the question:Is it better to close at a particular time of the month?

the answer:There are differing opinions on this topic. Many lenders will tell you to close at the

end of the month so that you have to pay less in per diem interest for the money

borrowed from the bank. However, if the extra cash out of pocket is not the

biggest concern I would recommend closing at a slower time of the month as

your lender and closing attorney will not be as busy. This will help in getting you

the closing date and time you want and should make the whole process less

stressful. Of course, if you are a cash buyer then timing is not a big issue, but I

would still pick a time of the month other than the end so as to not be caught up

with those getting loans.

“The kitchen can be chaotic and it can be

challenging to keep food safety top of mindwhen dealing with a whole holiday meal,from turkey to trimmings,” cautions ShelleyFeist, Executive Director of the non-profitPartnership for Food Safety Education.

According to the U.S. Centers for DiseaseControl and Prevention, one in six Ameri-cans will get sick from dangerous foodbornebacteria this year. But these crucial safetytips can help you create a safe and tasty hol-iday celebration:

CleanPrevent the spread of bacteria by keeping aclean kitchen and washing hands.

Cutting boards, dishes, utensils and countertops should be washed with hot water andsoap after preparing each food item, andbefore going on to the next. Keep plenty of

clean cloth towels or paper towels handy forcleaning surfaces and drying hands.

Enforce a strict hand washing policy for allholiday kitchen helpers. Use warm waterand soap for 20 seconds before and afterhandling food.

Rinse fresh fruits and vegetables under run-ning tap water just before eating or prepar-ing. Rub firm-skinned produce under run-ning tap water or scrub with a clean veg-etable brush while rinsing with running tap

water.

SeparateCross-contamination is how bacteria spread.Keep raw meat, poultry, seafood and eggsand their juices away from ready-to-eatfoods, like salad ingredients. Using separatecutting boards is one way to reduce oppor-tunities for cross-contamination.

CookTemperature matters! Bacteria can survive iffoods aren’t cooked to a safe internal tem-perature. Even an experienced cook can`ttell if food is cooked safely by how it looks,so use a food thermometer to ensure you’recooking turkeys, ham, egg dishes and otherfoods to a safe internal temperature. ChillThe holiday celebration is great -- and evenbetter if you have delicious leftovers. Justremember to enjoy them within four days.

Bacteria spread fastest at temperaturesbetween 40 and 140 degrees Fahrenheit, sochill food promptly -- within two hours -- ata refrigerator temperature of 40 degrees orbelow. Appliance thermometers are inex-pensive and can help you monitor yourrefrigerator’s temperature.

Bring on the BirdLearning how to cook a turkey safely may beone of the biggest holiday meal challenges.Never thaw your turkey on the counter.Turkeys are best thawed in the fridge. Soallot plenty of real estate to your turkeybefore your celebration. If you’re going tostuff your turkey, stuff safely. Cook stuffingto a minimum temperature of 165 degrees,whether inside or outside of the bird.
