The Ingredient House has partnered with Renmatix to offer a breakthrough food ingredient called NouravantTM Maple Fiber to the North American market.
NouravantTM Maple Fiber is a multifunctional ingredient that is created using brand new technology.
It has the ability to act as an emulsifier, humectant, and texturizer.
Trials have been done to show efficacy in applications including baked goods, dressings and sauces, meat products, vegan meat analogs, and dairy products.
The unique process that produces Maple Fiber utilizes plant materials and supercritical hydrolysis to create a hydrogel that is clean label, allergen free, and completely plant based.

NouravantTM Maple Fiber is unlike any other ingredient on the market, because it is 100% natural and clean label, is produced through award winning green innovation, is multifunctional, and has the ability to replace multiple ingredients.
NouravantTM Maple Fiber is a brown viscous liquid with approximately 17% solids and an average particle size of 1 micron.
It is completely plant based and vegan as well as allergen free and gluten free.
Since its debut in June 2019, new grades including powder and a beige hydrogel have been in development.

The Plantrose® Process is a first-in-kind technology innovation developed to convert raw biomass into foundational ingredients & sustainable products. This is a patented process with 115+ patents granted.
When water is in its supercritical state, it possesses the properties of both a liquid and a gas. Using water at this condition allows the ingredient to be pulled away from a plant without the need for acids/bases or similar.
Maple Fiber is derived by using supercritical water to extract cellulose and lignin from plant materials like Red Maple wood.
This clean technology won the 2015 Presidential Green Chemistry Award.

NouravantTM Maple Fiber is a concentrated hydrogel that works with water being added to it. It is most effective when recipes are balanced to accommodate its addition, and it does not typically function as a drop in replacement.
Each application system is different, and will vary in ratio of NouravantTM and water that is needed to get the desired effects.
For an egg replacement1. One whole egg = 50g (38.5g water)2. A NouravantTM substitution will equal 38.5g of water.3. Substitute 10g of NouravantTM which is 17% solids
(approx. 8.5g of water) and add 30g of additional water.
