Stadt Huys Block & The Lovelace Tavern.

Lovelace TavernNew York City’s Stopgap Town Hall

Stadt Huys Block was a town located in the old Dutch New Amsterdam in the mid-1600s. The Block was the site of Stadt Huys, New York City’s first town hall, which was built originally as a tavern called Stadt Herbergh. It was located near 77 Pearl Street.

The first large-scale archaeological excavation in New York City took place in the Wall Street district in 1979–1980, when the city was making way for a new office building that would become the headquarters of Goldman Sachs.

While the excavations did not reveal any evidence of the Stadt Huys building, researchers did discover the remains of the Lovelace Tavern. Built in 1670 by Sir Francis Lovelace, New York City’s second English governor, it served as an interim town hall after the Stadt Huys fell out of use.

The excavation revealed a host of information, from a large number of broken tobacco pipe stems to a number of wine bottle fragments dating from the late 17th century. The dig also excavated the foundations of the Tavern, which are now part of a permanent display across the street at Goldman Sachs Plaza.

Today we look back on this history and on what’s gone before us. Old world spirits drinking in New York style. It’s the history of the Tavern - the Stopgap Town Hall.

Centuries before tequila was invented, the Aztecs drank pulque, a fermented drink which used the sap of the agave plant. By the 1500s the Spanish were using their brandy distilling techinques to produce we know today as mezcal. In the early 1600s, the first

Originally a medicine distiled in France, it was a 16th century Dutchman trader who invented the way to ship more wine in

Long before America discovered high fructose corn syrup, the colonies’ were hooked on sugarcane molasses, and rum. The New

England colonies were one of the leading rum producers in the world, using imported molasses mainly the French West Indies.

In an effort to control trade the British turned to taxation. This “taxation without representation” would ultimately lead to

trade embargoes on molasses, and most importantly tea, a Revolutionary War, & America’s love of corn, & whiskey.

Distilled from grain or malt, & flavored with a collection of herbs & botanicals, gin’s name comes from genever, the Dutch word for juniper. Today a seemingly endless variety of ingredients are used, from lemongrass to lavender, from cardamom to cilantro.

Gin likely traces its origins to medicinal liquors produced back in the Middle Ages, with references to a spirit flavored with “genever” referenced in a 13th Century Flemish manuscript. By the 1600s, the Dutch were producing gin, with hundreds of distilleries in the city of Amsterdam alone. Today the distillers of the world use gin as a vehicle to tell their own story sourcing ingredients that are unique to their own landscape.
