The Stable holds its values close to its heart and we believe in working with good, honest people; be it local farmers, chefs, bar staff, electricians or even commercial property finders. We’re a small team who rely heavily on the skill and craft each individual brings to The Stable.

Sourcing only the finest local produce, the food we place on our pizza peels defines us. Whether in Bristol or Bridport, we source top quality fresh ingredients from suppliers local to each specific restaurant.

At the original Bridport Stable for example, pizza toppings include bacon from Denhay Farm, the famous Dorset Naga chilli from West Bexington and cheese from Ford Farm in the Bride Valley - all produced within six miles of the restaurant. Pizzas are named after local icons; the smoked mackerel-topped ‘Joe Gundry’ after a legendary local net-maker and the vegetarian ‘Bucky-Doo’ after the town square.

As well as our pizza menu, we offer baked eggs straight from the oven for breakfast, and a lunch deal consisting of smaller pizzas and wraps.

On top of this, we stock more cider than you can shake your tail feather at. It’s no secret that we are passionate about

our cider. We love it. As a result, we offer a huge variety of over 80+ types and we champion real cider made by small scale orchards who are always creative with their apples.

Last but not least, we give our customers an unforgettable experience. They are the heartbeat of the business and without them we wouldn’t be doing this. From the moment a customer walks in, they are smacked in the face with The Stable charm. From the long communal tables, the stripped back approach to the building and the curated music that reflects the mood and time of day, all are individual elements designed to encourage interaction, sharing and conversation.

Our open kitchens flaunt our passion for quality produce and our belief in cooking everything from scratch. The salivating scent of freshly baked dough wafts through the space. Our ‘order at the bar’ system takes away the awkward group bill. And finally, there’s the sheer volume of beautiful cider on sale.

Reclaimed wood is sourced from around the country and used throughout and original features are lovingly restored. The long wooden tables and benches are custom made for each site by our furniture maker in Dorset. The interior lends itself to banquet seating in nooks and crannies, or to create a feature, and leather hides are bought in Somerset and stitched in Dorset.

Interior accessories such as the signature green pendant factory lamps are sourced from around the country and Amish stars come from America.

The design team create striking wall art centred around the locality, the suppliers of the ingredients and the cider. The signage, menu cabinets and wall art are all bespoke to the venue and are created to complement the environment and building style. With direction from the design team, craftspeople employ traditional methods to create gilded lettering and hand painted way-finding signage.

Each Stable venue is considered to be an interesting building architecturally or historically and is fitted out by a skilled team of carpenters, plasterers, painters and designers who have been involved in The Stable since its conception in 2009.

Over eighty varieties of the good stuff can be found at each restaurant and no two Stables will stock exactly the same range. Seasonal variations mean the cider list is constantly changing but always includes local varieties from small-scale producers as well as some favourites from around the country. There’s always something new to try!

As part of their training, bar staff visit a cider orchard to learn about the process of cider making. All are passionate about the tipple, meaning they can impart their wisdom to customers.

Sometimes the huge variety can be a little overwhelming to cider newbies. Luckily our popular cider tasting board helps with that. Five different 1/3 pints are carefully selected by the Stable cider experts and presented with a Cider Tasting Card which includes the name of the cider, apple variety and location, giving a little bit of cider education.

There’s more to cider than the big brands and The Stable is on a mission to champion the lesser known greats of the cider world.

Since then they have grown organically and opened new restaurants across the South West. Richard is a constant force of energy who pushes The Stable to be the best it can be.

Delivering perfection every time is his goal. He’s very much a people person and has a huge amount of respect for craftspeople and the local economy. We think The Stable is somewhat a reflection of Richard: warm, welcoming, rough around the edges and built to age well.

Nikki’s impeccable taste makes her the head of all things visual – she dreams up our interiors, colour palettes, floor plans and fixtures working closely with our designers and craftspeople. Nikki plays a lead role in hiring our terrific staff.

Her invaluable experience as the owner of a boutique hotel means she’ll be keeping a close eye on the purse strings and making sure we always offer great value to our customers.

Richard and Nikki Cooper opened their first restaurant in a former stable block at the back of their Bridport hotel in 2009.

The story began in 2006 when Richard and Nikki Cooper took on the mammoth challenge of transforming a former 16th century coaching inn into a thriving boutique hotel. During The Hotel’s revival they discovered the beautiful old stable block, which looked so far beyond repair they left it vacant for years.

When Richard’s brother Andy returned from his travels, they came up with the idea to turn the space into a cider house, serving gourmet Dorset pizzas unlike anything else. In 2009, after a whole lot of hard graft, The Stable was born.

After a very successful launch, the Weymouth venue opened in 2011 right in the heart of the town. Spread over two floors, it looks out over the picturesque working harbour and is nestled directly above the Harbour Master’s office on Custom House Quay. Another roaring success had been created.

In Summer 2013, The Stable Bristol opened in the heart of the city, right in the thick of things on Bristol’s Harbourside. The space was stripped right back to its

bare bones. It’s a warehouse beauty with exposed (previously hidden) brick walls, a very old terracotta floor and striking metal supports. An open kitchen spans almost the entire length of the building. This was the real game changer. Opening in close proximity to huge national chains was a gamble that paid off and we’re now one of the busiest restaurants in the city.

In Autumn/Winter 2013 Bath and Poole came in quick succession. Bath is in a smaller and more intimate location in the old Hole in the Wall on George Street. It has an open fire and plenty of nooks and crannies. Over two floors, The Stable on Poole Quay features exposed beams and an open kitchen.

In April 2014, The Stable opened up on Fistral Beach, Newquay. With breathtaking, panoramic views over one of Britain’s most famous beaches, it is the most scenic Stable to date.

Our basic requirements are simple:

• Prominent and interesting location

• Between 3,500 and 5,000sq ft

• Outdoor seating • Unique adjacencies

Ideally we would like to take sound buildings in shell condition so that we can focus on the interior and complete a quick fit out. We will consider landmark buildings, new developments and renovation projects if the terms and conditions are suitable.

We’re in a position to close multiple deals quickly and without hesitation.
