“It’s beginning to look a lot like Christmas” no matter which clubhouse you visit! This time of year is filled with family and fun, and that is especially true for my wife, Barb, and me this year. We will have the fun of spending our first Christmas here at The Cliffs AND we will get to celebrate it with our family, as all of our children will travel from points north and south for a very merry holiday together. We will welcome them proudly and enjoy all that this great area and our Club have to offer. We have met so many of you throughout the past few months since our move here and you have welcomed us so warmly. We have had the pleasure of meeting some of your families and we hope to return the favor by introducing you to ours when we see you at the Clubs during their stay.

I have been blessed with a highly seasoned and experienced team, who has made my transition to our Cliffs enjoyable as well as exciting. We continue to identify and refine our vision for what is appropriate and possible throughout our Cliffs Communities. There is much to look forward to in 2013! Our Gary Player Signature Golf Course at Mountain Park will open (It is great, by the way!), we will step up our winter maintenance on the golf courses, we will develop better and better culinary and health and wellness experiences, and we will continue to renovate and newly conceptualize spaces in some Clubhouses.

As 2012 comes to a close, from our hearts and home, we wish you and your families a very happy holiday season. We are working our hardest to make sure that 2013 will truly be a Happy New Year at The Cliffs!

As we kick off this holiday season by giving thanks, we are very grateful to you for your support of The Cliffs Clubs. It has been an exciting 100 days starting up a new business and switching gears to focus on growth, improved Member experience, 2013 planning and long-term brand building. Our overarching goal for 2013 and beyond is to enhance The Cliffs Club experience for the benefit of our Members.

We are pleased to report that we have had 38 membership transactions from property sales over the past three months, resulting in a total of 2,635 dues-paying Members, an all-time high for The Cliffs Clubs. This increase in membership has also helped to grow restaurant, golf, wellness and retail revenues. Throughout the year ahead, we will maintain our focus on adding value and growing our family of Members in our pursuit of developing The Cliffs Clubs to be the best they can be.

As the cooler weather sets in, the days get shorter and club activity decreases as our Members spend time traveling, we will be operating the Clubs prudently and look forward to expanding hours of operation, programs and services in early April while still improving efficiencies. Plans are underway for a new restaurant at The Lakehouse opening in May. We will also be enhancing the restaurant experience at each of our Clubs and launching our new ‘best of brand’ menu items and program. Our clubs offer many opportunities to make merry with family and friends throughout this holiday season, from concerts to cooking classes, bowl games to brunch, and New Year’s celebrations to chapel services.

The Cliffs at Mountain Park Golf Course is on schedule to open in fall 2013. If you are interested in seeing the tremendous progress we have made on the course and practice area, please plan to attend a tour with Jason Harris, Golf Course Superintendent, on Tuesday, December 11. For more information, flip to page 11.

We are in the process of catching up on deferred maintenance and repairs throughout the Club facilities. We are prioritizing the projects for 2013 including several interior and exterior updates, equipment replacements and technology upgrades. In anticipation for spring and the busy year ahead, we are implementing winter training and certification programs for all employees. We are also developing intern programs for Culinary, Golf, Agronomy, Wellness, Marketing, HR and Hospitality Management.

Our team has a shared focus on growth, improving operating performance and enhancing value for our Members. On behalf of our family of over 400 Club associates, we sincerely appreciate your being a part of The Cliffs and wish you great happiness and good health in the New Year.

The holiday season is in high gear and we look forward to entertaining you and your visiting families in all of our Clubs this month.

Our retail shops stand ready to help you with all of your holiday shopping needs. We are proud to announce the addition of Bill’s Khakis to our selection of quality items. These high-quality, American-made khakis have earned a cult following with their comfort, fit and durability and will certainly be a popular gift this season.

We are also excited to be carrying the Garmin S3, the latest in GPS technology for the golf course. The S3 is an innovative GPS golf watch preloaded with thousands of worldwide courses without subscriptions or fees. It is sleek enough to use as an everyday watch in addition to giving you yardages to front, middle and back of the greens with a touchscreen interface while you are on the course.

If you are not here at The Cliffs but are still looking for the perfect gift, our Holiday Shopping Guide is full of great ideas and can be found on the Member website.

Our crisp mornings turn into beautiful days for golf this month. Our men’s and ladies’ group play days continue through the winter so if you find yourself in town and looking for a golf game, call the Golf Shop to sign up.

While the family is in town, the holidays are a great time to explore the area outside the gates. The Cliffs Wellness

team will be hosting a hike at Paris Mountain State Park on Thursday, December 27. There are multiple options for this hike so this will be fun for all ages and abilities and a great way to get a jump on that New Year’s resolution!

As 2012 winds down, all of our departments have a laser focus on 2013. Our Golf Course Maintenance teams are putting together their agronomic plans and working with equipment vendors to replace equipment that has seen one too many seasons. The Golf Operations staff is putting the finishing touches on an exciting 2013 event calendar and finishing up the 2013 Tournament Books that will be released shortly. We have exciting plans for our Health and Wellness programs for 2013. Look for the addition of Pickleball (yes, Pickleball) as well as other fun, engaging wellness activities next year.

Chestnuts Roasting on an Open Fire

INGREDIENTS

½ oz brandy

½ oz. hazelnut-flavored liqueur (ex. Frangelico)

Warmed milk

PREPARATION

Pour ingredients into coffee mug, garnish with a cinnamon

stick and enjoy!a p p e t i z e r

2 lbs large Brussels sprouts8 oz goat cheese, softened4 oz cream cheese, softened4 oz yellow onion, diced2 oz butter1 tsp sugar

2 T fresh thyme8 oz bacon lardons, render the fat and set aside½ tsp salt¼ tsp black pepper

PREPARATION1) Trim the brown outer layer of the Brussels sprouts, then score the top of the Brussels sprouts.2) Blanch Brussels sprouts in salted boiling water for 5 minutes, then shock in iced water.3)Drain the Brussels sprouts and set aside.

Chef Francis Turck, The Cliffs at Keowee Vineyards

INGREDIENTS (4 servings)Stuffed Pork Loin2 tbsp butter½ cup chopped yellow onion½ cup diced apple, peeled and cored (best cooking apples are Granny Smith & Jonathon)¼ cup breakfast sausage, chopped1 large clove garlic, finely chopped1 cup cooked, crumbled cornbread¼ cup apple cider1 cleaned pork tenderloin, approxi-mately 1 ½ -2 lbs5 slices uncooked baconSalt and pepper to taste

Grain Mustard Glaze1 tbsp grain mustard1 tbsp apple cider

PREPARATION1) Preheat oven to 375˚2) In a sauté pan on medium heat, add butter, onions, apple, celery, garlic, salt and pepper. Cook for 5 to 8 minutes until onions become slightly translucent.3) Transfer the apple mixture to a mixing bowl and add cornbread, sausage, cider, and fold together.

4) Lightly oil a 15x10” sheet pan and lay bacon strips so that they are slightly overlapping. The bacon should end up being the length of the pork tenderloin.5)Take pork tenderloin and cut it length wise ¾ of the way down, being careful not to cut all the way through. Open tenderloin and flatten by lightly pounding with a meat mallet to where it spreads out to a rectangular shape.

4) Melt butter in a sauté pan with onions. Stir to combine and add sugar. Cook the onions until caramelized and then add fresh thyme. Season with salt and pepper and set aside to cool. 5) Cut the Brussels sprouts in half lengthwise and, using a teaspoon, scrape the middle part of the vegetables to make a hole.

6) In a mixing bowl, combine goat cheese and caramelized onion mixture and then season with salt and pepper. 7) Stuff the Brussels sprouts with the goat cheese mixture.8) Coat a sheet pan with cooking spray, place the Brussels sprouts on the pan and bake for 5 minutes.9) Top Brussels sprouts with bacon crisp.

6) Carefully transfer the pounded pork to the center of the shingled bacon strips.7) Lightly season the pork with salt and pepper and spoon the cornbread mixture over ¾ of the pork. Carefully roll the bacon and tenderloin around the cornbread mixture to where the edges are slightly overlapping. Turn over the tenderloin to where the seams are facing down towards the sheet pan.8) Bake at 375˚ for 35 to 40 minutes or until internal temperature reaches 155˚. A few minutes before pork is finished cooking, remove from oven and lightly baste with the grain mustard and cider glaze, replace in oven and finish cook-ing. When complete, let stand a few minutes before slicing and serving.

-1 jalapeño, finely chopped

-4 cups cranberries

-1 lime, zested and juiced

-1 orange, zested and juiced

-¾ cup granulated sugar

-½ cup water

-Salt and pepper to taste

PREPARATION

Put all ingredients in a sauce

pot and bring to a boil over

medium heat. Reduce the

heat and simmer until

desired consistency,

about 20 to 30 minutes.

To pair with Chef Francis’ Pork Tenderloin and Chutney, Megan recommends the 2009 Renteria Chardonnay. It offers crisp apple and pear fruit flavors with a minerality edge. Butter and oak are present but not overbearing. Cheers!

In late October, Members from all of our communities came together to take advantage of the gorgeous fall weather here in the Western Carolinas. Though the trail was marked as ‘highly strenuous’ our healthy, active Members had no trouble with the hike and were rewarded with beautiful views from the peak of Table Rock State Park.
