But if your favorite restaurant is already booked, or you can’t get a sitter on a week night (Valentine’s Day is next Tuesday), don’t despair. Together, the two of you can make a simple, but luxurious, dinner for a romantic evening at home. Menlo Park residents Kathleen Jensen and hus- band Bruce Goitia show us how to put it together. Kathleen Jensen knows her way around a kitch- en. After working as a personal chef for 10 years, last year she launched Butterscotch on the Go, a food truck serving office buildings in Menlo Park. She also joins food truck gatherings. “I work with Mobile Gourmet,” she says. “We have four to seven food trucks that meet every Wednesday at the Hiller Air Museum in San Car- los.” Retired Menlo Park police chief Bruce Goitia isn’t a chef, but “he helps all the time at dinner parties,” says his wife. For this Valentine dinner, the menu is filet mignon with merlot sauce, roasted yellow finger- ling potatoes, green salad with pear and toasted walnuts, and chocolate fondue for dessert. Filets are a natural choice — tender and easy to prepare. Mr. Goitia can saute them in minutes in a cast-iron skillet. The wine sauce makes them extra festive. Fingerling potatoes are cut in half, tossed in olive oil, lemon, salt and pepper, sprinkled with fresh herbs — parsley, rosemary or thyme — then roasted in a 425-degree oven for about 35 min- utes. For a green salad, Ms. Jensen adds pear or citrus and toasted walnuts to mixed greens. She prefers making her own dressing, using olive oil, honey ginger vinegar, a little Dijon mustard, salt and pepper. The secret is using the assorted flavored vinegars found at gourmet food markets.     Goitia to toss the salad. For dessert, there is chocolate fondue. Fondue is one of those food crazes that pop up every few years, dating back to the 1960s. Its a little bit old-fashioned to be doing chocolate fondue, but it is so romantic, says Ms. Jensen. If youve tossed your fondue pot or never had one, dont worry. You can melt the chocolate over hot water, then pour the mixture into individual bowls or glasses. For a festive look, Ms. Jensen edges margarita glasses with red sprinkles, dipping them first in corn syrup. What to dip in the chocolate? Anything goes. Strawberries, or other chunks of fruit, are a natural. Pound cake, madeleines, shortbread, even pretzels, taste great with chocolate. No fondue forks? Try chopsticks. Setting the scene for a romantic dinner, takes some forethought. If you have kids, feed them pizza at 6 and deal with any next-day school problems before starting your dinner for two. Set the table, preferably not in the kitchen, ahead of time. Candlelight and fresh flowers add a special touch, as does a good wine. In preparing this special din-ner, its important to share the duty. If she does most of the prep and cooking, he should take over the clean-up. Or, if youve done the meal together, leave the dishes in the sink. After all, Val-entines Day comes just once a year. A

    Chocolate fondue

    12 oz. fine quality bittersweet or

    semisweet chocolate

    3/4 cup cream (more if necessary)

    1 to 2 tablespoons Grand Marnier

    To dip: fruit in season (cut in chunks), pound cake, angel food cake, madeleines or shortbread cookies

    Melt chocolate and cream in a double boiler, stirring until chocolate is melted and mixture is smooth. Add Grand Marnier to taste. If too thick, thin with more cream. Serve immediately with any of the above (or use your imagination here).

    Filet mignon with merlot sauce

    2 filet mignon

    1 tablespoon olive oil

    1/2 cup merlot

    1 finely minced shallot

    1 cup beef or chicken stock

    1 tablespoon diced butter

    Salt and pepper

    Minced parsley and chives for garnish

    Season filets with salt and pepper. Place heavy-duty, cast-iron pan over medium-high flame and let heat for a few minutes. Add 1 tablespoon of olive oil. Sear filets for approximately 4 minutes per side for rare to medium, depending on thickness. Remove to a plate and cover loosely with foil.

    Add shallot to pan and stir for about 1 minute. Add wine to pan. Reduce to half. Add stock and reduce liquid to half again. Remove from heat and whisk in butter a bit at a time until thickened. Taste for seasoning. Place filets on plates and spoon over sauce. Sprinkle with a mixture of parsley and chives and serve.

    Valentines, tube socks for local veterans The Menlo Park Democrats will collect valentines and tube socks to donate to the Palo Alto Veter-ans Administration Hospital on Sunday, Feb. 12. Drop off donations at the farm-ers market, located in the parking lot at the corner of Chestnut Street and Menlo Avenue, from 9:30 a.m. to 12:30 p.m.

    Free admission to museum The San Mateo County History Museum now offers free admis-sion on the first Friday of each month. This months displays focus on toys from the 1930s through 1950s. The museum is open Tuesday through Saturday from 10 a.m. to 4 p.m. at 2200 Broadway St. in Redwood City. Admission on Friday, Feb. 10, will be half price.

    The hills and playing elds of Ladera are missing one of their greatest fans today. Longtime resident Dr. Rolf Georg Spamer passed away in his beloved Ladera home on January 17, 2012, surrounded by the family he so cherished. He is survived by his wife, Betty, and their combined family of six children: Brynn Spamer Williams, Kristin Spamer Miller, Jenny Spamer Harris, Jason Hubbard, Sarah Hubbard Foley, and Neal Hubbard. He is preceded in death by his rst wife, Carol, who passed away in 1996. He is also survived by brother Ronald Spamer and sister Marianne Spamer.

    Dr. Spamer is greatly missed by the 17 grandchildren who loved and laughed with him for so many years. He could be counted on to join them in shooting hoops, playing board games, camping at Bass Lake and cheering on favorite sports teams. In all they did, his grandchildren had a devoted fan in Grandpa Rolf. It is this special connection with children and family that so marked his life.

    Born in 1935, Rolf Spamer grew up in Chicago where he took special pride in his prowess on the basketball court at Hinsdale High. After undergraduate studies at U. of Illinois, Rolf went on to dental school and ROTC at Northwestern University. In 1959, the newly minted Dr. Spamer married Carol Trevillian and shortly thereafter served as a Naval ofcer in San Diego. At the University of Washington, Rolf earned a specialized degree in pediatric dentistry, the work to which he devoted himself until just the last few months of his life. In 1965, the Spamers moved to their home on La Mesa Drive where Rolf would enjoy the Ladera life for the rest of his days.

    Among pediatric dentists, Dr. Spamer is remembered for his expertise and generosity. He served as a president of the California Society of Pediatric Dentists, readily sharing his enthusiasm and knowledge with new colleagues. After rst practicing in Menlo Park, Dr. Spamer spent more than 46 years treating children in his Hayward ofce. He was often sought out to help children with special needs, and to handle challenging cases requiring sedation. Long before it was commonplace, Dr. Spamers ofces

    were designed to welcome and reassure his young patients.

    Around Ladera, his childrens friends and classmates knew Rolf not only as Dr. Spamer, but also as a coach, an umpire, and an all-around fun, active dad. A lifelong sportsman himself, Rolf spent many years coaching softball teams, always quick with a smile and encouraging words for even the greenest players. He also spent many years on local baseball diamonds, serving as umpire for little league baseball. He could always be trusted to bring knowledge, fairness and a love of kids to the playing eld.

    Laderans will also remember Rolf as an active member of Ladera Community Church. He enjoyed more than 40 years of fellowship with the LCC congregation, serving in many lay leadership roles and on the preschool board. Rolf was a xture at the LCC annual Bass Lake retreat, camping there with the Spamer clan for more years than anyone can remember. In the wider community, Rolf brought his compassion to service in the KARA organization as a grief counselor, and served in the Hayward Rotary for many years.

    In 1999, Rolf married fellow Laderan Betty Hubbard, embracing the newly expanded brood of grandchildren they shared. Always game for fun and new adventures, Rolf spent his next years enjoying everything from golf to opera. At the same time, he always cherished the perennial gifts of life in Ladera: walks with his dog, Huckleberry; the green hills of Webb Ranch in spring; volleyball and hot dogs at the pool on the 4th of July.

    The life and spirit of Rolf Georg Spamer will be celebrated at a memorial service to be held at 3 p.m. on February 11 at Ladera #OMMUNITY#HURCH!LPINE2OADs854-5481).
