he eighth edition of The Vine magazine is bursting with the latest fashion, products and produce available this season at Burnside Village.

Autumn/winter 2013 has seen the introduction of lots of great winter colours, such as earthy browns,

creams and plums. Our stylist encapsulates these tones in the Natural Wonder editorial, which was shot at the beautiful Barristers Block Winery.

For the men, the monochromatic colour palate reigns supreme, with blacks and greys back in the spotlight. For the working pair, our City Limits fashion shoot on page 50 showcases a huge range of suits and workwear that can easily be transitioned from desk to dinner.

For the little ones, there is plenty of colour and prints to liven up the cooler months. To match the eccentric fashion, we took our tots to the circus for a great themed photoshoot, which you can find on page 61.

To wear, or not to wear, that is the questionFrom a complete wardrobe overhaul to finding the perfect outfit for a special occasion, Sina Lauren can help you find your fashion footing.

From general advice on trends, to full wardrobe edits, the new Burnside Village stylist can make discovering the right outfit look easy.

“I don’t see myself as being an image consultant, I’m not here to judge, or to analyse, I’m here to help you feel great and find pieces you love,” Sina says.

“And knowing what suits a person is not just about body shape, I take into consideration personality and taste, amongst other things, and getting to know the client is the first step.”

The process starts with a series of emails and phone calls, and when it comes time to meet with Sina, you don’t have to worry about being wrapped up in a tape measure: “The ‘Trinny & Susannah’ way of doing things is really not my style! I only take measurements if you wish and there is absolutely no pressure; I think the whole

experience should be about discovering your style, not about critiquing.”

After Sina creates a client profile, it is time to hit the shops and then back to the uber-luxe style suite.

The Laura Ashley-decorated ‘fashion retreat’ features plush carpet, silk taffeta drapes, comfortable velvet armchairs and bevelled-edge mirrors; the perfect setting for pampering.

“I love the styling room, it is beautiful and there is plenty of space for a group of friends to relax with a glass of Champagne for a fashion forecasting session,” Sina says.

“It’s also not uncommon for my clients to purchase a styling session as a gift, or come back each season to set their wardrobes up for the year; it really does save them time and money.”

There is also the opportunity for parents to book in their teenagers, who typically do not take kindly to mum and dad telling them what to wear. “It’s a great way to give teens advice about what to wear for their body shape and also show them ways to outfit themselves in the latest trends,

without looking too grown up or revealing.”Aside from having the ability to hold

the attention of a group of teenagers, Sina says one of the most surprising things is how little you have to buy to have a range of looks to suit almost every occasion.

“It’s about making smart choices and transforming and individualising classic pieces with the use of accessories. And if I can help my clients create their own sense of style, educate them on what suits them and they have a great time doing it, then I’ve done my job.”

How to:

Perfect wave

Getting startedWash then treat your hair with a nourishing mask. Visit your stylist for a cut if your ends are looking frazzled. Comb the hair out.

A low part is on-trend and will give a sophisticated and elegant finish; use the corner of your eyebrow as a guide, taking the comb through your hair as though you’re using a pencil to draw a straight line back.

Rebuild the moisture level in your hair and protect it from the heat with a hazelnut-size amount of serum, then apply two tennis ball-size amounts of styling mousse.

Curling up When curling, start at the nape of the neck and work up using a heat-protective spray. Place a comb at the base of the root of the hair as you wind hair around a curling wand, so you don’t burn yourself. If you have very long hair, use pin-curl clips to hold the hair in place.

Drying off Use a round brush to blow dry your hair straight; the size of brush depends on your hair length and type, so ask your stylist for advice. When drying, take horizontal sections around the head and make sure the blow dryer is angled down for a smooth finish.

Finished product Use a hairspray or serum to add shine and hold. For an asymmetrical look, hairspray and pin the hair to the side, or braid the hair to one side, starting above your ear, for an edgier take on a classic wave.

Brush out Use a large-tooth comb, combing from the nape of your neck, working back up. Then, don’t be scared to brush the curl to give a smooth finish; you can always reinforce and re-energise sections with the curling wand if you want more of a wave.

This season, Zara has adopted a fresh take on the timeless pairing, combining classic style with a modern twist.

Black and white was seen all over this season’s runways: in stripes at Marc Jacobs, spots at Diane von Furstenberg and a mix of leather detailing and textured fabrics in Alexander Wang’s debut for Balenciaga.

Using the catwalk for inspiration, the speed at which the black and white trends appear on the Zara shop � oor is astonishing, the affordable price-tag even more so.

Know your illness Both colds and flus are caused by viruses that can change with the season. Cold symptoms include a sore throat, runny nose, dry or moist cough, headache and mild fever. Flu is more severe, including muscle aches, severe lethargy, high temperatures, body shivering, profuse sweating and a dry cough.

Watch what you eat Eat natural foods: think lots of fresh, seasonal fruit and veg, lean cuts of meats, nuts and seeds, free-range or organic eggs. Aim to drink at least two litres of good quality water a day and limit tea and coffee, which strip the body of water and essential nutrients – especially minerals. Both bacteria and viruses love to feed off of sugar, so reduce your refined carbohydrate intake (biscuits, cakes, chocolate, soft drinks and fruit juice.) If you still need a sugar hit, try using stevia or xylitol as natural sugar alternatives.

Supplements Vitamin C with bioflavonoids helps reduce symptoms and colds and flus and mops up free radical damage within the body during illness. Zinc stimulates 100 enzymatic responses in the body, inhibits virus growth and improves the immune system. Vitamin D keeps the immune system strong: aim for two to three hours of sun exposure a week on face, arms and hands during winter or opt for a vitamin D supplement. Probiotics with cultured and fermented foods such as coconut and tempah will enhance immunity and help the body fight viruses and infections. Olive leaf extract has powerful antioxidants and helps treat upper respiratory tract infections and may reduce fever in adults and children. Take echinacea at the beginning of winter: it increases the body’s white cell count and helps fight bacteria and viruses. Garlic is known for its cold-fighting properties because of its antiseptic, anti-fungal and nutritive properties. Astragalus is a restorative food and medicinal plant that strengthens immunity.

Whole roasted chickenOne of the difficulties with roasting chicken and other white meat birds is that the delicate breast meat tends to dry out in the hot temperatures. This area is especially vulnerable if you use the classic approach of roasting at an initial high temperature to caramelise the skin. My method avoids this problem altogether. I caramelise the skin in foaming butter on top of the stove before quickly roasting the bird in the oven at a medium heat. While the bird rests, I prop it upright and pour the roasting juices and butter into the cavity. This allows all the wonderful flavours and juices to be absorbed back into the breast meat. I guarantee that this will be the tenderest, most flavoursome chicken you’ll ever eat.

Preparation time: 10 minutes + resting time Cooking time: 35 minutes Serves 2

1.2–1.5kg chicken salt and pepper200g butter1 bunch thyme5 garlic cloves1/3 cup (80ml) vegetable oil

Preheat the oven to 190ºC. Rub the chicken inside and out with salt and pepper. Place half the butter inside the cavity with the thyme and garlic.

Heat the oil and remaining butter in a large heavy-based frying pan over a moderate heat. When the oil is hot and the butter foaming, place the chicken in the pan and start to brown it. Baste continuously and turn the bird over in the pan so it caramelises evenly all over. When it’s a lovely golden brown – and this should only take a few minutes – lift the chicken onto a rack or trivet in a heavy-based roasting pan. Roast for 45 minutes or until cooking juices run clear from the thickest part of the chicken, basting from time to time with the pan juices.

Remove from the oven and carefully transfer the chicken to another roasting tray, so that the cavity is pointing skywards. Pour all the roasting juices into the cavity, cover loosely with foil and leave in a warm place to rest for 5–10 minutes before carving. Serve with your choice of accompaniments.

Tip The original recipe calls for poussin (baby chicken); we have adjusted the cooking times and measures to suit a small, regular-sized chicken. If you have an 800g poussin, use 120g butter, 4 garlic cloves and 50ml vegetable oil and roast for 25 minutes; rest for 5–10 minutes.

Red mullet ‘en papillote’ with fennel and aromaticsRed snapper can also be used in place of mullet. The recipe calls for clarified butter, which can be heated to higher temperatures than regular butter and is easy to make (see instructions below).

Preparation time: 20 minutes Cooking time: 15 minutes Serves 4

50ml olive oil4 shallots, finely sliced1 fennel bulb, finely sliced1 pinch saffron4 fennel seeds6 coriander seeds2 star anise8 small whole red mullet or small red snapper, cleanedsea salt1 lemon, finely sliced50ml clarified butter

Preheat the oven to 190ºC. Heat the oil in a heavy-based saucepan. Add the shallots, fennel and saffron and sweat over a low heat until soft and translucent, about 5 minutes. Season well.

In a small frying pan toast the fennel seeds, coriander seeds and star anise for a few minutes until aromatic. Tip into a mortar and use the pestle to crush them roughly.

Cut out 4 rectangles of baking paper, around 21cm x 30cm. Spoon some of the shallot-fennel mixture onto each piece and top with 2 red mullet. Sprinkle on the crushed spices, season and arrange a few lemon slices on each fillet.

And now for the origami. Bring the 2 longest sides of the paper to the centre over the fish and fold together neatly a few times. Fold up the two short ends. Flip the parcels over onto a baking tray to make neat parcels, with the folds underneath. Brush with clarified butter and bake for 15 minutes. The bags will puff up and become golden and glazed.

Remove from the oven and carefully lift the parcels onto serving plates. For maximum effect, serve straight away; the bags will start to deflate as soon as they are removed from the oven.

Red mullet ‘en papillote’ with fennel and aromatics.

Duck legs braised with port, orange and thymeRich and zesty, this duck braise is delicious served with sarladaise potatoes (thinly sliced potatoes and thyme baked in duck fat) or sweet and sour white turnips (simmered with chardonnay vinegar, thyme, garlic and sugar).

Preparation time: 20 minutes + marinating time 24 hours Cooking time: 3 hours Serves 4

½ onion1 carrot1 celery stalk3 garlic cloves, roughly crushed200ml portzest and juice of 2 oranges 6 sprigs thyme4 duck leg quarters*20ml vegetable oilsalt and pepper1.5L chicken stock**

Cut the vegetables to a rough mirepoix (a rough dice) and put them in a saucepan with the port, orange zest and juice and thyme. Bring to the boil, then remove from the heat and allow to cool slightly. Pour over the duck legs and mix well. Allow to cool at room temperature, then cover and refrigerate. Leave to marinate for 24 hours.

When ready to cook, preheat your oven to 110ºC. Tip the duck pieces and vegetables into a colander to drain, reserving the marinade. Set aside the vegetables and herbs and pat the duck pieces dry. Heat the oil in a heavy-based casserole or braising pan and fry the duck until browned evenly all over. Remove from the pan and set aside. Add the reserved vegetables to the pan and fry until browned all over. Add the marinade to the pan and bring to the boil. Return the duck legs to the pan and season.

Meanwhile, bring the duck stock to a gentle simmer in another pan. Add the hot stock to the braising pan and bring it all to a gentle simmer. Skim, taste and adjust the seasoning to your taste. Cut a piece of baking paper to the size of the pan to make a cartouche and place on the surface. Cover tightly with a lid and transfer to the oven. Braise for 3 hours, checking and turning every 30 minutes or so. At the end of the cooking time the duck should be tender and should come away from the bone easily.

Remove the duck pieces from the pan and keep warm. Strain the

braising liquid through a fine sieve then bring to the boil over a high heat. Cook until reduced to a syrupy sauce consistency. To serve, place the duck pieces in warm bowls and ladle over the hot sauce. Serve with your choice of accompaniments.

Duck is best served immediately but will keep in a sealed container in the refrigerator for up to 5 days.

Roast rib of dry-aged beefThis is a classic roast, starting at a high temperature to caramelise and brown the surface of the meat, then cooking further at a lower temperature. I like to rest the beef inside the oven, after it’s been turned off. The residual heat keeps the meat warm without further cooking. The times specified are for medium-rare.

Preparation time: 5 minutes Cooking time: 1 hour Serves 4

2kg beef rib roast, at room temperaturesalt and pepper80ml vegetable oil

Preheat the oven to 220ºC. Season the beef all over with salt and pepper and rub the surface of the meat and fat with oil.

Place the beef on a rack or trivet in a roasting tray. Roast for 20 minutes, then lower the temperature to 180ºC and roast for a further 30 minutes.

Turn off the oven and leave the beef in the oven for a further 10 minutes to rest.

Remove from the oven, carve and serve with your choice of accompaniments.

Roast rib of dry-aged beef.

Champagne chiboust

Serve with seasonal fruit or frozen raspberries and raspberry coulis (raspberries and sugar syrup blitzed in a blender to a smooth purée).

Preparation time: 10 minutes Cooking time: 10 minutes + 4 hours setting time Serves 4

5g gelatine sheets210ml milk2 egg yolks20g cornflour120g sugar3 egg whites50ml Champagne

Soak the gelatine in a large bowl of cold water for 5-10 minutes to soften. Drain and squeeze out as much excess water as you can.

Combine the milk, egg yolks and cornflour in a heavy-based saucepan and add a tablespoon of the sugar. Bring to a simmer, whisking continuously.

Place the egg whites in a scrupulously clean electric mixer with the rest of the sugar and whisk to soft peaks.

Dissolve the gelatine in the hot milk, then quickly whisk in a third of the meringue and all the Champagne. When completely amalgamated, gently fold in the remaining meringue and spoon into a piping bag.

Arrange 4x8cm pastry rings on a tray. Pipe the chiboust into the rings then transfer to the refrigerator to set for about 4 hours.

When ready to serve, remove the chibousts from the refrigerator and toast the surface of each with a small kitchen blowtorch, so that they resemble toasted marshmallows. Carefully unmould and place on the centre of dessert plates. Serve straight away with your choice of accompaniment.

Caramelised chocolate pots

Allow to cool for 5 minutes before serving so that the caramel layer will harden to a crisp, crunchy layer.

Preparation time: 10 minutes Cooking time: 40 minutes Serves 4

500ml milk20g unsweetened cocoa powder100g liquid glucose100g best-quality dark chocolate, grated4 egg yolksDemerara sugar

Preheat your oven to 180ºC. Stand 4 x 120ml dariole (cylindrical) moulds, ramekin dishes or coffee cups in a deep roasting pan. Put the milk, cocoa and glucose in a heavy-based saucepan and bring to the boil. Remove the pan from the heat and stir in the chocolate until melted and smooth. Allow to cool. Stir in the egg yolks, then strain the mixture through a fine sieve.

Pour the mixture into the prepared moulds. Pour enough cold water into the roasting pan to come halfway up the side of the moulds. Cover loosely with foil and bake for 15 minutes. Lower the heat to 160ºC, remove the foil and cook for a further 20 minutes.

Remove from the oven and allow to cool for about 20 minutes; the creams will still be quite wobbly. When ready to serve, sprinkle the surface of each chocolate pot with a thin, even layer of Demerara sugar. Caramelise the surface with a small kitchen blowtorch until the sugar melts to a shiny caramel glaze. If you don’t have a blowtorch, preheat an overhead grill (broiler) to its highest setting. Place the brûlée on a baking sheet and slide it under the heat, about 5cm from the heat. Watch to make sure it doesn’t burn.

Be transported to another world with South Australia’s only traditional Chinese tea ceremony at the Shanghai Tea House.

T he art of drinking and serving tea is an ancient cultural tradition throughout China and you can experience it with a trip to Shanghai Tea House.

Owners Suping Li and Vince Rigano say they wish to give diners a unique and authentic Chinese experience through the ceremony, as well as with an all-day dim sim/yum cha–style menu.

“The art of drinking and serving tea plays a major cultural role in China; it inspired poetry and song and the mutual love of tea cements lifelong friendships,” Suping says.

Vince adds: “For centuries, the ritual of preparing and serving tea has held a special place in the hearts and minds of the Chinese people and we wanted to bring it to Adelaide. We’re actually the only place in Australia performing the ceremony.”

The attentive waiters can help you match your tea with your food, which includes yum cha favourites such as steamed pork buns, dim sum, spring rolls and shallot pancakes as well as a range of main dishes, including wasabi prawns, black pepper steak and pan-fried salmon. There is also a wide range of vegetarian options available.

“What we’ve tried to do, and I think we have achieved it, is create a healthy alternative to traditional yum cha, which we often identify with deep frying,” Suping says.

“The Shanghai style has an emphasis on steaming; freshness is the key and we wanted to keep the traditional Chinese flavours, rather than the more Westernised dishes you can often find.”

All of the dishes are prepared on the premises from scratch and the fresh menu is complemented by the relaxed yet stylish setting.

There are both outdoor and indoor seating options available, and inside, two large booths can accommodate anywhere between six and 12 people – the perfect backdrop for the tea ceremony.

Since their opening in December, the response from the public has been extremely positive. “Our regulars come back once or twice a week and I think the response has been so good because of a combination of the freshness of the food and the experience of finding accompanying teas,” Vince says. “We’re really trying to create an alternative to the coffee culture and we would like to think we’re helping to bring a new tea culture to Adelaide!”

Begin your day at Cocolat with a gourmet breakfast of heavenly smoked salmon crêpes with crème fraîche, perfectly garnished with a drizzle of lime.

For your mid-morning caffeine kick, head to Cibo Espresso or perhaps indulge with a vanilla gelato espresso-doused affogato. A fresh cannoli will give you the extra energy for shopping!

When the clock ticks over midday, tempt your tastebuds at Utzi Espresso with a lunch of spicy maple-roasted beetroot and ginger soup or a mouth-watering char-grilled pumpkin and caramelised onion open focaccia topped with goat’s cheese.

For afternoon tea, satisfy your sweet tooth with a visit to the Village Baker to indulge in their spicy fruit loaf and butter pudding, soaked in a vanilla and citrus custard.

Or perhaps head to VP’s for a fresh citron tart, with perfectly sweet white icing and decadent lemon cream.

If you’re after something a little lighter, head to Wendy’s for their classic banana bliss or mango delish smoothies, full of real fruit goodness.

For a more substantial snack, or an early, light dinner, the delicious teriyaki salmon bento box from Umi Sushi may take your fancy. The thinly sliced salmon sashimi, served with sides of Japanese avocado salad and rice, was rumoured to be a favourite of Robert Pattinson during the filming of The Rover.

For later, visit Pasta Deli to take home one of their delicious lasagnes – in beef, chicken or vegetarian – with a fresh salad. And grab some crusty bread to go with it from Baker’s Delight.

For dinner, H by Felici offers delectable dishes with a Mediterranean touch. For dessert, try their yummy salted caramel tart. Or share yum cha and a tea with friends at the Shanghai Tea House.

Each step of the tea ceremony ritual is a sensory exploration and appreciation and is conducted with accompanying stories about its cultural significance. Here is a simplified, step-by-step process.

Snacks are provided to complement the tea tasting.The presenter shows guests how to smell the tea aroma from the empty thimble cup before tasting the tea.

The first pour is discarded; it is used to ‘wash’ the tea and the tea cups.

A wooden ring is placed on top of the pot and tea is added to the pot.

The ceremony conductor presents the tea to guests and asks them to see the colour and smell the aroma of the tea.

Water is heated to around 95ºC and is used to wash and heat the teapot and cups.
