IN THE Vineyardwith Director of Winegrowing Eric Pooler Spring is underway here in Sonoma Valley. Rainfall, attributed to the El Niño pattern this winter, continues to quench parched vineyard soils as shoots begin to emerge from grapevines on the North Coast. Although pruning was more of a challenge while dodging rainstorms, we were thankful for each drop that fell. As various growing regions met or exceeded their annual rainfall averages, depleted aquifers were replenished and stressed vines were rejuvenated. While the much needed rainfall has been a blessing, moderation is of crucial importance to growing high quality grapes. If soil moisture persists into late spring, vegetative growth can explode. Vigorous vegetation can disrupt flowering and cluster formation which may result in unbalanced vines.The decisions we execute in spring lead to more balanced growth in the vineyards throughout the growing season. This year, cover crop seed mixes were tailored to blocks in anticipation of vigor, to compete with vines for water and moderate vegetative growth. Should soils remain moist into summer; blocks that have been cultivated in previous years will remain under cover crop throughout the growing season Additional fruit buds (disposable canes) were left on robust vines to serve as sinks and spread energy in a more balanced manner. If growth appears to be on track post fruit-set, we may choose to remove them in order to focus energy on primary growing points for the remainder of the season. Every vintage is different and variation is what keeps life in the vineyard interesting. As the season unfolds we will adjust our practices to steer the vines toward fantastic wines!

Garden UPDATE With Garden Manager, Joe Papendick, DeLoach Vineyards

After three dry years, the wet and mild winter rejuvenated the drought stressed landscape. Spring is here, and the California native plants around DeLoach have exploded with purple, red, yellow, and blue blossoms which are providing an early source of nectar and pollen for native and domesticated pollinators. During the window of dry, warm weather in February, the garden team

seized the opportunity to plant a rotation of onions, leeks, potatoes, lettuce, and parsley. The artichokes and fava beans that have stood quietly through the winter are beginning to show signs of promise as their buds develop. The timing of garden projects dances with the weather this spring. As the wonderful wet spells feed the foliage, any work, or even walking on the garden soil when it is saturated, can lead to compaction. Watching the different species of weeds germinate helps indicate the soils temperature. When the wild mustards and grasses sprouted in February, we planted beets, radishes, and broccoli. As the soil warms and amaranth appears, the tomatoes will be transplanted; when the purslane arrives, the soil will be ready for the hot season crops (melon, squash, and zinnias). We look forward to sharing the bounty of the garden with you this spring.

Directions:Cut asparagus into 2” pieces. Set aside 1/2cup tips for garnish. Heat olive oil in a soup pot and sauté onions about 5 minutes with 1 t salt and a pinch of pepper. Add potatoes and 1cup stock, cover and cook about 10 minutes. Add asparagus and remaining stock and cook uncovered about 15 minutes. Purée soup in a blender until smooth and add orange juice and dill. Season to taste with salt and pepper. Blanche asparagus tips and shock with ice water. Garnish soup with a swirl of crème fraîche, a few asparagus tips, or chopped chives.

Thin crème fraîche with orange juice as needed. Add zest & a dash of salt. Serves 6-8.

ASPARAGUS SOUP WITH ORANGE CRÈME FRAÎCHE

Ingredients:Soup:6c organic vegetable stock3 lb asparagus, trimmed1 T olive oil2 c yellow onion, thinly slicedKosher salt & white pepper1 potato, peeled & thinly sliced

1/2 c fresh orange juice1 T fresh dill, chopped

Orange crème fraîche: 1/2 cup crème fraîche or substitute sour cream2 T fresh orange juice1/2 t minced orange zest
