Does this year seem to be flying past at light speed? Perhaps the older you get the faster life passes you by! When you live in Wine Country the passing of me, and par cularly the seasons is made so much more visible by the life-cycle of the grape vine.

No sooner have the hoards of travelling pickers departed and the wine makers retreated to the depths of their cellars to work on this years vintage, than the leaves are dropping and we prepare to welcome the pruners!

Autumn is a spectacular me of the year to visit the Hunter Valley. The veritable pale e of earthy tones cover every hillside and the days are s ll warm and sunny...perfect for al fresco dining.

If Adventure is more your style then the Hunter Valley, and this issue of The Hunter Blackboard is for you!

Squeezing in an adventure ac vity or two during your stay here isn't too difficult to achieve. The main ingredient for these ac vi es is wide open space—and we have that in abundance.

If you’re fond of keeping your feet on the ground and enjoy a more tradi onal wine country adventure

group (which can be an adventure in itself!)

For those who would rather see wine country from above there’s a plethora of ac vi es from the adrenalin pumping ac on of sky-diving to flying over the vines in a helicopter or floa ng peacefully in a hot air balloon while watching the sun ascend over the horizon.

For those who missed it the first me around, now is your chance to catch the Alice Springs Beanie Fes val on a second na onal tour. Due to the demand for beanies, more beanies (one can never have too many) and the outstanding success of the first tour of the Alice Springs Beanie Fes val exhibi on—“Colours of the Country”, Artback NT are proud to be touring another fabulous exhibi on. The beanie is an icon of Australian headwear and has been celebrated by the Alice Springs Beanie Fes val since 1996.

This collec on of beanies from the Alice Springs Beanie Fes val demonstrates the growth of the beanie as an art form over the years and the imagina on, crea vity and fine cra smanship presented in each piece. This colourful exhibi on encapsulates the whimsical essence of the Beanie Fes val. The collec on also highlights the works produced by Indigenous ar sts from the Central Desert region who are regular collaborators in this cross cultural event.

A rac ng contributors from around Australia and overseas, beanie makers compete in events like “Australia’s Flashest Beanie.” An exhibi on embraced by a broad cross sec on of the community, the collec on will inspire audiences to laugh, don crazy headwear and bring out those kni ng needles all over again.

Colours of the Country II officially opens at the Cessnock Regional Art Gallery on Wednesday 3rd April at 6pm and runs un l 12th May 2013.

Anzac Day marks the anniversary of the first campaign that led to major casual es for Australian and New Zealand forces during WWI. It’s an important anniversary to commemorate, but more than that, it is the day we remember all Australians who served and died in all wars, conflicts, and peacekeeping opera ons.

HIT THE ROLLER RINK... AUTUMN HOLIDAY FUN!

This April school holidays, Hunter Valley Gardens is turning into an Autumn Playground with a massive, brand new Roller Ska ng rink and a Lego Play Zone! From April the 13th un l the 28th families are invited to come along and experience fun for all ages. Along with these feature ac vi es we have our treasure hunt, Storybook jumping castle and the HVG Express train ride all happening during this fantas c event.

Roller Ska ng Rink – 10.00am – 4.20pm - Families will have a blast zooming around our brand new Roller Ska ng Rink. Once you choose either inline or roller skates you can groove around the rink to some funky disco music and lights. For the beginners the rink will have a barrier around the edge or you can use one of our ska ng frames to help you get going. Each session runs for 20 minutes and is included in the Garden entry cost.

Lego Play Zone – 10.00am – 3.30pm - Li lies will enjoy building and crea ng, whilst older children can simply build or play against each other in a Lego board game, race each other to build a model in the Speed Zone or challenge themselves on the Nintendo DS Lego Star Wars game.

Treasure Hunt – 9.00am – 5.00pm—Search for a hidden Autumn leaf in each of our 10 themed gardens and then write down the le er next to the correct riddle on the back of your program. When you have collected all the le ers it will spell a secret word. Kids who

complete the hunt will receive a special treat.

Storybook Garden Jumping Castle – 10.00am – 4.00pm - Let the kids run wild in the Storybook Garden themed jumping castle. It’s so much fun the parents will have to hold themselves back from joining in. $3.00 per child.

Hunter Valley Gardens Train - All aboard the Hunter Valley Gardens Express to experience the breath taking gardens in a unique way that the kids will love. This is a 40 minute guided train tour and is $7.00 per adult, $5.00 per child or $20 per family (2 adults and 2 children). Book at Garden Entry on arrival.

BITTEN BY THE BALLOON BUG Flying Cameraman

Graeme Scaife, Chief Pilot and Owner of The Interna onal Balloon Company and Balloon Alo , has been flying hot air balloons for well over 20 years and with so much experience always has a story to tell - making for an entertaining flight.

Graeme first worked as a feature film cameraman un l he was bi en by the ballooning bug in 1984 when one of the early promo onal hot-air balloons flew over his house in the countryside outside London. He had never seen one in the air before and was instantly thrilled and determined to learn to fly one.

Although this was early days for commercial flights and a me when operators were not allowed to charge money for individual joy flights, Scaife soon bought a hot-air balloon and before he had even got his licence, had already persuaded contacts at Kodak into sponsoring his balloon in return for branding rights.

Graeme, who is now a resident of Australia, soon became one of the first commercial balloon operators in Europe, has a commercial instructor ra ng and has flown on every con nent except the Antarc ca, building up thousands of hours of ballooning experience.

By 1988 he was ballooning across Australia with 70 other balloonists - including the late adventurer Steve Fosse - for the Australia’s Bicentennial.

Since then he has shared the air with Sir Paul McCartney, Phil Collins, bands Madness and Pink Floyd and many others he has flown on joy rides. He and son Ma say they never get blasé about the expression on people’s faces once they’re up in the air.

It’s very much a family affair with son Ma and wife Nicola also pilo ng flights in Australia. Nicola is the youngest female commercial pilot in Australia.

Graeme now runs one of the world’s busiest ballooning companies ''The Interna onal Balloon Company'' and in November 2007 purchased Australia's premier balloon company Balloon Alo .

Since providing the very first passenger flights in Australian in 1980, Balloon Alo is Australia’s longest opera ng ballooning company and flies approximately 7,000 people each year in Australia and this year celebrates more than 30 years of flying. In the UK, Graeme’s company also trains balloon pilots.

“People are so relaxed and it all seems a breeze, but it’s really quite technical and requires a lot of concentra on on the part of a pilot,” says Ma .

HOT-AIR BALLOONING about FACTS • The first flight in a hot-air balloon was made in Paris in

October 1783 by French scien st Jean de Rozier in a balloon made by the Montgolfier brothers.

• Balloons are basically bags filled with a light gas or hot air both so light that the balloon floats in the air.

• Balloons designed to carry people through the air are of two types: hot-air balloons and gas balloons filled with hydrogen or helium.

• Hot-air balloons have a burner that fills the balloon with warm air to keep it afloat.

• Balloons are normally launched at dusk or dawn when the air is quite calm.

• As the air in the bag cools the balloon gradually sinks. To maintain height, the balloonist lights the burner to add warm air again.

• To descend the balloonist pulls a cord to let air out through a vent at the top of the balloon

Margaret Bancro owns and operates Hunter Valley Horse Riding & Adventures. She’s born & bred Hunter Valley and has a love of horses that she has also managed to turn into a thriving business. We asked Margaret about her life & her love of all things equine.

How long have you been living in the Hunter Valley? Have you always been in Lovedale? I was born in Cessnock Hospital and grew up at the original Lovedale Property on Lovedale Road. This property was purchased from the Love Family when the wine industry had died in the early 1900s and with my Dad coming from Yorkshire, he named the property “Lovedale” .

I have retained my interest in Lovedale all of my life and 17 years ago I opened the property known as Hill Top to the public with accommoda on and horse trail riding.

Did you grow up with horses or was riding a passion that came to you later in life? There have always been horses around me. As a young child my Dad had many humorous stories to tell me of his experience delivering the milk from our dairy at Lovedale to Cessnock by horse and cart. The rela onship with horse and man goes back a long way and horses have been responsible in opening up Australia since first European se lement. They have been used in many wars and used for producing crops and food for na ons. For transport of supplies and for pleasure and spor ng events. We have a lot to thank the horse for. They are a strong and powerful animal and at the same me will bond with a human and go out of their way to please.

Why do you think horse riding is such a great experience? When riding you are close to nature. You can ride close to the kangaroos and ca le at Hill Top as they are use to each other and graze happily together and there is no be er way to see the beau ful scenery, vegeta on and spectacular views that Hill Top offers.

I imagine for many people coming to ride at Hunter it is their first me on a horse? What do you do to calm their nerves

and what is the best advice you can offer to the beginner rider? For people riding for the first me we are able to give them a horse that will give them a safe ride .They are given instruc ons as to how to control the horse and the guide is

there to assist them along the way All they need do is to listen to the guide and do as they say.We have had all ages ride even people

in there 90s who use to ride when younger and wanted that last ride, to people with no vision and other disabili es that allows them the freedom to move and feel nature around them.

Rosé is the perfect wine for just about all occasions. Served chilled, it can be a refreshing accompaniment to a variety of seasonal dishes and it tops the charts for food-friendly versa lity.

The origins of rosé winemaking can be traced back to ancient Greece, when much of the red wine produced was pale red. By mid 100 B.C, the Romans popularized darker red wines in Europe, but rosé wine remained popular in parts of France - most notably, Provincia Romana which is today's Provence region, and the surrounding Mediterranean area.

Whether it's rosé, rosado (Spain), rosato (Italy) or "blush", they all refer to pink wine and can range in colour from a pale orange to a vivid near-purple, depending on the grape used and wine making techniques which include the length of me the grape skins have been in contact with the juice. In fact rosé may well be the oldest known type of wine, as it is the most straigh orward to make with the skin contact method.

The number of rosés on the market con nues to grow, seemingly unabated and unstoppable. In fact in France rosé outsells white wine. There are no rules: they can and are made from almost any red variety, red blends or red and white blends. Rosés can be made in a sweet, off-dry or bone dry style, with most European rosés being decidedly dry.

Almost all of the world's wine-producing regions make rosés. The first, and arguably, the most important rosé producer is France where it is predominantly found in the southern region of Tavel (considered the capital of French rosé), Provence; and the Loire Valley in Anjou. Other important regions are Piedmont in Italy, Rioja in Spain, and Styria in Austria.

Australia’s fresh and vibrant rosés are generally produced from red grape varie es such as Shiraz and Grenache, with only minimal contact on skins to give the wines their signature ‘blush’.

As a fantas c food wine, the versa lity of rosé is its standout feature as it can be paired with a wide variety of foods and flavours and handles spices and heat very well. Rosé is great alongside salads, an pasto pla ers, fish dishes or even your favourite curry.

A great beverage for a picnic, rosé wine can accompany everything from seafood, ham, chicken, salads to barbecued and roasted meats. Rosé usually has a delicate flavour and a balance of sweetness and acidity that make it a refreshing palate-cleansing drink. Best served young and at a chilled temperature, rosé wine is a wonderful alterna ve to a red or white. When it comes to cheeses, so goat cheese pairs best with rosé.

April is typically the comple on of harvest. All the wines are now in the tanks or barrels. The winery crush equipment is thoroughly cleaned and put to rest un l next year. In the vineyard, the grower may perform some post-harvest irriga on and fer lisa on of the vines before they go dormant. Here are some of the latest happenings on the local Wine Scene.

Harkham Estate Wines will be opening their newly renovated cellar door in April. Harkham Estate produces preserva ve free wines from their organic vineyard on De Beyers Rd in Pokolbin and will be open Friday to Sunday.

Hunter Valley living legend of wine Pat Auld is leaving his post as chief winemaker at Pokolbin's Oakvale winery to become general manager of Cumulus Wines at Orange. He will leave Oakvale on April 12 and take up his Cumulus post on May 1.

A Li le Bit of Italy in Broke: 13 - 14 April. Make a trip to Broke Fordwich Wine Region for fun and gusto at this two day event that gives visitors to the li le known and tranquil des na on the opportunity to enjoy a great Italian fiesta and experience mouth watering gourmet delights.

Women in Wine: On 30 April 2013, Wine Australia will be partnering with major retailer Dan Murphy’s and leading glassware company Riedel to launch Women in Wine. The event will give a endees the opportunity to try some of Australia’s best wines and mix with the women who make them. The event will feature winemakers from across Australia.

Aussie Wine Month: The 1st of April marks the start of the biggest month in Australian wine – Aussie Wine Month - the country’s biggest wine fes val organised by Wine Australia and includes events in every state.

McGuigan Wines winemaker Neil McGuigan has launched a wine and food-matching service with Hunter Valley born and now UK based celebrity chef John Torode, called "The Neil McGuigan and John Torode Recipe Collec on". Using QR codes on back labels, it will enable consumers to immediately access recipes and wine matches especially created in partnership by the winemaker and chef, and geared towards making perfectly matched cuisine and wine available to all.

You will be hard pressed to find a more laid back and likeable person... Born and raised in the local area, Nathan commenced his career as a chef 19 years ago with the past 9 years spent working in the local Pokolbin area.

Nathan's ini al inspira on to be a chef came about as a 12 year old watching cooking shows on TV and seeing the exci ng dishes chefs turned out using the simplest of ingredients.

A er comple ng his HSC Nathan had the opportunity to complete his appren ceship in the Australian Navy where he also had the good fortune to travel the world experiencing different cultures and cuisines. Nathan especially appreciated places such as Mauri us for its laid back lifestyle and fresh seafood.

On deciding to leave the Navy, Nathan returned to the Hunter Valley where he briefly worked the pub circuit and pruned vineyards before deciding to get back into the kitchen. Nathan started work at Vi orio’s restaurant in Pokolbin Village where he worked for 6 years - while also spending me working and helping out at local eateries such as The Winner is Oscars and at James Estate.

It was while working at Vi orio's Restaurant that Nathan met his future wife Coral who at the me was the resort manager at Pokolbin Village.

Nathan le Vi orio's when it closed and went to work at renown local restaurants Blaxlands Inn and San Mar no at Hunter Resort before he and Coral decided to set up their own restaurant called Hunter Café and Restaurant which was located at the Leisure Inn Pokolbin Hill.

A er just a few years, Nathan and Coral were then approached by the owner of Pokolbin Village - Brian Agnew who convinced them to return to Pokolbin Village to re-establish the popular Vi orio's Italian Café Restaurant at Pokolbin Village.

Eighteen months later and Vi orio's has regained its reputa on as a local favourite with a fast growing base of loyal and regular customers who appreciate the relaxed dining on the verandah by day and great atmosphere at night.

Vi orio's Italian Café Restaurant covers it all - casual, relaxed al-fresco dining at it’s best, offering a contemporary menu consis ng of Italian flavours focusing on local produce that changes seasonally and a predominantly Hunter wine list to complement any dining choices.

As a father and with a rela vely large family of 6, Nathan and Coral love spending me with their kids and when not in the kitchen Nathan likes to spend me playing golf, scuba diving and spending the day in the garden with their son.
