Ashley Clarke is Waitrose’s wine expert and he recommends this month’s wine to go with our chilli pasta with cod recipe Douglas Green Chardonnay £7.99
South African wines are becoming increasing popular, and for good reason too. This wine is everything needed for this dish which has both a light and heavy quality to it meaning the characteristics of melon and light citrus complement the cod and contrast the chilli. The slight oak on the palate provides a smooth encounter with the pasta and helps to bring about a very satisfying fi nish.
Look at this great way to keep your lunch cool and fresh, with this value-for-money storage container. Lakeland offers various sizes from 1.8 litres for only £5.99. It has an integral iceblock in the lid, which is placed in the freezer each night. The shop is located in Queensgate or you can buy online at lakeland.co.uk

During her time at the University of West London she had two weeks’ work experience in the kitchen at Buckingham Palace and spent two years working as a pastry chef at the fi ve star Le Méridien Hotel, Piccadilly, London
Since March 2014 she has been working at the prestigious Ritz Hotel in central London.

Hot fishfriday
Did you know?
This simple dish makes a perfect supper with the tomato sauce packing a Mediterranean fl avour
Cod in tomato sauce
Cod in tomato sauceRECIPE
Method1. To make the tomato sauce – gently fry the onions and garlic in a few
tablespoons of olive oil for about 20 minutes until lightly golden and melted.
2. Add the passata, tomato and chilli, and continue to cook until the sauce has thickened leaving a rich sauce.
3. In a separate hot pan, place the slightly oiled cod fi llets to seal the fl esh. Once both sides of the fi llets have been sealed gently add them to the tomato sauce making sure each piece is completely submerged.
4. Cook the gnocchi in plenty of boiling salted water until they fl oat to the surface. Drain them and serve into bowls.
5. Gently lift out the cod and place on top of the gnocchi with plenty of sauce.
● Add fresh chillies and chilli powder at the start of the cooking process to allow the fl avour to develop and the heat to diffuse.
● Add chillies sparingly – you can always add more later.
Ingredients● 1 small onion, fi nely chopped● 1 clove garlic, fi nely chopped● olive oil● 200ml tomato passata● 400g can chopped tomato● 1 mild fresh red chilli,
fi nely chopped● 4 x cod steaks● salt and black pepper● 200g ready-prepared potato
gnocchi● lemon juice● lemon juice
SWAP OUTS● Turn up the heat and add in a
hot chilli for a pungent bite ● Change the cod for pollock
or hake which are both sustainable options
● Not a fi sh fan? Swap for chicken. Slice hot cooked chicken, place on the gnocchi and spoon over the sauce
● Add in chunky cut vegetables like peppers, courgettes, mushrooms, baby corn or even olives to boost your fi ve-a-day
● Swap out the gnocchi for pasta to make this meal more of an everyday dish using cupboard ingredients
The hottest part of the chilli is the white placenta that
holds the seeds to the inside of the pod. So remove both the seeds and placenta to decrease the heat.

After a summer of barbecues, ice creams,
and general overindulgence, I thought it would be great to share my tips on staying motivated and getting back on track to a healthy lifestyle.
These are eight simple tips I live by when I feel my work schedule getting a bit busier, or I’m lacking that motivation I need.
1. Keep organised Meal prepping is the best way of making sure you don’t reach for unhealthier options at every chance. If you don’t have time to prep all of your meals, make it a priority to prepare in bulk things like rice, quinoa or sweet potatoes to save you time in the future. Another option is to double up on foods when cooking your lunches or dinners to avoid cooking an entire meal three times a day.
2. Set realistic goalsWriting everything down as a list ensures your goals are clearly set out in your head. You can even put down the smallest things so you feel productive when you cross them off.
3. Keep exercises simple A 20-minute HIIT (high intensity interval training) workout is perfect for those of you with busy schedules. I like to do 30 seconds of fl at out sprinting followed by a 30 second break. This really gets your heart racing and it burns fat fast.
4. Drink at least two litres of water a day This isn’t only important when you’re exercising, but it also keeps your metabolism running
Lucy Bee reveals her tips to keep motivated after a summer of indulgence
BackBackBackon trackon trackon trackon trackon trackon trackBackBackBackon trackBackBackBackon trackBackBackBackon trackBackBackBacksmoothly. A great way to spice up plain water is by adding fruit to infuse, such as mint, strawberries, lemon, cucumber or ginger.
5. Make time for yourself Part of the reason many people struggle with maintaining an exercise routine or healthy eating is because they think they have to sacrifi ce other enjoyments to make time for it. Make a note on your daily list to have some downtime. It will make your healthy living become cemented as a lifestyle rather than a short-lived pursuit.
6. Look for inspiration I love Instagram and blogs for recipe inspiration. If you’re having a creative block on dishes, it helps to spark ideas.
7. Invest a small amount of time in cooking If you enjoy cooking already, then it sometimes makes healthy eating a much easier process. However, if you’re not so fond of it, add to your list a small amount of time dedicated to preparing meals in advance.
8. Balance is key You don’t want to feel like you’re depriving yourself. So, I recommend trying to fi t in some greens at every meal and focus on getting the good stuff in fi rst. Then, if you are still hungry, you can enjoy your treats. I’ve found the good stuff will eventually replace the bad stuff in your life. Why not try some of these ideas and see how you get on!

The Shepherds Hut is a new eating experience for Whittlesey. It is joined to The Ram Inn, which has been in this ancient Fenland market town since 1854, and this is the fi rst time there has been a dedicated restaurant as part of it’s offering.
Located in central Whittlesey, the restaurant and pub boast one of the biggest – if not the biggest beer gardens in the town. Speaking to owner Pete Stead-Davis, I quickly learnt that the restaurant was swiftly altered. “We originally viewed the building in November 2014, and have worked hard over the last

The Shepherds Hut is a family run restaurant in Whittlesey, which opened in July, and we sent Alice Brazier to investigate
eight months to transform it.” The restaurant is spacious,
and has a chilled atmosphere and shabby-chic decor, and there are defi nitely more development opportunities on the cards. “We’re looking to add some play equipment for the beer garden, and possibly expand the restaurant with a conservatory.”
The food on offer at The Shepherds Hut
can be described as ‘good, honest pub food, with a twist’, and the Sunday menu defi nitely doesn’t disappoint. I was joined in the restaurant by several couples and young families, enjoying a three-course roast dinner, perfect on a lazy Sunday afternoon.
The kitchen is run by Pete’s son Ben – having previously worked at several prestigious hotels across Peterborough – and the dishes were outstanding. The menu includes Sunday lunch favourites,
Food available on Sundays includes:● Creamy Stilton and peppercorn
mushrooms with toasted bread● Slow cooked pork belly, apple
jus, new potatoes and Yorkshire pudding
● Ben’s raspberry cheesecake

with home-made dishes, and generous portions. It was also great to experience a relaxed and helpful front-of-house staff, who clearly collaborating with Ben, Michelle (Pete’s wife) and Pete to tweak menu items to meet the customers’ requirements.
It’s fabulous to witness a new restaurant spring up outside of the main city, and with such great quality too. The décor really modernises the building, and the huge beer garden is just calling out for beautiful late summer days this September. I would really recommend a visit, just to take advantage of the beautiful food at such reasonable prices.

The chilli plant is native to Central American regions where it has been the main spice ingredients in Mexican cuisine for
centuries. It was introduced to the rest of the world by Spanish and Portuguese explorers during the 16th and 17th centuries. The chilli is a fruit pod from the plant belonging to the nightshade family.
The hotness of chilli is measured in Scoville heat units (SHU). On the Scoville scale, a sweet bell pepper scores 0, a jalapeño pepper around 2,500-4,000 SHU, and a Mexican habañeros about 200,000 to 500,000 SHU.
The fi ery hotness of the pod comes from an active component of chillies – capsaicin. It is an irritant for mammals, including humans, and produces a sensation of burning in any tissue with which it comes into contact. However, capsaicin has anti-bacterial, anti-carcinogenic, analgesic and anti-diabetic properties. It also found to reduce LDL cholesterol levels.
In fact, chilli peppers contain an impressive list of plant-derived chemical compounds that are known to have disease preventing and health promoting properties and both red and green chillies are rich source of vitamins and minerals.

The Mobility Aids Centre has been in the healthcare
industry for more than 30 years as a mobility retailer and importer of specialist equipment dealing with the public, NHS, and specialist therapists both locally and across the UK.
The company faced a challenge to replicate its local reputation for good service, product advice and after sales service in an e-commerce site and to ensure customers received the same buying experience.
Steve Perry, Marketing and Business Development Manager, said: “The site was developed by focusing on our core values and reputation, and then designing it with the user in mind who may not be local to our large retail centre. Product selection based on our knowledge over many years was a key factor, and also the
e-commerce experience where we have endeavoured to make the advice and layout easy for product selection with telephone advice available.”
The Mobility Aids Centre is a family business and the site has been designed to offer its existing and new customers the same peace-of-mind purchase online as they would receive face-to-face.

of course, remove any fading blooms to ensure longer-lasting displays well into autumn.
● Pot any of the tender plants you want to save for next year so they ready to be placed under cover when the weather starts getting cooler.
Looking after your lawn● Early September is an

● Keep the lawn clear of fallen dead leaves and thatching by using a lawn scarifi er or a lawn rake.

● To raise new blackberry plants, bury tips of any shoots that have developed this year into the soil. They will form roots and new shoots will develop next spring. Once this has happened the new plants can be separated and planted where you plan to grow them.
● Circumvent wasp damage to early fruiting apples by hanging wasp traps in tree branches.
● Pick fruit from these early ripening varieties as soon as they are sweet enough to eat as they don’t keep.
● Crops of raspberries, blackberries and other autumn-fruiting varieties should be covered with netting to keep birds away. However, check the netting daily to ensure no birds or any other animals are trapped.

The Peterborough Memory Walk is taking place at Ferry Meadows Country Park on Sunday 20 September and the organisers want to encourage as many people as possible to join up and start fundraising today. Wyndham Thomas, the key creator of Ferry Meadows Country Park is returning after 37 years to formally open its improved Wildlife Garden.
The garden, which forms part of the Visitor Centre, is a ‘park in miniature’. Offering shelter from the winds that whistle across the lake and meadows but representing the variety of habitats in the wider Nene Park, it contains a small pond, meadow areas and trees.
Wyndham says that when he arrived in Peterborough: “The land in what’s now known as Nene Park was bleak and often fl ooded, while the city had few public open spaces. So my idea was to develop the fl oodland for recreation, but I didn’t have a

10 NightsThis tour will take in the important cities of India and includes; Delhi, Agra, Jaipur, Udaipur and Mumbai.
As with all our holidays at Inspirational Travel this is merely a suggested itinerary and we can tailor the holiday to suit your requirements.
You will start in the bustling metropolis of Delhi, which combines the ancient with the modern. A full-day city tour of Old and New Delhi, beginning with The magnifi cent Red Fort, overlooking the river Jamuna Jama Masjid, one of Asia’s largest mosques. Later visit Raj Ghat, Ghandi’s memorial, and drive past India Gate, the Parliament building and the President’s Residence, before visiting Qutab Minar, the tallest stone tower in India.
Travel by road to Agra. This was once the capital of the Mughal Emperors and lies on the banks of the River Yamuna. Visit Agra Fort, an outstanding example of Mughal architecture and the seat and stronghold of the Empire under successive
generations. Continue to Itmad-ud-Daulah (‘Baby Taj’), followed by a visit to the magnifi cent Taj Mahal and see this masterpiece at sunset and or sunrise.
Drive to Jaipur early morning to reach Jaipur in time for lunch. The vibrant 18th-century capital of Rajasthan is popularly known as the ‘Pink City’ because of the pink coloured buildings in its old city. The afternoon is at leisure to explore Jaipur, home to cultural delights and also a shopper’s paradise. Take a tour of Amber Fort, a honey-coloured fortress palace in the Aravalli Hills. Possessing a chamber of mirrors, the interiors are a decorative art paradise and there are striking views of the gorge. In the afternoon, visit the Observatory and City Palace which boasts courtyards, impressive gateways and temples.
From Jaipur you will travel by road to Udaipur. Udaipur is regarded as one of the most romantic cities of the World and subsequently, also known as the ‘Venice of East’. Udaipur had been the capital of Mewar for centuries. During your time in Udaipur you will have the opportunity to visit the famous Lake Palace, Jag Niwas Palace, Lake Pichola, Museums and Gardens of Udaipur.
Depart Udaipur to Mumbai
arriving in time for dinner. In the morning you will take a tour of Mumbai. Mumbai fascinates with its grand colonial architecture, bustling bazaars, trendy boutiques and exclusive restaurants, all offset with a special sense of history. Stately Victorian British buildings rub shoulders with rich Indian tradition and Elephanta Island, with its ancient caves and temples, lies in the middle of the city harbour.
Prices start from £1,870 per person, including British Airways return fl ights, internal fl ight to Mumbai with Air India or Jet Airways private transfers, 3* accommodation with daily breakfast and all entry fees.
All are holidays are completely bespoke and the number of nights is merely a guide. For further information and prices please contact Inspirational Travel, call 01778 382764, email [email protected] or visit www.inspirational-travel.com

A client after treatment
39Telephone 01778 382762 | September 2015
With so many truly amazing beauty treatments
available, we are never short of choices when it comes to looking great with gel nails, extensions, massages and facials regularly featuring in our beauty regimes.
And, now we are being seduced with aesthetically enhancing treatments that change the way you look. There are treatments for hair removal, skin rejuvenating, jowl lifting, skin tightening and fat reducing
These appearance-changing machines aren’t new; they’ve been used in hospitals and medically for many years and are begining to become mainstream in the consumer market.
And, they are available locally as Elysia Health & Beauty offers all of these treatments and more.
I visited the salon in the village of Tansor, just outside Oundle, to see what they were all about.
Lisa Claypole, the owner and two other therapist are trained in all the treatments. Lisa has run the business for more than 15 years and to say she has passion for what she does is an understatement. Her dedication to ensuring she offers the best service is only paralleled by her drive to ensure each client gets the best results possible. She does
this by researching for the best technology on the market in IPL and Radio Frequency machines, plus other cutting-edge machines offering various results driven treatments.
As a nation we are sceptical about anything new and I was no different when Lisa offered the
Lipofi rm Pro treatment which offers fat loss, skin tightening, sculpting and cellulite removal all in one package. It is also medically certifi ed and clinically proven.
After a consultation, we decided to target my tummy area where subbon fat accumulates and refuses to budge whatever I try.
The session lasted about 30 minutes and Lisa measured three areas around my middle so she could calculate the amount I lost, which was 16cms in total. Which, even by Lisa’s standards, was amazing, and as Lisa had also taken before and after photographs of my stomach, I could scrutinise the pictures and it was obvious the difference just one session had made. I noticed more defi nition in the upper tummy area which is where I lost most of my size and as six to eight treatments are recommended to get the best results, I was certainly encouraged by the difference just one session makes. t: 01832 226328 w: elysiahealthandbeauty.com

Ran by experienced trainer Neil, Empire Gym’s Body Combat class is so fun, it didn’t really feel like I was working out (until the morning after). A mixture of various forms of martial arts, set to an upbeat music track, Body Combat blasts arms, legs and core, as well as helping to you become more co-ordinated. Neil loves making his classes fun, saying: “I want my class to get real results, but also enjoy it. It’s not about pushing yourself so much it hurts, but about working towards your own limits.”

Of the classes I reviewed, I was most nervous about Darren’s class at Raw32 – but I needn’t have been, and I honestly loved this class. The class includes various Tabata sets (think: strength training) mixed with fi tness (squats, boxing, press ups) for an hour of intense workout. The class was full of differing abilities and strengths, but it was easy to choose weights suited to my ability, and work to my own speed, but still see the benefi ts. Darren comes from a strong sporting background, previously captaining Northampton Saints Rugby team, and commented on his class: “My classes are about real-life training, which will make day-to-day activities easier. Each trainer at Raw32 brings something different to the class schedule, all of which can develop your body the way you want.”

Railwayman’schurch
Opened in May 1869 to assist with the
spiritual needs of the large numbers of railway workers and their families, St Pauls was known locally as the Railwayman’s church.
New England was slowly being converted from a rural area into one of industry, due to the arrival of the railways and the engine sheds.
Following the building of the Mission Hall a more ambitious project started to take shape (the Great Northern Railway made a grant of £50 a year and also provided a vicarage for the Rector). St Paul’s church was the outcome. The Ecclesiastical Commissioners gave 1½ acres of land and the railway directors also contributed
money towards the building of a church. The Church of St Paul was duly
consecrated on Friday 28 May 1869
by the Bishop of Peterborough, William
Connor Magee, later Archbishop of York.
The first vicar was Canon Charles Richard Ball, who donated the Fountain at the Triangle, New England in November 1884. He then went on to become vicar of All Saints (see April 2015 edition of City Scene). From 1886 until 1933, the vicar was Canon Arthur Fairclough Maskew who died in 1938 whose remains are interred at Paston church.
Local historians and authors June and Vernon Bull explore the history of St Paul’s at 414 Lincoln Road, New England

Succeeding vicars were Revd F J Boss (1933-1943), Revd J A Fisher (1943-1953), followed by Revd D M Forrester – who in 1958 was the overseer of some expensive renovations work at a cost of £6,000. An interesting sum when you consider that the initial cost of the building was £4,000.
St Paul’s church is constructed of stone in the early English style of architecture. It has an apsidal (rounded) chancel, clerestoried (windowed) nave of five bays, aisles, a west porch and a low central tower with pyramidal roof, containing one bell.
There is a handsome oak screen erected by John Thompson (local builder) in 1907. Some say this is the redeeming feature of an otherwise plain church.
Gifts and improvements over the years produced a porch in 1887, a vestry in 1902, a hall in 1905 and an oak pulpit in 1937. A new high altar was added in 1950 in memory of Canon Maskew.
In 2007-2008, a new 8ft-high steel cross was erected on the roof of St Paul’s and the bells were overhauled. On Saturday 12 December 2009, the dedication of the cross and bell service was undertaken by Canon Gordon Steele, the Rural Dean and Vicar
of Peterborough Parish Church, St John the Baptist (see May 2012 edition of City Scene). Today Gordon Steele is the Venerable Archdeacon of Oakham.
St Paul’s vicarage was a splendid Victorian property, located between the recreation ground and the church. One can only imagine that the double horse-drawn carriage, pictured in c1907, is awaiting its occupant – Canon Maskew.
Sadly the vicarage was demolished to make way for a new one.
