Hygiene

MF-hamburg focuses on hygiene and food safety with continuous optimisati-on of our equipment for easy access and secure handling.

As far as possible, our machines and components automatically undergo self-cleaning throughout production. As an option the product line, „R“ is offered with an integral robotic cleaning addition.

All other components of the MF-hamburg equipment are easily accessible for cleaning, offering the highest comfort level. The production run is therefore minimally impacted and operators are at no risk of injury.

The STARCOAT enrobing lines are designed to the highest hygiene standards, ensuring an efficient coating operation and production of high quality finished products using chocolate, compound, icings, caramel or any other type of coating. Mass Change

The STARCOAT series is specially designed for quick change-overs in one machine.

The removable trough is available with optionally integrated tem-pering system (integrated tempering with Model UMT) as well as a bottom wave system and coating station. Designed to be removable, they can be easily wheeled to the cleaning area by means of a specially designed service trolley. During this procedure, the coating trough can be connected to a heated docking station and thus remain ready for operation immediately after re-assembling.

The filtration system for the coating process can be cleaned or exchanged during operation and therefore ensures:

• Uniform curtain• Prevention of an unwanted chocolate build-up• Smooth operation of the subsequent process steps

Cleaning Process

The STARCOAT Series allows for an easy and time-saving cleaning, due to the “Easy Clean System” that reduces to a minimum the interrup-tion of the production’s process.

After shutting down the system you can remove the bottoming stati-on and the coating station and transfer these onto a service trolley to be wheeled to a wash-down area. Other components such as the detailer shaft, blowing station can be also be removed and placed on the service trolley. To wash the machine you can replace the removable chocolate pump with a wash-out trolley that is equipped with a high pressure water pump and hose with spray nozzle, to wash down the wire mesh belt and other sections of the machine.

Cooling technology

STARCOOL cooling tunnels are an integral part of the STARCOAT enrobing technology. They can also be used for the pre-cooling of bars and other products in the confectionery and food industries. Accurately adjusted process parameters ensure an optimum integrity and stability of the product even under the most demanding conditions.

STARCOOL cooling tunnels are 100% modular and available in stan-dard working widths of 420mm to 2000mm and combined to the pro-duction length specified. In addition to the traditional cooling tunnels, we offer solutions for high cooling performance requirements as well as multi-level cooling tunnels.

MF–hamburg uses radiation cooling as well as convection cooling, which can be applied independently. All cooling tunnels are fitted with water cooled bottom plates, which can also be temperature con-trolled along the zones. Special attention is given to meet the need for uniform air distribution, speed and temperature throughout the entire working-width.

MF–hamburg’s cooling tunnels are fabricated from stainless steel. Hoods are easily opened from both sides, which allows for easy inspec-tion and cleaning of all the tunnel zones, parts and aggregates. Tunnels are fitted with air filters for elimination of dust particles leading to higher reliability and hygienically produced finished products. An air drying system can be supplied upon request.

Tempering

Chocolate has to solidify with the right crystal configuration to obtain high gloss, delicate melting characteristics, good contraction, and desi-red color. This is accomplished by exposing the chocolate to precisely controlled cooling and heating steps while simultaneously homoge-nizing the chocolate. Once stabilized, the chocolate can be used for enrobing, decorating and molding.

Being the first determining factor for every chocolate process, tempe-ring machines set the foundation for a perfect product. MF-hamburg’s tempering machines are equipped with a pre-crystallization stage which complements and enhances the Starcoat enrobing machines for chocolate coating. Furthermore, Starcoat enrobers can also be used to apply compound, nougat and other types of coatings that are common-ly used in the confectionery and other snack food industries.

All types of Tempering Machines

Plate-TemperMF-hamburg’s Plate-Temper is a high capacity tempering machine

made for tempering different chocolate-masses and cocoa-butter. The throughput of the temperer is infinitely adjustable in order to adapt it to the requirement of production‘s process. The Plate-Temper can be also equipped with an Aeration-System to produce aerated chocolates or compounds.

Nougat-TemperThe MF-hamburg Nougat-Temper is designed for tempering high

The Startemp Series

The STARTEMP tempering machines fulfill all requirements with regard to hygiene, quick cleaning and coating changeover. They can be set up as stand-alone units or as integrated tempering machines inside MF-hamburg’s enrobers. The integrated tempering systems are mounted on tracks, a patented solution, so they can be wheeled to an external docking station or to a wash-down area. Simultaneously the remainder of machine is kept free for access.

Our STARTEMP family for chocolate tempering and compound conditioning equipment is available for capacities from 100 to 3,000 kg/hr to match the whole range of our STARCOAT enrobers.
