This brings a change in menu thinking to allow lor some- thing light and new. Here is a pink pie festive in itaelf which makes one think of party fare. Serve it for afternoon tea; plan to have it for a dinner dessert. Pink Pie 42 Sunshine HiHo crackers 1 cup heavy cream, well 2 tablespoons sugar whipped Vi teaspoon ground mace 1 cup sliced fresh or frozen Vi cup melted shortening strawberries 1 package strawberry gelatin Few whole fresh straw- dessert, 3 ounces berries, optional 1 cup boiling water With rolling pin crush only 30 crackers into very fine crumbs between two pieces waxed paper; there should be about IV4 cups. Mi* well with sugar, mace and melted shortening. Press firmly and evenly over sides and bottom of 9-inch pie plate. Then arrange the 12 remaining whole crackers around the sides to make scalloped edge. Refrigerate. Dissolve gelatin dessert in boiling water. Cool and chill until the consistency of unbeaten egg white. Fold into whipped cream, blending well. Chill, stirring occasionally, until almost set". Fold in slicea berries and pour into crumb crust. (This is easier and quicker if bowl is set in another bowl of ice cubee and water.) Refrigerate until needed. When ready to serve garnish top with sliced berries. Yield: 6 to 8 servings. Wirtz Says Jobless Negroes LoweskSince Korean Conflict WASHINGTON, D. C?The 1966 unemployment rate for Negroes of 7:5 percent is the lowest since the Korean war. Secretary of Labor W. Willard Wirtz said, in testimony before the Joint Economic Committee. Still, "there was a slight slowdown in the rate of im- provement for Negroes com- pared with that for whites," the Secretary of Labor pointed out. "Full employment (in the fullest sense of that term) at wages producing a decent standard of living for every- one" should be "a first pri- ority national purpose." Mr Wirt* emphasized bin. bis open- ing remarks. ><> .v* In keeping with that goal, manpower policies and pro- grams are being aimed directly at hard core unemployment. Secretary Wirtz said. Two- thirds of the training slots available under the Manpower Development and Training Act are being allocated to the hard core unemployed. The trainee population now includes much larger proportions than before of youth, minority group mem bers, and long-term unem- ployed. Reaching the hard core un- employed means "not waiting for the unompoyed to come to us, but going out to reach them" Mr. Wirtz said. He re- ferred specifically to programs which will help motivate the unemployed, enhance their em- plovability as well as their basic education, give them oc- 'develop- ment and place them in jobs and follow them up with sup- port services so that whatever initial success is achieved with '.hem 'takes.'" ( Reporting on the jobless rate for Negroes, which had de- clined steadily between 1963 and early 1966, Secretary Wirtz said the rate moved upward to- ward mid-year and failed to return to the 7.1 percent rate (seaconally adjusted) establish- ed in the first quarter. In 1963. the jobless rate for Negro boys (teenagers) was 1.8 times as large as that for white boys; in 1966 this ratio increased to 2.1.
