Challah, cakes, cookies and other bakery items now fi ll cases at Ellie’s Waffl es, Smoothies, and

Sweets, thanks to a renovation of about $60,000.

When Lax & Mandel Bakery in South Euclid closed its doors in May 2015, Linda Ross and her husband, Jim, decided to fi ll the vacuum by adding a bakery to their candy shop – actually using the cases from the Lax & Mandel Bakery for their store.

“Our customers were asking us if we’d ever consider baking, and of course we had to listen to our custom-ers,” Ross said.

All of the baked goods and candies are made on site with organic products, including chocolate imported from Italy. Everything is also non-dairy, to cater to lactose-intolerant customers.

“You would never know it, because it’s all delicious,” Ross said.

Some of their specialties include chocolate-covered caramel corn and cakes – ranging from a 3-inch cake to

sheet cakes to wedding cakes.“We really do care about our custom-

ers, we really want it to be the best,”she said. “If I wouldn’t eat it or give it to my family, I’m not going to give it to somebody else.”

Fun and business go hand in hand for the Ross family. Before opening their bakery and candy shop two years ago, they focused on an entertainment busi-ness called The World of Magic. Jim Ross is a magician and the pair provide infl atables and “fun food machines.”

The pair continues to run their entertainment business along with the cheery, orange and yellow shop, and of-ten hold parties at their facility at 14486 Cedar Road in University Heights.

“We wanted to come up with a place that was still fun,” Linda Ross said. “More than just an eatery. We try to bring the fun factor to it too.”

Bloom Artisan Bakery opens downtownBloom Artisan Bakery & Cafe, the fi rst social

venture for nonprofi t agency, Towards Employ-ment, has opened its doors.

Bloom Bakery will provide training and jobs to individuals with barriers to employment. The bak-ery supports Towards Employment’s goal to create a pathway out of poverty for all of its graduates.

Bloom Bakery will offer breakfast pastries, New York-style bagels and European artisan coffee, along with a lunch menu that includes sandwiches, soups, salads and desserts.

Bloom Bakery offers free delivery to corporate customers in the Public Square area, with week-day hours from 6 a.m. to 6 p.m. and Saturdays from 7 a.m. to 6 p.m.

The bakery is at 200 Public Square in Cleveland between US Bank and Starbucks, with entrances on Euclid Avenue

Rustic tables and pizza and an open concept kitchen will greet customers at the new 56 Kitchen when it opens by the end of April on Aurora Road in Solon.

Fans of the owner’s other restaurant, 56 Cafe in East-gate Shopping Center in Mayfi eld Heights, have to come to expect a menu made up famously of 56 salad choices. But owner Jay Leitson’s newest creation is taking a slightly different direction.

The new location will have some of the same salads available, but its big features are entrees like seared salmon, rigatoni and cheese and rustic pizza. What makes a pizza rustic? It’s in the honey wheat dough and fl our, Leitson said.

This is a sit-down version of Cafe 56, but Leitson is

staying true to his roots, with earthy decor like 150-year-old farm tables.

The kitchen is connected to a bar and stands out in the open. Bartenders work right with the chefs, Leiter said, and customers can sit either at the bar or the kitchen.

“We’re trying to create a more unique dining experi-ence, not just sitting at a table and ordering food and it coming out of a kitchen,” Leitson said. “Everything is very visible and you can see everything being made.”

Where possible, the restaurant will use local re-sources for its ingredients, and plans to keep everything organic, he said.

The new space at 33857 Aurora Road got more than a new coat of fresh paint – it was pretty much gutted, with new fl oors and walls.

“It’s going to be visually nice and rustic and warm with a lot of herbs and plants,” he said.

A $500,000 renovation will include a 5-foot expansion to the west that will make for a slightly wider dining room, according to Larry Shibley, a partner in the Chagrin Falls-based chain.
