Hermitage, with a total of 120 hectares and Côte Rôtie with 197, more or less entirely made from the Syrah grape. In the south, after 60km of vineless valley, the vineyards spread everywhere across a more accessible landscape. Most of the vast production of the regional appellation Côtes-du-Rhône comes from the south while ‘top end’ production is assured by Châteauneuf-du-Pape. Ten grape varieties are in common use, the most important of these being Grenache, Mourvèdre and Syrah and no fewer than 23 are allowed

Vineyards here date back to Gallo-Roman times. The principle grape of Madiran is Tannat which gives a natural astringent character to the wines. However modern appellation rules allow the use of Cabernet Sauvignon and Cabernet Franc resulting in wines with more density and charm. The winter freeze of 1956 destroyed all but 1% of the vines in Cahors and with this clean slate the growers overwhelmingly planted Malbec (known locally as Auxerrois) which now must constitute 70% of the finished wine, the remainder being Tannat and Merlot.

Sweet wine is very adaptable and may be drunk with enjoyment throughout a meal, provided the dishes are appropriate: terrines, foie gras, white fish in cream or butter sauces, white meat, blue and hard cheeses and some, but only some,

desserts. Sauternes and its relatives are usually thought of as dessert wines but this only works if the dessert is not too sweet, in fact it must be less sweet than the wine. If it is not (Christmas pudding for example!) the flavour of the wine is killed and all you perceive is its acidity. This is important but not what you have paid for.

As the uses of sweet wines are not well understood, such wine is not as expensive as it should be, especially given the difficulty of making it and the small amount you end up with. In short they are very good value, often revelatory for those unfamiliar with them and generally great enhancers of a meal. We therefore list quite a few, some familiar, others fabulous and little known rarities, to suit all pockets. Please ask for advice on degrees of sweetness and suitability for different dishes.

C a d i l l a c This area, along with Loupiac and Sainte-Croix-du-Mont, is just across the Garonne from the Sauternes district and enjoys the same micro-climate. The best wines can be better than many Sauternes and are certainly cheaper. La Bertrande is one of these and the Summum really is the top. Only 1500-2000 bottles are produced each year, it has been eulogised by the Figaro, has astounded the Meilleur Sommelier du Monde and is regularly rated with 1er Cru Sauternes in blind tastings – and here it is in Fife, thanks to our contacts with the Château!

The 1995 is very sweet and unctuous, a true dessert wine. The 1998 is concentrated, elegant and aromatic whilst the 2002, an outstanding year with perfect conditions for Botrytis, has great complexity and length.

S O U T H E R N R H O N E & A U D E – Vin Doux Naturel Vin Doux Naturel is made by blocking the fermentation by addition of alcohol. The result is a lightly fortified wine. Muscat should be drunk young, while the rich, complex bouquet suggesting lemon and roses is intact. The French drink this sort of wine as an aperitif. In contrast Rancio wines have been subject to controlled oxidation over many years by exposure to the weather in barrels without topping up.
